It filled the house with a wonderful aroma, and I was able to make it with ingredients that I already had in my pantry. 1 can (15 ounces) pumpkin
1/4 cup 2% milk
1/4 cup sour cream
1/2 cup packed brown sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
Topping:
1/4 cup packed brown sugar
1/4 cup all-purpose flour
1/4 cup old-fashioned oats
1/2 teaspoon ground cinnamon
1/8 teaspoon each ground ginger, ground nutmeg and ground allspice
3 tablespoons cold butter
2 tablespoons finely chopped pecans
Vanilla ice cream, optional

Steps:

  • Preheat oven to 375°. In a large bowl, whisk first pumpkin, milk and sour cream until smooth. Combine brown sugar, flour and cinnamon; stir into pumpkin mixture. Pour into a greased 8-in. square baking dish. For topping, in another bowl, combine brown sugar, flour, oats and spices. Cut in butter until crumbly. Stir in pecans; sprinkle over pumpkin mixture. Bake until topping is golden brown, 35-40 minutes. Serve warm with ice cream, if desired.

2-1/4 cups flour
1 Tbsp. baking powder
2 tsp. pumpkin pie spice, divided
1 cup butter, softened
1-1/4 cups sugar, divided
1/2 cup molasses, divided
1/2 cup old-fashioned or quick-cooking oats
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 cup canned pumpkin
1 tsp. vanilla
2 eggs

Steps:

  • Heat oven to 350ºF.
  • Line 13x9-inch pan with foil, with ends of foil extending over sides. Mix flour, baking powder and 1 tsp. spice until blended. Beat butter, 1 cup sugar and 1/4 cup molasses in large bowl with mixer until blended. Gradually add flour mixture, mixing well after each addition. Remove 1 cup dough; place in medium bowl. Add oats; mix with fingers or fork until mixture resembles coarse crumbs. Set aside. Press remaining dough onto bottom of prepared pan.
  • Beat cream cheese and remaining sugar in medium bowl with mixer until blended. Add pumpkin, vanilla, remaining molasses and spice; mix well. Blend in eggs; pour over crust. Sprinkle with reserved crumb mixture.
  • Bake 30 to 35 min. or until topping is golden brown. Cool completely. Refrigerate 1 hour. Use foil handles to lift dessert from pan before cutting into bars.

1/2 cup plus 2 tablespoons all-purpose flour, divided
1/2 cup pecans, roughly chopped
1/4 cup light-brown sugar
2 tablespoons finely chopped candied ginger
1/4 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, melted and cooled
1 1/2 pounds sugar or pie pumpkin or butternut squash, peeled, seeded, and cut into 1/2-inch cubes (1 pound when cubed)
2 pounds Granny Smith apples (4 to 5 apples), peeled, cored, and cut into 1/2-inch cubes
1/2 teaspoon grated lemon zest, plus 1 tablespoon lemon juice
1/4 cup granulated sugar
1 teaspoon ground cinnamon
Vanilla ice cream, for serving

  • Preheat the oven to 350°F.

2 cups half-and-half

Steps:

  • Preheat the oven to 350 degrees F. Butter the bottom and sides of a 13-by-9-inch baking dish with 1 tablespoon butter.
  • Whisk together the pumpkin puree, half-and-half, granulated sugar, eggs, 2 teaspoons pumpkin pie spice, 1/4 teaspoon cardamom and 1/2 teaspoon salt in a large bowl until well blended.

1 cup chopped pecans (or walnuts)
5 tablespoons butter, melted

2 teaspoons pumpkin pie spice
whipped cream (or ice cream if serving warm)

Steps:

  • Preaheat oven to 350°F Spray a 11x7" casserole dish with nonstick cooking spray and set aside.
  • In a medium bowl, combine all crumble ingredients, stirring and tossing gently using a spatula (use your fingers to make loose crumbs). Sprinkle a little more than half of it evenly over casserole dish and press down gently (the bottom should be totally covered with crumble.

1/4 cup granulated sugar
1/4 cup packed brown sugar
1/4 cup pecans, chopped
1/4 cup rolled oats
3/4 cup all-purpose flour
2 teaspoons pumpkin pie spice
1 teaspoon kosher salt
4 ripe pears, cored and diced
1 pound fresh or frozen cranberries
2 tablespoons cornstarch
2 tablespoons granulated sugar
1 teaspoon ground ginger
1 teaspoon orange zest
Pinch kosher salt
Butter or nonstick cooking spray, for the baking dish
Pumpkin Spiced Whipped Cream, recipe follows, vanilla ice cream, Greek yogurt or coffee ice cream, for serving
1 cup heavy whipping cream, chilled
1/4 cup confectioners' sugar
1 teaspoon pumpkin spice
1 teaspoon vanilla extract or bourbon

Steps:

  • Preheat the oven to 375 degrees F.
  • For the crumble topping: In a food processor, combine the diced butter, granulated sugar, brown sugar, pecans, oats, flour, pumpkin spice and salt. Pulse in short bursts of 3 to 5 seconds until the mixture resembles little pebbles. Or combine in a bowl and mix well, then work the mixture by hand to the desired texture. Reserve, chilled. (The mixture may be refrigerated for up to 2 weeks or frozen indefinitely.)
  • For the filling: Combine the pears and cranberries in a large bowl and sprinkle the cornstarch, granulated sugar, ginger, orange zest and salt over the fruit. Mix well to combine.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Sift flour, brown sugar, ginger, cinnamon, baking powder, salt, and allspice together in a large bowl. Cut in butter using your fingers, a pastry cutter, or a food processor until the crumbs resemble cornmeal. Drizzle water and molasses over crumbs, mixing with fingers, until the crumbs begin to cling together. Gather the dough and knead it into a ball. Press crust evenly into the bottom and up the sides of a pie pan.
  • Bake in the preheated oven until lightly golden, 10 to 15 minutes. Remove crust from oven and reduce oven temperature to 350 degrees F (175 degrees C).

  • Remove pie from the oven and top with walnut crumble. Return pie to the hot oven and continue baking until crisped, about 10 minutes more. Remove pie from oven and turn broiler on.
  • Bring maple syrup to a boil in a small, heavy-bottomed saucepan over medium heat, about 5 minutes. Clip an instant-read thermometer onto the pan and watch for the syrup to reach 225 degrees F (110 degrees C).
  • Place egg whites into the bowl of a stand mixer fitted with the whip attachment. Start whipping at medium-high speed. Slowly sprinkle sugar into the whites and whip until soft peaks form, about 2 minutes.
  • Check the syrup and when the temperature reaches 238 degrees F (114 degrees C), reduce the mixer speed to medium and carefully add the hot maple syrup by pouring it along the side of the bowl. Increase mixer speed to medium-high and continue whipping until meringue is thick and shiny, an additional 3 to 4 minutes.
  • Use a spatula to spread meringue over the entire pie all the way to the crust. Toast meringue under the hot broiler until lightly brown, 1 to 2 minutes.
  • Serve chilled or at room temperature.

1-1/2 cups heavy whipping cream
