ZUCCHINI CUPCAKES

Number Of Ingredients 14

2 1/2 cups all-purpose flour
1 1/4 tsps baking powder
1 tsp baking soda
1 1/4 tsps cinnamon
1/2 tsp nutmeg
1/8 tsp cloves
1/8 tsp ginger
1/2 tsp salt
4 large eggs at room temperature
1 1/2 cups granulated sugar
1/2 cups packed light brown sugar
1 1/2 cups vegetable oil
1 pound zucchini (about 2 medium zucchini, or 3 cups grated, grated finely)
Cream Cheese Frosting (see note)

Steps:

  • reheat your oven to 350 degrees. Prepare three cupcake pans with parchment baking cups (or regular cupcake liners).
  • Whisk together in a large bowl the flour, baking powder, baking soda, and spices.
  • Whisk the eggs and sugars together in a large bowl until the sugars are just about dissolved. Now add the oil about a half a cup at a time and whisk in until it's combined.
  • Slowly add the flour mixture. Stir in the zucchini.
  • Fill the cupcake liners 3/4 full. (I love using this scoop).
  • Turn your oven down to 325 right before putting the cupcakes in. Bake for 23 to 26 minutes or until the edges just begin to turn golden brown and a toothpick inserted in the center comes out with just a few crumbs.
  • Allow cupcakes to cool completely before frosting.

Bake an unexpected alternative batch of treats using abundant seasonal zucchini from the farmstand or local market. Like their carrot counterparts, these are finished with cream-cheese frosting. For a more wholesome snack, forgo the frosting and lightly dust cupcakes with confectioners' sugar instead.

3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon ground cloves
1 cup vegetable oil
2 large eggs, room temperature
1 tablespoon pure vanilla extract
3/4 teaspoon finely grated lemon zest
2 cups packed light-brown sugar
3 cups packed grated zucchini (about 1 1/2 zucchini)
1 cup walnuts (about 3 ounces), toasted (see page 323) and coarsely chopped
Cream-Cheese Frosting (page 303)

Steps:

  • Preheat oven to 350°F. Line standard muffin tins with paper liners. Whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. In another bowl, whisk together oil, eggs, vanilla, and zest until well blended; whisk in brown sugar until smooth. Stir in zucchini, then add flour mixture and stir until just combined. Stir in walnuts.
  • Divide batter evenly among lined cups, filling each three-quarters full. Bake, rotating tins halfway through, until a cake tester inserted in centers comes out clean, about 20 minutes. Transfer tins to wire racks to cool completely before removing cupcakes. Cupcakes can be stored overnight at room temperature, or frozen up to 2 months, in airtight containers.
  • To finish, use a small offset spatula to spread cupcakes with frosting. Refrigerate up to 3 days in airtight containers; bring to room temperature before serving.

½ teaspoon salt
1 cup shredded zucchini

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup cupcake pan with paper liners.
  • Whisk vegetable oil, egg, milk, lemon juice, and vanilla extract together in a bowl.
  • Combine flour, sugar, chocolate chips, baking soda, cinnamon, and salt in a separate bowl. Pour in oil mixture and fold gently to combine. Stir in zucchini. Spoon batter into the prepared pan.

1 1/3 cups sugar
1/2 cup vegetable oil
1/2 cup orange juice
1 teaspoon almond extract
2 1/2 cups all-purpose flour

1/2 teaspoon ground cloves
1 1/2 cups shredded zucchini
1 cup packed brown sugar

1/4 cup milk

Steps:

  • In a mixing bowl, beat eggs, sugar, oil, orange juice and extract.
  • Combine dry ingredients; add to the egg mixture and mix well.
  • Add zucchini and mix well.

Steps:

1/3 cup crystallized ginger (1 3/4 oz), coarsely chopped
2 cups all-purpose flour
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon finely grated fresh orange zest
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
2 cups coarsely grated zucchini (2 medium)
3/4 cup mild olive oil
3/4 cup mild honey
2 large eggs, lightly beaten
1 teaspoon vanilla
For frosting
8 oz cream cheese, softened
2 tablespoons unsalted butter, softened
1/2 cup confectioners sugar
1 teaspoon vanilla
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon finely grated fresh orange zest
Special Equipment
a muffin pan with 12 (1/2-cup) cups; 12 paper liners

Steps:

  • Bake cupcakes:
  • Put oven rack in middle position and preheat oven to 350°F. Line muffin cups with liners.
  • Pulse crystallized ginger in food processor until finely ground, then add flour, ground ginger, cinnamon, zest, salt, baking soda, and baking powder and pulse until combined.
  • Whisk together zucchini, oil, honey, eggs, and vanilla in a medium bowl, then stir in flour mixture until just combined.
  • Divide batter among muffin cups and bake until golden and a wooden pick or skewer inserted in center of a cupcake comes out clean, 20 to 24 minutes.
  • Cool in pan on a rack 10 minutes. Remove cupcakes from pan and cool completely, 1 hour.
  • Make frosting:
  • Beat together frosting ingredients with an electric mixer at high speed until combined well and fluffy, 3 to 5 minutes.
  • Frost tops of cooled cupcakes.
