7UP® BUTTERMILK BISCUITS

7Up® Buttermilk Biscuits image

Incredibly simple yet outrageously tasty; sour cream makes them super moist and tender. Reminiscent of the original Kentucky Fried Chicken® biscuits, but much better! Great with all kinds of meals but they make an especially fantastic biscuits and gravy breakfast (or lunch or dinner).

5 cups all-purpose buttermilk baking mix
1 cup lemon-lime soda (such as 7Up®)

7UP BISCUITS

7up Biscuits image

I've found several recipes for these biscuits, but all of them are a smaller batch. I wanted to save this one which makes biscuits for a larger group. This also freezes well.

Categories     Biscuits

Number Of Ingredients 4

4 c bisquick baking mix
1 c 7up, or other clear soda
1 c sour cream
1/2 c butter, melted

Steps:

  • 1. Preheat oven to 425.
  • 2. Melt the butter in the bottom of a cookie sheet pan (with sides), reserving a little for brushing on the tops of the biscuits before baking.
  • 3. In a large bowl, mix Bisquick, sour cream and 7up. It will make a soft dough.
  • 4. Sprinkle some Bisquick on the counter and pour dough onto that. Pat the dough out to about 1/2 inch thick and cut biscuits to desired size.
  • 5. Place cut biscuits on the baking sheet and lightly brush with the reserved melted butter.
  • 6. Bake for 12-15 minutes, or until golden brown.
  • 7. Note: These freeze well. And, if you cut the recipe in half, it will make 12 biscuits in a 9x13 baking dish.

Time 20m

Yield 6 biscuits

Number Of Ingredients 7

1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon sea salt
1 tablespoon butter, melted
2 tablespoons chopped fresh herbs, such as dill and rosemary
1/4 cup nonfat Greek yogurt
1/4 cup Sprite or 1/4 cup other carbonated lemon-lime beverage

Steps:

  • Preheat oven to 425˚F. Line a baking sheet with parchment paper.
  • In a large bowl, mix together flour, baking powder, salt, and herbs.
  • Slowly mix in butter, then yogurt, then lemon-lime soda. Dough will be smooshy and sticky!
  • Using a wooden spoon or a large serving spoon, drop balls of dough onto parchment-papered baking sheet. There should be enough dough for about 6 medium-sized biscuits.
  • Bake in 425˚F oven for about 15 minutes, or until the tops of the biscuits begin to brown. Remove from oven and allow to cool on baking sheet for a few minutes before moving to a wire rack.
