- In a large bowl or dish, combine yogurt, mustard and garlic. Add chicken and turn to coat. Cover and refrigerate 8 hours or overnight., Preheat oven to 425°. In another bowl, mix flour, paprika, baking powder, salt and pepper. Remove chicken from marinade and add, 1 piece at a time, to flour mixture; toss to coat. Place on a wire rack over a baking sheet; spritz with cooking spray. Bake 40-45 minutes or until a thermometer reads 170°-175°.

- Preheat oven to 450°F Pour the vegetable oil evenly over the bottom of a 15- x 10- x 1-inch baking pan.
- Combine the baking mix, paprika, Creole seasoning, seasoned salt, garlic powder, Italian seasoning and black pepper in a large bowl. Mix well. Pour into a paper bag.
- Add the chicken drumsticks, a few at a time, to the bag. Shake the bag to coat drumsticks. Arrange on the prepared baking pan.
- Bake the chicken, turning once, until juices run clear when pierced with the tip of a knife, about 30 minutes. Transfer to a serving dish. Serve immediately.

- Heat oven to 400. Line a jelly-roll pan or shallow roasting pan with foil. Coat with nonstick cooking spray.
- Skin chicken by grasping skin with paper towels and pulling off.
- In a pie plate or shallow bowl, slightly beat egg. Coat a few drumsticks in egg at a time.
- Place desired crunchy coating (listed below) in plastic food bag. If using tortilla chips, stuffing mix, french fried onions, cheese crackers, or honey mustard pretzels, close bag and crush with a rolling pin. Put 1 or 2 drumsticks in the bag at a time and shake to coat chicken evenly.
- Place on prepared pan; lightly coat drumsticks with cooking spray. (If using fried onions or honey mustard pretzels, do not spray). Bake 30-35 minutes until chicken is cooked through and coating is browned.
- Italian: 1 cup wheat germ, 1/3 cup grated parmesan, 1/4 teaspoon each garlic salt and pepper.
- Honey Mustard: 3 cups honey mustard pretzels pieces, 1/4 teaspoon pepper.
- Mexican: 3 cups tortilla chips, 2 teaspoon each chili powder and ground cumin.
- Krispie Ranch: 1 1/2 cups crisp rice cereal (Rice Krispies), 1 envelope ranch dressing mix.
- Cheesy: 3 cups cheese crackers, 1 teaspoon onion powder, 1/4 teaspoon pepper.
- Herb: 1 1/2 cups herb stuffing mix, 1 teaspoon each onion powder and paprika.
- Curry: 3 cups french fried onion rings, 2 teaspoon curry powder.

OVEN-FRIED CHICKEN DRUMSTICKS
Steps:
- Gather the ingredients.
- Heat the oven to 450 F/230 C. Line two 9x13x2-inch baking pans with heavy-duty foil.
- In a food storage bag, combine the flour, salt, pepper, paprika, curry powder, and poultry seasoning.
- Cut the butter into pieces and place half (1/4 cup) in each foil-lined pan. Put the pans in the oven to melt butter. (Keep an eye on it to make sure it doesn't burn.)
- Coat the chicken with the seasoned flour mixture, shaking about three legs at a time in the bag.
- Place the chicken in the melted butter in the prepared pans.
- Bake the drumsticks for 30 minutes. Turn the chicken over and bake 15 to 20 minutes longer, or until tender and nicely browned. Serve and enjoy.
