This is my favorite recipe. My grandmother and mother used to make this when I was a child. It is absolutely wonderful! You can substitute 7Up® for milk in the glaze.

3 cups white sugar
1 ½ cups butter, softened
5 eggs
3 cups all-purpose flour, sifted
2 tablespoons lemon extract
1 cup lemon-lime carbonated beverage (such as 7Up®)
1 cup sifted confectioners' sugar
¼ cup milk
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Generously grease a fluted tube pan (such as Bundt®).
  • Beat white sugar and butter together in a bowl using an electric mixer until creamy and smooth; add eggs, 1 at a time, mixing well after each addition. Stir flour, 1 cup at a time, blending well after each addition until batter is smooth; stir in lemon extract. Mix lemon-lime beverage into batter and pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 1 hour 15 minutes. Remove cake from pan immediately.
  • Beat confectioners' sugar, milk, and vanilla extract together in a bowl using an electric mixer on medium until glaze is smooth. Pour glaze over warm cake.

This is an outstanding pound cake and one I have made many times in the past, follow the steps properly and you will have pound cake like no other!

1 cup butter, softened
1/2 cup shortening (Crisco is good)
3 1/2 cups sugar, divided
3 cups all-purpose flour
1 1/4 cups 7-up, soda divided
1 teaspoon almond extract
1 teaspoon vanilla
1/2 teaspoon salt
5 large eggs

Steps:

  • Set oven to 300 degrees F.
  • Grease and flour a 10" tube pan.
  • In a large bowl combine butter, shortening, 3 cups sugar (use only 3 cups sugar) vanilla and almond extract; beat using an electric mixer until light and fluffy (about 5 minutes).
  • Sift the flour and salt together.
  • Add eggs, 7-up, and the flour mixture to the butter mixture, using the following directions:.
  • This method must be followed; add 1 egg in at a time; then add a bit of Seven-Up, then a bit of the flour mixture, then a bit more of Seven-Up; repeat until all the eggs, flour mixture and 1 cup Seven-Up is used up (you will use the remaining 1/4 cup for glaze).
  • Spoon mixture into prepared baking pan.
  • Bake at 300 degrees for 1 hour and 40 minutes, or until cake tests done.
  • Cool in pan on a wire rack for 10 minutes.
  • Remove from pan.
  • Mix the remaining 1/2 cup sugar and the 1/4 cup Seven-Up soda.
  • Spread the glaze mix over cake.

3 stick butter, softened
3 c granulated sugar
3 c all purpose flour
6 large eggs, room temperature
2 Tbsp lemon juice
2 Tbsp lemons zest plus 2 teaspoons lemon extract
3/4 c 7 up or any lemon lime soda ( i used ginger ale)
5-6 drops yellow food coloring (optional)
7-UP BUTTER GLAZE
1/2 c 7 up
1 c sugar
2 Tbsp butter
2 tsp lemon extract

Steps:

  • 1. Preheat oven to 350 degrees F. This is the pan I used to bake the cake, it has 11 cup capacity, and is called a Dimensions Bell Pan.
  • 2. Cream Butter with sugar until very light and fluffy at least 10 to 15 minutes or so. While butter and sugar is blending measure our flour & set aside till needed.
  • 3. Then add the eggs one at a time, beating well after each addition.
  • 4. Add about a third of the flour, beat to blend.
  • 5. Add the lemon juice, zest, & extract, & beat to blend. Add more of the flour with the 7 up, and finish with flour, beating well to blend.
  • 6. Now spray or butter and grease your Bundt pan with cooking spray or Bakers Joy. Pour batter into preheated 350 degrees F. oven, and bake for 1 hour and 15 minutes or until tooth pick inserted into center of cake comes out clean.
  • 7. To make the glaze, add the 7 Up to a small sauce pan, add the butter,& sugar, and bring to a simmer over low heat, till mixture becomes syrupy. Remove from heat add lemon extract, and stir to blend.
  • 8. Poke holes into top of cake while still in pan, and slowly drizzle about half of the glaze over the cake. Then invert cake onto large platter, poke holes into cake and slowly spoon or drizzle glaze over cake, allowing the glaze to seep into the cake. Serve plain or with your favorite ice cream.
