Cooking rice is simple to do but there is a trick to getting it to come out just right. Follow this foolproof technique and you'll end up with rice that's wonderfully tender, never mushy.

1 cup long-grain white rice (see Cook's Note)
1/2 teaspoon kosher salt

Steps:

  • Combine the rice, salt and 1 1/2 cups water in a small saucepan and bring to a boil. Reduce heat to low, cover and simmer until all liquid is absorbed, about 18 minutes. Remove from heat and let sit, covered, for 10 minutes. Fluff with a fork before serving.

STEAMED MARINATED CRABS WITH GLUTINOUS RICE



Steamed Marinated Crabs With Glutinous Rice image

Number Of Ingredients 11

4 , large crab meat
2 slices fresh ginger root
2 stalks scallion
1/4 cup sherry
2 tablespoons soy sauce
2 cups glutinous rice
4 cups water
2 tablespoons oils
1/2 teaspoon salt
1/2 teaspoon sugar
1 tablespoon soy sauce

Steps:

  • 1. Clean crabs. Mince ginger root and scallions then combine with sherry and soy sauce. Add to crabs and let stand 30 to 40 minutes, turning occasionally. Drain, reserving marinade. 2. Meanwhile wash and cook glutinous rice (see HOW-TO, _Glutinous Rice: To cook).3. Transfer rice to a deep heatproof bowl. Blend in oil, salt, sugar and remaining soy sauce. Top with crabs.
