BLACK WALNUT POUND CAKE
I still remember my grandmother making this cake when I was a child...oh, how good it smelled and tasted!

- In a large bowl, cream the butter, shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Sift together flour and baking powder; add alternately to creamed mixture with milk and extracts, beating on low speed just until combined. Fold in nuts. , Pour into a greased and floured 10-in. tube pan. Bake at 325° for about 1 hour 25 minutes or until a toothpick comes out clean. Cool on a rack for 10 minutes before removing from pan to cool completely., In a small bowl, combine frosting ingredients; spread over cake.

BLACK WALNUT POUND CAKE WITH CARAMEL NUT GLAZE
I found this recipe on the web, stating that it was 125 years old. I tried it and it was so good! I make this whenever I have black walnuts on hand and I added my caramel nut glaze. I've served this to company and taken it to potlucks and everyone loves it. I usually don't get to bring any home. Enjoy!

- 1. Preheat oven to 325 degrees. Grease and flour bundt or tube pan, set aside.
- 2. Cream butter and Crisco. Add sugar and beat until light and fluffy. Add eggs one at a time, beating well after each addition. Add flavorings and beat well.
- 3. Sift flour first and then measure. Mix 1/4 cup of flour with nuts. Sift remaining flour with baking powder. Add alternately with milk, beginning and ending with flour (I do this by hand to prevent over mixing). Gently fold in nuts.
- 4. Bake for 1 hour and 25 minutes or until knife inserted in center comes out clean.
- 5. CARAMEL NUT GLAZE: Place all ingredients except nuts into a saucepan. Over medium heat bring to a boil, stirring constantly until thickened. Remove from heat and stir in nuts. Allow to cool in pan for about 5 to 10 minutes and pour over warm cake.

Steps:
- In mixer bowl cream butter and sugars until fluffy.
- In another bowl combine flour, baking powder and salt.
- In measuring cup combine milk and maple flavoring, and beat into butter mixture alternatively with flour mixture.
- Beat in eggs 1 at a time.
- Mix in 1 1/2 cups chopped walnuts.
- Turn into greased 9 or 10 inch tube pan and bake in lower third of 300-degree oven 1 hour to 1 hour 15 minutes, just until pick inserted into center comes out clean.
- Cool in pan 15 minutes, then turn out onto rack to cool completely.
- Drizzle with maple glaze and garnish with walnuts.
- Maple Glaze:
- In a small bowl mix 1 cup sifted powdered sugar with 1 to 1 1/2 tablespoons
- Milk to make a glaze of thick pouring consistency. Stir in 1/2 teaspoons maple flavoring.

- Preheat oven to 325°F Grease and flour a 10-inch tube or Bundt pan and set aside.
- Cream together the butter and shortening with an electric mixer on medium speed for 2 minutes. Gradually add the sugar.
- Add the eggs, one at a time, beating well between each addition.
- In a separate bowl, sift together the flour and baking powder.
- Gradually add to the butter mixture, alternating each addition with the milk.
- Mix until just blended.
- Stir in the vanilla and walnuts.
- Pour into the pan and bake for 90 minutes, or until a toothpick comes out clean.
- Remove from the oven and allow to cool for 10-15 minutes. Remove from the pan and cool thoroughly on a wire rack.
- Dust with powdered sugar before serving.
