I got this recipe from an old Georgia Boy that was transplanted in Tennessee, he is 72 and says he grew up on this sandwich.

Steps:
- In the peak of tomato season, chill 1 very large or 2 medium size tomatoes that have been vine-ripened and have plenty juice.
- Take 2- slices of bread and coat them with 1/4 inch good mayonnaise.
- Add layer of tomatoes cut 1/4 inch thick.
- Salt & Pepper to taste.
- Add another slice of tomatoes and salt and pepper to taste again.
- Add the other piece of bread on top of this.
- Roll up your sleeves and start eating over the kitchen sink while the juice runs down your elbows.

Steps:
- All ingredients in this recipe are to taste.
- Assume that each person will eat at least a half loaf sandwich.
- Build these sandwiches immediately before serving.
- Slice tomatoes to 1/4 or 1/2 inch slices.
- Crush lots of fresh garlic cloves.
- Chop some basil leaves leave some whole for decoration.
- Cut loaf of Italian bread in half crosswise.
- Slice each half loaf lengthwise but NOT all the way through as you would for a sub sandwich.
- Open each half loaf flat.
- Drizzle a good amount of olive oil on both sides of the loaf.
- Spread fresh garlic (to taste) on bottom of loaf.
- Spread some chopped basil (to taste) on bottom of loaf.
- Lay tomato slices on bottom of loaf slightly overlapping.
- Add more garlic if desired.
- Salt and pepper to taste.
- Add some whole basil leaves for decoration.
- Serve open for eye appeal.
VICKSBURG TOMATO SANDWICHES
This recipe is from "Ambrosia". The cookbook is from Vicksburg, MS. This is an excellent sandwich with homemade mayonnaise.

- SANDWICHES:.
- Cut bread with biscuit cutter into 72 rounds.
- Slices tomatoes thinly and place on double sheets of paper towels to drain.
- Salt and pepper tomato slices.
- Spread Homemade Mayonnaise on bread rounds.
- Place well-drained tomato slices on half the bread rounds and sprinkle again with salt and pepper.
- Sprinkle 1/2 teaspoon onion with juice over each tomato and top with remaining bread rounds.
- Sprinkle with paprika.
- HOMEMADE MAYONNAISE: (Yields: 2 cups).
- Combine first 5 ingredients in food processor blender.
- Blend 45 seconds to 1 minute.
- Gradually add oil with processor running until mixture thickens.
- When thick, turn off and add lemon juice.

EGG & TOMATO SANDWICH
So simple and so delicious. I'm not sure why it never occurred to me to put this combo together, but when I lived in England, the little sandwich stand always had this on hand. I became completely addicted to it :) Depending on the size of your eggs, you might want to use 2 - you want enough to layer it down the length of the baguette.

SIMPLE TOMATO SANDWICH
I am only posting such a simple recipe because I actually somehow lived 29 years of life before my husband introduced me to the Tomato Sandwich. If you've only used tomatoes as an accessory in your sandwiches, and not as the Featured Ingredient, you are truly missing summer as it was meant to be tasted. - When bread is adequately toasted, liberally spread both sides with Miracle Whip (or butter one side with Miracle Whip on the other).

- Slice baguette lengthwise.
- Spread red pepper tapenade on one half.
- Spread goat cheese on other.
- Layer salami, cheese, roasted red peppers on top.
- Put whole thing together.
- Wrap in plastic wrap.
- Refrigerate overnight.
- Bring to room temp and slice into 1 inch pieces.
- Add anything else you like -- turkey, other cheese, arugula, but that would wilt overnight, etc.
- And you don't HAVE to refrigerate overnight, but I like the way the flavors meld.
