- In a small skillet, cook onion in oil until tender. Add garlic; cook 1 minute longer. Remove from the heat. In a large bowl, combine onion mixture, sour cream, half of the cheese, milk, chilies and cumin. Stir in hominy. , Pour into a greased 2-qt. baking dish. bake, uncovered, at 350° for 30 minutes or until heated through. Sprinkle with remaining cheese.

- Preheat oven to 350 degrees. In a medium sized bowl combine hominy, sour cream, green chilis and Monterey Jack cheese. Spread evenly into a 2 quart casserole dish. Top with Parmesan Cheese.
- Bake for 1 hour or until golden and bubbly.

I have made this casserole for many years and there is never any left over for long. (I wasn't a fan of hominy when I made but who could hate a recipe with 4 ingredients?! I love hominy now.)

Steps:
- 1. Cut cheese into small cubes or grate the cheese for quicker melting time.
- 2. Mix together drained hominy, partially drained mild green chilies, sour cream. Stir well.
- 3. Add cheese. Pour all into a microwave safe bowl and heat for 5 minutes. Pull out of microwave, stir and if needed, put back into microwave for a few more minutes. Stir one more time before serving. Let it set for just a minute. Sometimes it is a tiny bit soupy but it will come together as it cools down.
- 4. Optional: If you want, you can add a bit of cumin before microwaving. Enjoy!

- Fry the bacon until almost crisp; remove from skillet and drain all but a couple of tablespoons bacon grease. Crumble the bacon and set aside.
- Add onion to skillet and cook for a couple of minutes. Pour in hominy and stir for a couple of minute until warm. Add cheese, chilies, jalapenos (if using), and bacon and stir until cheese is melted. Remove from heat.
- Pour mixture into a large baking pan and sprinkle with a little more cheese, bacon, and green chilies, if desired.
- Bake at 350 for 15 minutes, or until hot and heated through.

- Preheat the oven to 375 degrees F. Butter an 8- or 9-inch square baking pan.
- In a large skillet, fry the bacon over medium-high heat until crispy, 5 to 7 minutes. Remove and drain on paper towels. In the bacon fat, cook the onion and pepper until just starting to brown, 6 to 8 minutes. Stir in the hominy, half-and-half and hot sauce. When the mixture is bubbling, turn off the heat and stir in the bacon and some of the Cheddar and Monterey Jack, reserving some of the cheese for later. Taste and adjust the seasoning with salt, pepper and more hot sauce if needed.
- Pour the mixture into the prepared pan and top with the remaining cheese and the breadcrumbs. Bake until the top is golden brown and the casserole is bubbling, about 20 minutes. Let rest for 15 minutes before serving.
MOM'S HOMINY CASSEROLE
A recipe from my mother. I am not a fan of hominy myself, but this is always a dish that is emptied at Thanksgiving when she makes it. Try it for yourself, and let everyone know!

SOUTHWESTERN HOMINY CASSEROLE
I love hominy, but I rarely find recipes to use it. Recipe courtesy of Jim Fobel's Casseroles. He says to serve this with burgers, broiled salmon, or roasted/barbecued meat. Jim also says you can roast 8 ounces of poblano chilies for a fresher, bigger flavor (peel, seed, and chop. For more flavor serve sprinkled with chopped cilantro and sliced scallions. I enjoyed it with 8 ounces of chilies. Thank you Jim Fobel, you always have the best casserole recipes. YUMMY!

- Preheat the oven, and prepare the casserole or gratin dish by oiling.
- In a large bowl, stir together the yogurt, sour cream, and hot pepper sauce.
- Add the chilies, flour, salt, oregano, cumin, and pepper.
- Stir to combine.
- Stir in the hominy and beans.
- Toss together both cheeses and stir half of it into the mixture.
- Turn into the prepared casserole and sprinkle with the remaining cheese and the paprika.
- Bake for 35 or 40 minutes, or until lightly browned and bubbly around the edges.
- Serve hot. Top with cilantro and scallions if desired.
- To reheat, cover the casserole with aluminum foil.
- If at room temperature, reheat at 325 for about 30 minutes.
- If cold, add 10 to 15 minutes.
