3/4 cup lemon juice
1 teaspoon ground nutmeg
1/2 cup sugar
2 teaspoons ground cinnamon
TOPPING:
1-1/3 cups packed brown sugar
1 cup all-purpose flour
1 cup rolled oats
2/3 cup butter, softened
Whipped cream or ice cream, optional

Steps:

  • Place zucchini and lemon juice in a large saucepan. Cover and cook over medium heat, stirring occasionally, until zucchini is tender, about 15 minutes. Add nutmeg, sugar and cinnamon; blend until sugar dissolves. Remove from the heat. Pour into a greased 13x9-in. baking pan. , For topping, combine brown sugar, flour, oats and butter until crumbly. Sprinkle over zucchini. Bake at 375° for 50 minutes or until topping is golden brown. Serve warm with whipped cream or ice cream if desired.

Zucchini blossoms are a thing of wonder. They are great raw, in a salad, with a drizzle of good olive oil, but when they are coated in a crisp batter and stuffed with a light filling, they are an otherworldly experience. To get a good batter that isn't too thick or oily, ensure that your sparkling or soda water is very well carbonated and ice cold. Also take your time with the oil, testing it a few times to get the perfect temperature. Adjust the temperature as you go, making sure the flowers don't color too quickly.

1 tablespoon ground sumac
Boiling water
1/4 cup/50 grams ricotta
3 tablespoons/50 grams soft goat cheese
1 teaspoon finely chopped oregano leaves
2 tablespoons/10 grams chopped walnuts
1 lemon, finely grated to get 1 tablespoon zest, then cut into wedges
Flaky sea salt and black pepper
8 zucchini blossoms
About 1 1/2 cups/350 milliliters sunflower oil, for frying
Scant 1/2 cup/60 grams all-purpose flour (plain flour)
1/8 teaspoon baking soda (bicarbonate of soda)
1/3 cup plus 1 tablespoon/100 milliliters ice-cold sparkling or soda water

Steps:

  • In a medium bowl, cover 3/4 tablespoon of the sumac with 1 tablespoon of boiling water and leave to infuse for 5 minutes. Add both types of cheese, oregano, walnuts, lemon zest, 1/4 teaspoon salt and a generous grind of pepper. Mix well.
  • Fill the flowers by carefully opening them and either spooning or piping about a tablespoon of the ricotta mixture into each, gently pushing the filling all the way to the bottom of each blossom but being careful not to fill them too much; if you can get someone to hold the flower open for you, it would make it much easier. Gently twist the tips of the petals to secure the filling inside and set aside until you're ready to fry.
  • Pour enough oil into a medium (about 8-inch/20-centimeter) nonstick frying pan so that the oil rises about 1 inch/2 centimeters up the sides of the pan. Place on a high heat for 5 minutes and then turn the heat down a fraction.
  • Meanwhile, mix the flour and baking soda together in a medium bowl. Slowly pour in the sparkling water, whisking continuously to form a smooth batter.
  • When bubbles start to surface in the oil, test it by dropping some batter into the oil: if it sizzles, you are ready. (The oil should hover between 320 and 350 degrees Fahrenheit/160 and 180 degrees Celsius.)
  • Lower a zucchini blossom into the batter, turning to coat completely, before carefully placing in the hot oil. Repeat, cooking a few blossoms at a time, adjusting the temperature between batches so they take about 30 seconds on each side to turn a golden brown. Use a slotted spoon to transfer to a paper towel-lined plate and then sprinkle with salt and the remaining 1/4 tablespoon sumac. Serve at once with the lemon wedges alongside.

8 cups peeled seeded diced zucchini (about the size of canned pineapple chunks)
2/3 cup lemon juice
1 cup sugar
1 teaspoon ground cinnamon

4 cups all-purpose flour
2 cups sugar
1 1/2 cups cold butter
1 teaspoon ground cinnamon

Steps:

  • ZUCCHINI MIXTURE:.
  • In a large saucepan, over medium-low heat, cook zucchini and lemon juice for 15-20 minutes until zucchini is tender.
  • Add sugar, cinnamon and nutmeg and cook for a minute more.
  • Remove from heat and let sit.
  • CRUST MIXTURE:.
  • For crust, mix flour, and sugar in a large bowl.
  • Cut in cold butter until mixture resembles pea size coarse crumbs.
  • Stir 1/2 cup of the flour mixture into zucchini and mix well.
  • Press 1/2 of remaining crust mixture into a greased 15x10 jelly roll pan.
  • Spread zucchini mixture over crust in pan.
  • Crumble remaining crumb mix over zucchini and sprinkle with the 1 teaspoon cinnamon.
  • Bake at 375°F for 35-40 minutes.

1 head cauliflower, separated flowerets
2 green peppers, chopped
1 quart trimmed chopped green beans or 1 quart sliced peeled carrot
3 cloves garlic, halved
1/2 cup salt
6 cups sugar
5 1/2 cups vinegar
1/2 cup water
2 tablespoons mustard seeds
2 teaspoons celery seeds
2 teaspoons turmeric

Steps:

  • In a large mixing bowl or crock, combine all the vegetables, including the garlic.
  • Sprinkle them with the salt; stir and let the vegetables stand three hours.
  • Drain well.
  • Combine the sugar, vinegar, water and spices in a large preserving kettle and heat to boiling.
  • Stir in the vegetables and heat again to boiling.
  • Pack the vegetables into clean, hot pint jars to within 1/2-inch of each jar's top.

2 large eggs
1 cup unbleached all-purpose flour, or as needed

Garden Zucchini Tomato Sauce, recipe follows
Crisp Prosciutto, recipe follows
1/4 cup extra-virgin olive oil
1 Spanish onion, chopped in 1/4-inch dice
4 cloves garlic, peeled and thinly sliced
2 medium zucchini, thinly sliced
One 28-ounce can peeled whole tomatoes, finely chopped
1/4 cup fresh basil leaves, finely chopped
Salt
Olive oil, for brushing
6 slices thinly sliced prosciutto

Steps:

  • Place the ricotta in a fine sieve over a bowl. Cover with plastic wrap and refrigerate for at least 8 hours, or overnight.
  • In a medium bowl, beat the eggs, add the drained ricotta and stir together. Gently mix in the flour, 1 teaspoon salt, pepper and nutmeg until a soft dough forms. Add a little more of the flour if the dough is too sticky.
  • To form the gnocchi, dip 2 tablespoons in cool water. Using 1 spoon, scoop up a heaping tablespoon of the ricotta mixture and use the other spoon to form it into a smooth, pointed oval ball. Place the gnocchi on a lightly floured baking sheet.
  • Bring a large pot of salted water to a boil. Gently slip the gnocchi into the boiling water, stirring gently with a slotted spoon. Cook until the gnocchi rise to the surface, about 5 minutes. Scoop them out with the spoon.
  • Warm the Garden Zucchini Tomato Sauce in a medium saucepan. Add the gnocchi, tossing gently 1 minute to coat. Top with Crisp Prosciutto and serve immediately.
  • In a medium saucepan, heat the olive oil over medium heat. Add the onions and garlic and cook until soft and light golden brown, 8 to 10 minutes. Add the zucchini and tomatoes and bring to a boil. Lower the heat and simmer until the sauce thickens, about 30 minutes. Add the basil and season with salt.
  • Preheat the oven to 400 degrees F. Lightly brush a baking sheet with olive oil, and arrange the prosciutto in a single layer. Place in the oven and bake until crisp, 5 to 10 minutes. Remove from the oven and let cool on a wire rack.

1 medium zucchini or yellow squash, sliced 1/4 inch thick

6 tablespoons extra-virgin olive oil
4 garlic cloves, minced or mashed
One 14-ounce loaf rustic white bread, crusts removed and bread sliced 1/2 inch thick
1/2 cup torn basil leaves
3 medium tomatoes, sliced 1/2 inch thick
1 teaspoon thyme leaves

Steps:

  • 1. Preheat the oven to 400°. In a colander, toss the eggplant and zucchini with 1 teaspoon of kosher salt and let stand for 20 minutes. Drain well and gently squeeze out any excess liquid. 2. Meanwhile, in a small bowl, stir the olive oil with the garlic. Coat a 9-by-13-inch baking dish with 1 1/2 teaspoons of the garlic-infused oil. Tear the bread into 2-inch pieces and line the bottom of the baking dish with bread, fitting the pieces tightly together. Drizzle the bread with 2 tablespoons of the garlic oil and season with salt and pepper. Sprinkle the bread with half of the basil. 3. In a medium bowl, toss the eggplant and zucchini with 2 tablespoons of the garlic oil and season with salt and pepper. Sprinkle the tomato slices with salt and pepper. Arrange the eggplant, zucchini and tomatoes over the bread, overlapping them if necessary. Sprinkle with the thyme leaves, salt and pepper and drizzle with the remaining garlic oil. 4. Bake the gratin for about 40 minutes, until the vegetables begin to brown and the bottom of the bread is golden brown. Remove the vegetable gratin from the oven and let stand until cooled slightly, about 10 minutes. Sprinkle with the remaining basil, cut into pieces and serve. MAKE AHEAD The gratin can be baked up to 2 hours in advance. Reheat in a 350° oven or serve at room temperature.

RHUBARB-ZUCCHINI CRISP

1 tsp cinnamon, ground
2 1/2 c rhubarb, cut fine
2 1/2 c zucchini, washed, seeded, and cut into small chunks
2 Tbsp cornstarch
1 c sugar
1 c water
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. First, cut up the rhubarb and the zucchini and put them in a medium bowl for later. I left the peel on the zucchini. It added some color. Feel free to peel it if you choose.
  • 3. Mix the flour, oatmeal, butter, cinnamon, and brown sugar until crumbly. Press half of the crumb mixture into a greased 8x8 inch or 9x9 inch baking dish. Cover with the rhubarb and zucchini.
  • 4. Combine the cornstarch, sugar, water, and vanilla and place in a medium size sauce pan. Cook until thick and clear. Pour over the rhubarb and zucchini and top with the remaining half of the crumb mixture.
  • 5. Bake at 350 degrees for approximately 1 hour.

1/2 onion, peeled and sliced
1 tablespoon garlic, peeled and minced
1 tablespoon serrano chili, seeded and minced
2 tablespoons epazote, chopped
1 cup canned Huitlacoche, drained
1/2 cup whipping cream
1/2-3/4 cup goat cheese, crumbled
4 sheets phyllo dough (available frozen)
4 ounces butter, melted
6 tablespoons butter
1 tablespoon minced garlic
2 cups fresh squash blossoms or 1/2 cup canned squash blossoms
1 cup chicken stock
1/4 cup heavy cream
salt and pepper

Steps:

  • Pour oil into heavy skillet and saute the onions over medium heat until translucent and tender; add next three ingredients and continue to cook for another couple of minutes.
  • Add the huitlacoche and the heavy cream and cook to reduce the cream completely.
  • Take off of the burner; stir in the crumbled goat cheese, blending well until melted and allow to cool.
  • Spread out a sheet of phyllo dough and brush thoroughly with melted butter, using a pastry brush.
  • Repeat 3 times, stacking the sheets one on top of the other.
  • Preheat oven to 350F and butter a baking pan.
  • Spoon the huitlacoche filling on the phyllo sheets, lengthwise.
  • Seal the short ends and roll to form a strudel.
  • Place strudel on prepared pan and bake until golden brown, about 30 minutes.
  • While strudel is baking, saute the onions in 3 tablespoons of the butter over medium-high heat until soft.
  • Add the garlic and cook until soft.
  • Add the zucchini blossoms and cook until wilted.
  • Add the chicken stock and cook until volume is reduced by half.
  • Add the cream and reduce over medium heat for 5 minutes.
  • Transfer to a blender and blend thoroughly.
  • Add the remaining melted butter slowly until mixture is well blended.
  • Season to taste with salt and pepper.
  • Cut the strudel into slices about 2 x 2 pieces (or whatever size you wish) and garnish each with 2 tablespoons of zucchini blossom sauce.

Crisp Zucchini Blossoms Stuffed With Goat Cheese image

1 tablespoon Ground Sumac
1/4 cup Ricotta
3 tablespoons Soft Goat Cheese
1 teaspoon Oregano, Finely chopped
2 tablespoons Walnuts, Chopped
1 tablespoon Lemon, Zested then cut in wedges
8 pieces Zucchini Blossoms
1 1/2 cups Sunflower Oil
1/2 cup All Purpose Flower
1/4 teaspoon Baking Soda
1/3 cup Ice Cold Sparking or Soda Water

Steps:

  • In a medium bowl, cover 3/4 tablespoon of the sumac with 1 tablespoon of boiling water and leave to infuse for 5 minutes. Add both types of cheese, oregano, walnuts, lemon zest, 1/4 teaspoon salt and a generous grind of pepper. Mix well.
  • Fill the flowers by carefully opening them and either spooning or piping about a tablespoon of the ricotta mixture into each, gently pushing the filling all the way to the bottom of each blossom but being careful not to fill them too much; if you can get someone to hold the flower open for you, it would make it much easier. Gently twist the tips of the petals to secure the filling inside and set aside until you're ready to fry.
  • Pour enough oil into a medium (about 8-inch/20-centimeter) nonstick frying pan so that the oil rises about 1 inch/2 centimeters up the sides of the pan. Place on a high heat for 5 minutes and then turn the heat down a fraction.
  • Meanwhile, mix the flour and baking soda together in a medium bowl. Slowly pour in the sparkling water, whisking continuously to form a smooth batter.
  • When bubbles start to surface in the oil, test it by dropping some batter into the oil: if it sizzles, you are ready. (The oil should hover between 320 and 350 degrees Fahrenheit/160 and 180 degrees Celsius.)
  • Lower a zucchini blossom into the batter, turning to coat completely, before carefully placing in the hot oil. Repeat, cooking a few blossoms at a time, adjusting the temperature between batches so they take about 30 seconds on each side to turn a golden brown. Use a slotted spoon to transfer to a paper towel-lined plate and then sprinkle with salt and the remaining 1/4 tablespoon sumac. Serve at once with the lemon wedges alongside.

CRUST AND TOPPING
4 c flour
1 1/2 c sugar
1/4 tsp salt
2 1/2 c butter, melted - she used margarine
1/2 tsp cinnamon - i use 1 tsp
FILLING
8 c peeled and sliced zucchini , if large seeds - remove...
2/3 c lemon juice
1 1/2 c sugar
1 tsp cinnamon
1/3 c chopped pecans - my addition

Steps:

  • 1. Preheat oven to 350 degree F. In a large bowl, mix all crust ingredients, until crumbly. In a 9 x 13 baking dish, place 1/2 the crumb mixture into dish and pat down evenly. Bake for 10 minutes.
  • 2. Cool on rack. Make filling. In a large saucepan, place zucchini, lemon juice, sugar and cinnamon. Bring to a boil, then reduce to simmer and cook until tender. ( I slice my zucchini thin, so the cooking only take about 8 - 10 minutes, you don't want the filling mushy.)
  • 3. Once zucchini is tender add 1/2 - 3/4 cup of topping to thicken. Cook another minute or two, until thickened.
  • 4. Remove from heat and spread on the crust.
  • 5. Sprinkle the top with the remainder of crumb mixture. Place back in oven and bake for 25 - 30 minutes or until topping begins to brown and filling is bubbly.
  • 6. Can serve warm with ice cream if desired. Delicious!

3/4 teaspoon cinnamon, plus

1/2 teaspoon nutmeg
2/3 cup lemon juice
3 cups flour
1 cup sugar
1 cup butter, soften
1/2 teaspoon salt

Steps:

  • Cut zucchini in half lengthwise. remove seeds and peel. cut zucchini halves into slices like an apple. in large pot, simmer sliced zucchini in lemon juice until tender.
  • combine crust ingredients in large bowl, mix till crumbly.
  • add sugar, 3/4 teaspoon cinnamon, and nutmeg to tender zucchini mixture. stir. then add 1/2 cup of the "crust mixture." continue to simmer till thick. let cool.
  • pat 1/2 of the crust mixture into a lightly greased 13 x 9 pan. bake at 350 for 10 minutes.
  • spread the zucchini mixture over the crust. add remaining 1 1/2 teaspoon of cinnamon to remaining crust mixture, and sprinkle this over the zucchini mixture.
  • bake at 350 for 40 minutes.

5 tbs olive oil
8 thin slices prosciutto, cut into strips
1 medium yellow onion thinly sliced
2 small zucchini cut into 1 1/2 cubes
2 ears of sweet corn or 1 cup of frozen corn
1/2 cup of freshly grated Pecorino Romano
3 tbs chopped mint
1 pound of penne
2 tsps sherry vinegar
fresh ground pepper

Steps:

  • Cook the past according to package direction. Reserve 1/2 cup cup of the pasta water. Saute the prosciutto, place on a plate Add 1 tbs of oil to the skillet over medium heat add onion and salt and pepper. Cook until brown and tender. If the onion starts to burn add some water to the skillet. Add corn, zucchini add salt and toss until soft and tender - remove from heat and stir in half the cheese. Add pasta, 2 tbs oil, vinegar, and black pepper to the skillet with zucchini and corn. Stir over heat for 1 minute. Add the reserved water and stir. Sprinkle with prosciutto and cheese.
