3 cups sliced zucchini
1 cup sliced onion
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
1/8 teaspoon salt
3 tablespoons butter
1 garlic clove, minced
1 medium tomato, cut into 12 wedges
1 cup shredded part-skim mozzarella cheese

Steps:

  • In a large skillet, saute the zucchini, onion and seasonings in butter until crisp-tender. Add garlic; cook 1 minute longer., Gently stir in tomato wedges; sprinkle with cheese. Remove from the heat; cover and let stand for 1-2 minutes or until cheese is melted.

Baked Zucchini With Mozzarella Recipe - (4.1/5) image

2 medium sized (or about 5 small) zucchini
Garlic spread and seasoning
2 C shredded mozzarella cheese I used a bled of Monterrey and cheddar and I didn't measure the cheese, just put on what looked good)

Steps:

  • . Slice your zucchini up into 1/2 inch rings. 2. Lay them out flat on a large cookie sheet. Sprinkle with Garlic Seasoning and a bit of salt. 3. Bake in the oven at 350 for about 10-15 minutes or until crisp tender. 4. Take the hot pan out of the oven and sprinkle the zucchini with cheese. Turn the oven to broil, throw that cookie sheet back into the oven and let the cheese get all bubbly and a bit browned. This should only take about 3-5 minutes. Be careful here. Broiling things in the oven can get out of control in a fast hurry. (my trick for broiling is to not move the rack up, I just keep it in the middle of the oven and things are less likely to burn. It may take a minute longer, but no burnt food)

1 1/2 pounds zucchini
1 1/2 pounds tomatoes
1 pound mozzarella
Olive oil
Balsamic vinegar
Salt and pepper
Basil, for garnish

Steps:

  • Heat a charcoal or gas grill; the fire should be medium-low and the rack about 4 inches from the heat.
  • Cut 1 1/2 pounds zucchini into 1/2-inch-thick slices.
  • Rub zucchini with olive oil, salt and pepper; grill, turning once, until nicely browned and tender, 6 to 8 minutes.
  • As zucchini cooks, slice 1 1/2 pounds tomatoes and 1 pound mozzarella into 1/4 inch rounds.
  • Toss (or layer) with the zucchini, and drizzle with balsamic vinegar and olive oil; season with salt and pepper.
  • Garnish with basil.

2 zucchini (sliced into 1/4-1/2 inch pieces)
10 cherry tomatoes (halved)
4 oz Buffalo Mozzarella or regular fresh Mozzarella (thinly sliced. You should have approximately 15 slices.)
7 leaves basil
3 tbsp tomato sauce
4 cloves garlic (thinly sliced)
2 tbsp olive oil
1 tsp Italian herbs
1 tsp salt
1/2 tsp pepper

Steps:

  • Preheat the oven to 450 F.
  • In a medium bowl mixed together sliced zucchini, Italian herbs, salt, pepper and 1 tbsp of olive oil. Set aside for 5 minutes.
  • Spray a medium size casserole dish with a baking spray and arrange zucchini followed by garlic, tomatoes and basil.
  • Spoon the tomato sauce on top followed by sliced Mozzarella and a final drizzle of 1 tbsp of olive oil.
  • Bake for 15-18 minutes until Mozzarella is bubbly and melted.

4 cups cubed zucchini (, do not peel)
1 medium red onion, peeled and sliced thinly
2 cups fresh mushrooms, sliced
2 large tomatoes, coarsely chopped
2 cloves garlic, minced
2 teaspoons oregano
freshly grated black pepper, , to taste
1 1/4 cups grated sharp cheddar cheese, , divided
1 1/4 cups grated mozzarella cheese, , divided

Steps:

  • Preheat oven to 350F degrees.
  • In a greased casserole dish, combine first 7 ingredients, then stir in 1 cup each of the shredded cheeses.
  • Smooth top as best you can, then sprinkle on the remaining 1/4 cups of cheddar and mozzarella.
  • Bake, uncovered, for 30 minutes; be careful not to bake too long or the zucchini goes mushy.

This is a recipe I kinda just put together (the best kind!). I had way to many fresh veggies in my garden and needed to get creative. This is so simple to do, but it looks so fresh and extravagent. Please add/subtract to taste. Adding grated Parmasian Cheese is nice too! It's really hard to mess up this recipe!

2 tablespoons vegetable oil or 2 tablespoons olive oil
1 large zucchini
1 large tomatoes
1/2 cup fresh green beans
2 chopped fresh garlic cloves
1 dash salt
green peppers or red pepper
yellow squash

Steps:

  • Put oil in large pan.
  • Warm pan while dicing veggies.
  • Dice the tomatoes, halve the green beans, slice the zucchini diagonally (makes it look fun!), and chop the garlic.
  • Keep the pan on a medium temp, you want the juices to blend slowly.
  • Throw the garlic and zucchini in warmed pan first, then add the rest.
  • Throw dash of salt on the veggies to bring out the juices.
  • The tomatoes will cook down almost completely, but the color they add is essential!
  • Cook over medium heat until either Al Dente or soft, whatever you prefer!
  • ENJOY!
