A quick and easy cold noodle dish for even the busiest of days.

Number Of Ingredients 9

½ cup chinese black vinegar
¼ cup high grade sesame oil
¼ cup soy sauce
1 tablespoon sugar
1 ⅔ lb fresh noodles, of choice, cooked and chilled
1 teaspoon garlic, minced
2 tablespoons scallion, thinly sliced
1 tablespoon chili oil
1 tablespoon sesame seeds

Steps:

  • In a medium bowl, mix together the black vinegar, sesame oil, soy sauce, and sugar. Set aside.
  • Cook the noodles according to the package instructions, then drain. Place the noodles in the bowl with the sauce and toss to coat.
  • Garnish with the garlic, scallions, chili oil, and sesame seeds.
  • Enjoy!

I got this recipe from a father of one of my Girl Scouts in Mississippi in 1973. It's a favorite at my house and the Girl Scout is now the mother of my four grandchildren. Enjoy!

Number Of Ingredients 7

½ cup butter
2 cups white sugar
½ cup milk
4 tablespoons unsweetened cocoa powder
½ cup peanut butter
½ teaspoon vanilla extract
3 cups quick cooking oats

Steps:

  • Bring margarine, sugar, milk and cocoa to boil. Let boil for exactly 1 minute and 30 seconds.
  • Remove from heat, stir in vanilla and peanut butter. Then stir in oats.
  • Quickly drop by large tablespoon onto wax paper laid on top of newpaper. Let cool, peel from paper and turn over to finish drying.
  • Store in closed container.

Here's what you need: vegetable oil, garlic, fresh ginger, shallot, ground pork, soy bean paste, sweet bean sauce, dark soy sauce, cornstarch slurry, large egg, fresh noodles, persian cucumber, fresh cilantro leaves

2 tablespoons vegetable oil, plus 1 teaspoon, divided
1 tablespoon garlic, plus 1 teaspoon minced, divided
1 tablespoon fresh ginger, minced
1 tablespoon shallot, minced
4 oz ground pork, 80/20
1 tablespoon soy bean paste, fermented
1 tablespoon sweet bean sauce
1 teaspoon dark soy sauce
¼ cup cornstarch slurry, 8 teaspoons cornstarch mixed with 4 teaspoons water
1 large egg, beaten
⅔ lb fresh noodles, of choice
1 persian cucumber, thinly sliced
½ cup fresh cilantro leaves

Steps:

  • In a medium pan, heat 1 tablespoon of vegetable oil over medium heat. Add 1 tablespoon of minced garlic, the ginger, and shallot and sauté until lightly aromatic, 1-2 minutes. Add the ground pork to the pan and cook, undisturbed, until golden brown, 3-5 minutes.
  • Meanwhile, in a small pan, heat another tablespoon of vegetable oil over medium-low heat. Add the soy bean paste and sweet bean sauce and cook until caramelized, 1-2 minutes, being careful not to burn.
  • Add the caramelized bean paste mixture to the ground pork mixture and stir to combine. Add the soy sauce and cook for another 30 seconds to incorporate. Add the cornstarch slurry, reduce the heat to low, and simmer for about 15 minutes, adding a few tablespoons of water at a time as needed to keep the mixture at a simmer.
  • Meanwhile, heat a small pan over low heat. Add the remaining teaspoon of vegetable oil, then pour in the egg and tilt the pan to spread in a thin layer. Cook until the top is just set, then remove the egg crepe from the pan. Let cool, then thinly slice.
  • Cook the noodles according to the package instructions, then drain.
  • Place the cooked noodles in a serving bowl and top with the ground pork mixture. Garnish with the egg crepe strips, cucumber, cilantro, and remaining teaspoon of minced garlic.
  • Enjoy!

1 cup wholewheat noodles, cooked
1 tablespoon garlic puree
½ teaspoon chili flakes
½ teaspoon fennel seeds
½ teaspoon black pepper
1 tablespoon soy sauce
1 tablespoon white wine vinegar
2 tablespoons peanut butter
4 tablespoons fresh parsley, chopped
¼ cup sesame oil
peanut
fresh parsley
pickled ginger

Steps:

  • Add all the ingredients, except the noodles and oil to a large heatproof bowl
  • Heat the oil in a pan til smoking
  • Pour the oil over the ingredients, it'll sizzle! Whisk together
  • Toss through the noodles until nicely coated
  • Put into your favourite bowl and top with peanuts, parsley & pickled ginger
  • Devour, cry with happiness!
