Easy 5-Can Clam Chowder (And a Jar!) image

A very simple way to make clam chowder. You do not dilute the soups at all, just dump them in. This is really nice served in individual bread bowls.

2 (6 1/2 ounce) cans chopped clams, drained
1 (10 1/2 ounce) can cream of celery soup, undiluted
1 (10 1/2 ounce) can cream of potato soup, undiluted
1 (10 1/2 ounce) can cream of mushroom soup, undiluted (optional)
1 (2 ounce) jar pimientos, chopped and drained
1/2 teaspoon garlic powder
1 tablespoon fresh parsley, chopped

Steps:

  • Mix all of the ingredients together. If you feel the need, you may add a little milk to bring it to the right consistency.
  • Heat this whatever way is best for you: stovetop, crockpot, microwave, campfire, etc. Watch closely so it doesn't burn. When hot, serve.

1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)

½ cup barley
½ cup dried split peas
½ cup uncooked white rice
½ cup dry lentils
2 tablespoons dried minced onion
2 tablespoons dried parsley
2 teaspoons salt
½ teaspoon lemon pepper
2 tablespoons beef bouillon granules
½ cup uncooked alphabet pasta
1 cup uncooked twist macaroni

Steps:

  • In a wide mouth 1 quart jar, layer the barley, peas, rice and lentils. Then layer around the edges the onion, parsley, salt, lemon pepper, bouillon and the alphabet pasta. Fill the rest of the jar with the twist macaroni.
  • Seal and attach a gift card. The gift card should read: Add contents of jar to 3 quarts of water, 2 stalks of chopped celery, 2 sliced carrots, 1 cup of shredded cabbage (optional) and 2 cups diced tomatoes. Over medium low heat, cover and simmer about 1 hour, or until vegetables are tender.

Recipe comes from a lady at my sister's office. Update: I've tried now and it supper easy. It did seem to need onion and salt & pepper, so I added these. Other spices could be added since this soup is open to a lot of changes. My suggestion is do not drain the vegetable. If you drain them this soup is very thick, almost like goulash.

This recipe is from a Weight Watchers meeting. It is so quick -- I ate it daily when I was on maternity leave with my second son. If I am making it for the week, I just empty the cans into a plastic container and warm up 1 serving in the microwave. I have also made it using frozen corn and mixed vegetables.
