ESCAROLE AND POTATO SOUP



Escarole and Potato Soup image

Go green with this gorgeous soup made with escarole, rosemary and potato.

Number Of Ingredients 9

2 tablespoons bacon drippings or olive oil
1 cup chopped red onion
1 cup chopped peeled potato
1 bay leaf
1 medium clove garlic, minced
1 sprig rosemary
3 1/2 cups chicken broth
3 cups firmly packed chopped escarole
Grated pecorino, for serving

Steps:

  • Heat the drippings or oil in a medium saucepan over medium heat. Add the onion and cook, stirring, until tender, 3 to 5 minutes. Add the potato, bay leaf, garlic, rosemary, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, until the potatoes are well coated, 2 to 3 minutes more. Pour in the broth and bring to a simmer.
  • Simmer until the potatoes are tender, about 15 minutes, adjusting the heat as needed to maintain a simmer. Stir in the escarole and cook 5 minutes more. Remove from the heat, discard the bay leaf and rosemary and let cool at least 5 minutes. Carefully puree until smooth with a handheld immersion blender or in 2 to 3 batches in a blender (do not fill the blender more than halfway full per batch).
  • Reheat the soup if necessary, adjusting the consistency and seasoning with additional water, salt and pepper.
  • Serve hot sprinkled with grated pecorino.
  • Disclaimer: When blending hot liquid, first let it cool for 5 minutes or so, then transfer it to a blender, filling only halfway. Put the lid on, leaving one corner open. Cover the lid with a kitchen towel to catch splatters and pulse until smooth.

1 (16 ounce) package bulk pork sausage
2 cups chopped celery
1 cup chopped onion
3 zucchinis, thinly sliced
3 (14.5 ounce) cans diced tomatoes
1 (15 ounce) can chicken broth
2 teaspoons Italian seasoning
1 teaspoon garlic salt
1 cup shredded Cheddar cheese

Steps:

  • Heat a large pot over medium-high heat. Cook and stir sausage, celery, and onion in the hot skillet until sausage is completely browned, 5 to 7 minutes; drain and discard grease.
  • Stir zucchini, diced tomatoes, chicken broth, Italian seasoning, and garlic salt into the sausage mixture. Place pot over low heat and cook mixture at a simmer until the zucchini is tender, about 25 minutes. Top individual servings with Cheddar cheese.

1/4 cup extra-virgin olive oil
2 leeks (white and pale green parts only), chopped
2 garlic cloves, minced
6 zucchini, thinly sliced crosswise
2 (13 3/4-ounce) cans quartered artichoke hearts packed in water, drained
Salt and freshly ground black pepper
10 cups vegetable broth
1 tablespoon chopped fresh thyme leaves
4 ounces dried wide egg noodles
Freshly grated Parmesan

Steps:

  • Heat the oil in a heavy large pot over medium heat. Add the leeks and saute until translucent, about 8 minutes. Add the garlic and saute until tender, about 2 minutes. Stir in the zucchini and artichokes. Season the vegetables with salt and pepper. Saute until the zucchini are tender, about 10 minutes. Add the vegetable broth. Stir in the thyme and cook for 2 minutes. Cover the pot and bring the soup to a simmer. Decrease the heat to medium-low and simmer gently until the flavors develop, stirring occasionally, about 20 minutes. Increase the heat to medium-high. Add the noodles and cook until al dente, stirring constantly, about 5 minutes.
  • Ladle the soup into bowls. Sprinkle with Parmesan and serve.

This creamy zucchini soup is the BEST way to use up garden zucchini with no need for a roux to make it nice and thick! Simply blend seasoned zucchini with potatoes to create a thick and flavorful broth. Add a touch of cream and your choice of cheese if desired for even more indulgence!

2 Tablespoons butter
1 small yellow onion (diced)
2 cloves garlic (minced)
¼ teaspoon dried rosemary
¼ teaspoon dried thyme
¼ teaspoon celery salt
¼ teaspoon black pepper
¼ teaspoon kosher salt
1 pinch cayenne (optional)
5 cups zucchini (cut into chunks)
3 cups chicken broth
1 Tablespoon soy sauce ((or Worcestershire sauce))
2 Russet potatoes (equal to 1 pound)
1/2 cup Half and Half (or heavy cream)
1 cup Cheddar Cheese

Steps:

  • Note: There is no need to peel the zucchini for this soup unless yours is jumbo sized, in which case it's possible that the skins are tough and slightly bitter.
  • Shred the cheese from a block for best results. Set aside to allow to come down to room temperature. This will allow it to melt and combine into the soup smoothly.
  • Melt butter in a soup pot over medium heat. Add onions, cook until softened, about 5 minutes. Add garlic and cook 1 more minute.
  • Add diced zucchini and seasonings: (1/4 tsp each of: dried rosemary, thyme, celery salt, kosher salt, pepper, and an optional pinch of cayenne.) Sauté for 5 minutes.
  • Peel and rinse the potatoes. Cut them into small pieces of equal size so that they cook evenly and quickly.
  • Add diced potatoes, chicken broth, and soy sauce. Bring to a boil, then reduce heat to medium. Skim up any brown foam from the top if needed.
  • Let simmer, partially covered, until the vegetables are very fork tender. About 20 minutes.
  • Remove from heat. Use an immersion blender or transfer to a blender in batches to blend until smooth.

2 teaspoons olive oil
1 cup chopped onion
2 cups chicken broth (or vegetable broth for vegan version)
1 cup water
2 cups coarsely shredded zucchini
1/4 cup snipped fresh dill
1/2 teaspoon poultry seasoning
2 cups lightly packed coarsely chopped escarole
1 tablespoon fresh lemon juice
1 teaspoon sugar
1/4 teaspoon ground black pepper
salt
1 tablespoon thinly sliced scallion top

Steps:

  • In a 2-qt saucepan, heat the oil over medium-high heat. Add the onion and cook, stirring, until slightly softened, about 2 minutes. Add the broth and water and bring to a boil;.
  • Add the zucchini, dill, and poultry seasoning and return to a boil. Reduce heat and simmer, uncovered, 5 minutes. Add the escarole through the salt. Simmer, uncovered, 5 minutes longer. Sprinkle with the scallion to serve.

3 ½ cups diced zucchini
½ cup chopped celery
1 cup diced carrots
½ cup diced onion
½ cup margarine
1 tablespoon all-purpose flour
1 ¾ cups milk
1 (10.75 ounce) can condensed cream of mushroom soup
1 ¼ cups water
2 cubes chicken bouillon
½ cup dry white wine
½ cup sour cream

Steps:

  • In a large stock pot saute zucchini, celery, carrots and onion in margarine, until done (approximately 20 minutes).
  • In a small mixing bowl combine flour and milk. Mix until smooth and then add to stock pot.
  • Cook soup until thickened and then puree in a blender or food processor until smooth and creamy.
  • Pour pureed soup back into stock pot and add cream of mushroom soup, water, bouillon cubes and sour cream. If desired also add white wine. Simmer until heated through and then serve.

1 cup chopped onion

4 cups diced tomatoes, undrained
4 cups diced zucchini
Grated Parmesan cheese, optional

Steps:

  • In a Dutch oven, brown sausage with onion; drain excess fat. Add the next eight ingredients; cover and simmer 1 hour. Stir in zucchini and simmer 10 minutes. Sprinkle with cheese if desired.
