5 minutes and it's done! I LOVE fish, but my husband would rather starve, so when I make some wonderful fish dish for myself, I whip this up for him. It's so fast and easy that it doesn't add to my meal prep time at all! Great for scallops too!

1/2 lb shrimp, peeled & deveined
1 -2 tablespoon olive oil
2 whole garlic cloves, peeled
1/4-1/2 teaspoon crushed red pepper flakes
1 teaspoon montreal seasoning
1 teaspoon fresh lemon zest
1 1/2 tablespoons lemon juice
2 teaspoons fresh parsley, finely chopped

Steps:

  • Heat oil in large non-stick skillet.
  • Smash garlic cloves to release scent but do not chop. Add garlic, red pepper, and shrimp to oil.
  • Cook, stirring to mix, until shrimp begins to turn pink (about 2-3 minutes).
  • Add zest, lemon juice, and parsley. Toss to mix. Remove garlic from pan and discard.
  • Remove from heat and serve!

Steps:

  • In a medium-sized skillet over medium-high heat add the butter and melt. Add in the garlic.
  • Add in the shrimp and cajun seasoning and toss in the butter to coat.
  • Cook for 3-5 minutes or until shrimp is opaque and cooked throughout.
