These Italian Breaded Pork Chops are a classic Italian entree. Perfectly golden brown and crispy on the outside but moist and packed full on flavor on the inside, these are about to become your newest favorite mid week meal.

2 medium eggs
2 tablespoon milk
1 cup breadcrumbs (Italian breadcrumbs)
½ cup parmesan cheese
1 tablespoon Italian seasoning
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
2 tablespoon parsley (chopped)
4 pork chops (boneless, 1 inch in thickness)
2 tablespoon olive oil

Steps:

  • In a small bowl, beat together the eggs, the milk, 1/2 tsp of the salt and 1/2 tsp of the pepper. In a separate small bowl, mix the breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, parsley and remaining 1/2 tsp of salt and 1/2 tsp pepper.
  • Heat the olive oil in a large, oven-proof skillet over medium heat. Dip each pork chop into the egg mixture, then into the bread crumb mixture, coating evenly. Place coated pork chops in the skillet, and brown abut 4 to 6 minutes on each side.
  • If using a meat thermometer, check the internal temperature and cook until they reach 135 F degrees. Transfer pork chops to a cutting board and let them rest for 10 minutes before slicing into them. The residual heat will bring the temperature up to 145 F degrees.

5 tablespoons butter, melted
1 tablespoon finely chopped garlic
1 tablespoon Italian seasoning
1 1/4 teaspoons salt
4 bone-in pork loin chops (1 1/2 lb)
2 russet potatoes, unpeeled, cut into 1-inch pieces (1 lb)
1/2 cup Progresso™ Panko Italian style crispy bread crumbs
1/4 cup shredded Parmesan cheese
1 cup cherry tomatoes
1/2 lb green beans, trimmed
1/4 cup thinly sliced fresh basil leaves

Steps:

  • Heat oven to 425°F. Spray 18x13-inch rimmed sheet pan with cooking spray.
  • In large bowl, mix 4 tablespoons of the melted butter, the garlic, Italian seasoning and 1 teaspoon of the salt. Pour 2 tablespoons of the mixture into medium bowl; add pork chops, and toss to coat. Cover and refrigerate. Add potatoes to remaining mixture in large bowl; toss. Pour potato mixture in pan. Roast 25 to 30 minutes, stirring once, until tender.
  • Meanwhile, in medium bowl, mix remaining 1 tablespoon melted butter, the bread crumbs and Parmesan cheese; set aside.
  • Add pork to pan with potatoes. Top pork with bread crumb mixture; press to adhere. Add tomatoes and green beans to pan; sprinkle vegetables with remaining 1/4 teaspoon salt. Roast 12 to 18 minutes or until pork is no longer pink and meat thermometer inserted in center reads at least 145°F, and potatoes are browned and tender. Top with basil.

2 medium green peppers, cut into 1/4-inch strips
1/2 pound sliced fresh mushrooms
1 tablespoon plus 1-1/2 teaspoons olive oil, divided
4 boneless pork loin chops (6 ounces each)
3/4 teaspoon salt, divided
3/4 teaspoon pepper, divided
2 cups marinara or spaghetti sauce
1 can (3-1/2 ounces) sliced ripe olives, drained

Steps:

  • In a large skillet, saute peppers and mushrooms in 1 tablespoon oil until tender. Remove and keep warm., Sprinkle chops with 1/4 teaspoon salt and 1/4 teaspoon pepper. In the same skillet, brown chops in remaining oil. Add the marinara sauce, olives, remaining salt and pepper, and reserved pepper mixture. Bring to a boil. Reduce heat; cover and simmer until a thermometer inserted in pork reads 145°, 10-15 minutes. Let stand for 5 minutes before serving.

1/2 cup Original Bisquick™ mix
1/3 cup Italian dressing
1/2 cup Progresso™ garlic herb bread crumbs
4 pork boneless loin chops, 1/2 inch thick (1 1/2 pounds)
2 tablespoons vegetable oil

Steps:

  • Place Bisquick mix, dressing and bread crumbs in separate shallow bowls. Coat pork chops with Bisquick mix. Dip coated pork chops into dressing, then coat with bread crumbs.
  • Heat oil in 12-inch nonstick skillet over medium-high heat. Cook pork in oil about 5 minutes or until golden brown; reduce heat to low. Carefully turn pork. Cook 10 to 15 minutes longer or until pork is no longer pink in center. Serve immediately.

30 Minute Easy Pork Chops

Not true Italian cooking, but adapted from a friend's grandmother's recipe. Quick and easy version perfect for when you don't have a lot of time to get dinner on the table.

2 tablespoons olive oil
1 1/2 lbs boneless pork chops
1 scallions or 1 green onion, chopped
1/2 red onion, chopped
2 teaspoons fresh garlic, minced
2 teaspoons sweet basil
1/4 teaspoon oregano
1/4 teaspoon cilantro
1/4 teaspoon red pepper
1 pint grape tomatoes, halved
1/2 cup water
1 cup white wine
6 ounces medium egg noodles (optional)

Steps:

  • In a 2 quart or larger saute pan, brown pork chops over medium to medium-high heat in olive oil (5 - 7 minutes).
  • Add green and red onions and saute until soft (5 minutes).
  • Add garlic and spices, saute another minute.
  • Add water and tomatoes.
  • Bring to a boil then add the wine.
  • Simmer for 15 minutes.
  • Serve over your favorite pasta.
  • One pan meal version: Cut pork chops into bite-sized pieces prior to browning, increase water to 3/4 cup, simmer for 13 minutes, increase heat to high to bring back to quick boil and add 6 - 8 oz medium egg noodles to pan. Reduce heat slightly and boil for 5 - 7 minutes. Serve.
