What's great about basic buttery shortbread cookies is how you can add flavors to them. Or just leave them as is.

1 cup (2 sticks) unsalted butter, room temperature
3/4 cup confectioners' sugar
1 1/2 teaspoons coarse salt
2 1/3 cups all-purpose flour (spooned and leveled)
1/3 cup coarse or sanding sugar (optional), for decorating

Steps:

  • In a food processor, combine butter, confectioners' sugar, and salt; process until smooth. Add flour and pulse just until combined. Form dough into an 8-inch-long round or square log; wrap tightly in plastic and freeze until firm, 30 minutes (or up to 1 month).
  • Preheat oven to 350 degrees, with racks in upper and lower thirds. Cut dough into 1/4-inch-thick slices. Dip edges in sugar if desired and transfer to two parchment-lined baking sheets. Bake until cookies are golden brown around edges, 15 to 18 minutes, rotating sheets halfway through. Let cookies cool 5 minutes on sheets. Transfer to wire racks to cool completely.

Its as easy as 123 and is absolutley the best shortbread recipe around. This recipe was given to my grandmother from an old English lady and Im so glad she passed it down to me.

1 cup sugar
2 cups butter
3 cups white flour

Steps:

  • Beat sugar into the softened butter. ( I leave this mixture on the counter for half an hour so that the sugar dissolves into the butter properly. Then pour this into the flour and beat until mixture is white.
  • drop by spoonful onto parchment papered cookie sheet place a christmas cherry on top and bake at 300-325 until pale brown. (not sure exactly how long, probably 10- 15 minutes.
  • You might want to double the recipe on this one, because you'll end up not being able to put these down.

1 1/3 cups argo cornstarch
2 cups all-purpose flour
4 2/3 cups powdered sugar, sifted
2 1/3 cups butter
1/2 teaspoon vanilla extract
2 1/2 teaspoons grated lemons, rind of
1/3 cup lemon juice

Steps:

  • Preheat the oven to 350.
  • In medium bowl combine flour, corn starch and 2/3 Celsius of powdered sugar; set aside.
  • In large bowl with mixer at medium speed, beat 2 cups of butter until softened and smooth.
  • Add flour mixture, 1 1/2 t.
  • lemon peel and vanilla; beat until well blended.
  • [Ifnecessary, refrigerate dough 1 hour or until easy to handle.
  • ]Shape dough into 1 inch balls.
  • Place 1 1/2 inches apart on ungreased cookie sheets.
  • Bake about 10-12 minutes or until edges are lightly browned.
  • Remove from oven; cool completely on wire racks.
  • Store in tightly covered container.

  • In a medium bowl beat together the remaining 1/3 Celsius butte and the remaining 1 t.
