1 (16-oz) can Hormel chili without beans
1 (8-oz) package cream cheese
1 (16-oz) package shredded mild or sharp cheddar cheese
Nachos or chips, to serve

Steps:

  • Microwave the cream cheese in a 12x12-inch glass pie or Pyrex dish for 1 minute, or until cheese is easily spreadable.
  • Spread the cream cheese to coat the bottom of the dish completely.
  • Pour the Hormel chili over the cream cheese.
  • Top with shredded cheddar cheese.
  • Microwave the dip for 3 minutes or until cheese has melted.
  • Serve with nachos or chips.

2 tablespoons vegetable oil
1 medium red onion, chopped
2 cloves garlic, finely chopped
3 tablespoons tomato paste
1 tablespoon chili powder
Kosher salt
1/4 teaspoon cayenne pepper
1 cup low-sodium chicken broth
2 cups rotisserie chicken, shredded
1 cup sour cream
1 cup cilantro leaves and stems, roughly chopped
Juice and zest of 1 lime
1 cup corn, frozen & thawed
1 green bell pepper, chopped
1 1/2 cups crumbled cornbread
3 medium tomatoes, chopped
1 (14-ounce) can black beans, drained and rinsed
1 1/2 cups yellow cheddar, shredded
Tortilla or corn chips for dipping

Steps:

  • Heat the oil in a large nonstick skillet over medium-high heat, add half of the onion and the garlic and cook, stirring, until soft and just begins to brown, about 4 minutes. Add the tomato paste, chili powder, 1/2 teaspoon salt and the cayenne pepper. Cook, stirring, until the oil is brick red, about 2 minutes. Add the chicken broth and bring to a simmer. Cook until thickened slightly, about 3 minutes. Add the shredded chicken and stir until just warmed through, remove from heat and cool to room temperature. Whisk together the sour cream, cilantro, lime juice and zest in a small bowl. Toss together the corn and pepper in another small bowl. Layer the dip in a medium, straight-sided 3-quart glass trifle bowl or your favorite serving dish. Spread the cornbread on the bottom, then top, in even layers, with the tomatoes, beans, cheese, cilantro-lime sour cream, chicken chili, the remaining chopped onions and the corn-pepper mixture. Wrap and refrigerate until chilled, at least 1 hour or overnight. Serve with chips for dipping.

3 celery ribs, finely chopped
1 large onion, chopped
1 large carrot, finely chopped
5 garlic cloves, minced
2 tablespoons butter
2 pounds ground chicken
1 tablespoon olive oil
2 cups chicken broth
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) cannellini beans, rinsed and drained
1 can (15 ounces) crushed tomatoes
1 can (15 ounces) tomato sauce
1 can (6 ounces) tomato paste
1/4 cup Louisiana-style hot sauce
3 teaspoons smoked paprika
1 bay leaf
3/4 teaspoon salt
1/4 teaspoon pepper
Crumbled blue cheese, optional
Celery stalks and tortilla chips

Steps:

  • In a Dutch oven, saute the celery, onion, carrot and garlic in butter until tender. Remove and set aside. In the same pan, cook chicken in oil until no longer pink; drain. , Stir in the broth, beans, tomatoes, tomato sauce, tomato paste, hot sauce, paprika, bay leaf, salt, pepper and vegetable mixture. Bring to a boil; reduce heat. Simmer, uncovered, for 12-15 minutes or until slightly thickened. Discard bay leaf., Serve desired amount of dip; if desired, sprinkle with cheese. 2 skinless, boneless chicken breast halves
1 ½ tablespoons chopped fresh cilantro
1 tablespoon vegetable oil
4 slices lean bacon, chopped
1 (16 ounce) can refried beans
1 teaspoon taco seasoning mix
1 cup sour cream
¾ cup shredded Cheddar cheese
1 cup prepared guacamole
1 cup diced tomatoes
1 ½ tablespoons chopped fresh cilantro
2 tablespoons sliced black olives
2 tablespoons finely sliced green onions
¼ cup shredded Cheddar cheese

Steps:

  • Place the chicken, 1 1/2 tablespoons of cilantro, and vegetable oil in a skillet over medium heat, and pan-fry the chicken breasts until lightly golden brown, no longer pink in the middle, and the juices run clear, about 5 minutes per side. Remove the chicken and set aside. When cooled, cut into cubes.
  • Place the bacon in the same skillet, and cook over medium-high heat, stirring often, until evenly browned, about 10 minutes. Mix the refried beans into the skillet with the bacon, and cook, stirring frequently, until the beans are hot and bubbling, 5 to 10 minutes. Mix the taco seasoning and sour cream together in a bowl.
  • To assemble, spread the hot bean and bacon mixture into the bottom of an 8x8-inch glass dish. Sprinkle the chicken cubes over the bean mixture, then follow with these layers: 3/4 cup of Cheddar cheese, guacamole, sour cream mixture, and sliced tomatoes. Sprinkle the top with 1 1/2 tablespoons of cilantro, black olives, green onions, and 1/4 cup of shredded cheddar cheese.
