Zapple Pie - Zucchini Apple Pie - Mock

This mock apple pie is made with overgrown zucchini or summer squash. It's so close to the real deal that your family may not believe you when you tell them it's zucchini.

Number Of Ingredients 13

2 cups all-purpose flour
1 teaspoon salt
2/3 cup butter or lard
6-7 tablespoons cold water
6 cups peeled, quartered, cored and thinly sliced zucchini or summer squash
1/2 cup lemon juice
1/2 cup granulated sugar
1/4 cup light or dark brown sugar
1 1/2 teaspoons ground cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon ground nutmeg
2 tablespoons instant tapioca
1 tablespoon granulated sugar, reserved until end of baking

Steps:

  • Prepare pie dough by mixing together flour and salt. Cut in fat using a food processor or pie blender until mixture resembles course crumbs. Gently sprinkle water over flour mixture and stir together until dough holds shape. Do not overmix. Flatten into two disks and refrigerate.
  • If you haven't already done so, fillet your zucchini. Slices should be about 1/8 - 1/4 inch thick.
  • Combine the zucchini and lemon juice in a medium saucepan. Bring to a boil. Reduce the heat and cook, stirring occasionally, until the zucchini starts to soften, about 5 minutes.
  • Add the sugar, cinnamon, ginger and nutmeg and simmer for 5 minutes longer.
  • Remove zucchini from heat. Stir in tapioca and let stand for 15 minutes.
  • Preheat oven to 425°F and place a rack in the lower third of the oven.
  • While zucchini is resting, roll out pie crust. I prefer to roll out my pie crust on lightly floured wax paper so it is easier to move around. Place bottom crust in 9 inch pie plate. Cut small slits in top crust for steam to escape (or wait to cut slits until after the crust is on the pie).
  • Spoon zucchini filling into bottom crust. Place top crust and crimp edges. If you didn't cut slits earlier, cut them now.
  • Place pie on rack in lower third of oven. Use pie drip pan and pie crust shield if desired. Bake for 20 minutes.
  • Reduce heat to 350°F and bake for 30 minutes more. Sprinkle top of pie with reserved sugar. Bake for 10 to 15 minutes, more, until crust is golden and the juices are bubbling through the slits.
  • Remove pie from oven and cool on wire rack.

I created this recipe from zucchini cobbler filling. I wanted it as close to apple pie filling as I could get and after several botched attempts I struck pay-dirt! My friends are amazed, they can't believe it's zucchini!

24 c about 24 cups of peeled, seeded, and sliced zucchini
2 c lemon juice
2 3/4 c white sugar
1 1/2 c brown sugar, firmly packed
4 1/2 tsp cream of tartar
2 Tbsp cinnamon
3/4 tsp nutmeg
3/4 tsp caradom
3/4 tsp ground cloves
3/4 tsp allspice
3/4 tsp ginger
1 Tbsp vanilla

Steps:

  • 1. Wash and peel zucchini. Cut in half, scoop out seeds (a melon baller works great for this or a large metal serving spoon) and then cut into slices about 1/4 inch thick. I try to make them look like apple slices.
  • 2. Place zucchini into a pot, add the lemon juice and bring to a boil, then simmer and cook for 15 - 20 minutes. I like them a greenish color, not quite transparent though.
  • 3. Add remaining ingredients. Tip: While the zucchini is simmering combine the remaining ingredients in a bowl.
  • 4. Cook for about 3 - 5 minutes, or til thickish looking.
  • 5. I updated this recipe to reflect the new guidelines regarding canning of squash which is not deemed safe. I would freeze this as you would apple pie filling.
  • 6. Use as you would homemade apple pie filling.

BREAD RECIPE
1/2 c butter shortening
1 c dark brown sugar
1/3 c buttermilk
1 tsp baking powder
1/2 tsp baking soda
2 large eggs
1 Tbsp vanilla
1 Tbsp vanilla powder
2 c all-purpose flour
1 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1 winesap apple, shredded
1 granny smith apple, shredded
1 medium zucchini, shredded
CRUMBLE TOPPING RECIPE
1/2 c oats
1/2 c dark brown sugar
1/2 c all-purpose flour
5 Tbsp cold butter
1 tsp cinnamon
1 tsp nutmeg
1 tsp allspice

Steps:

  • 1. Preheat oven to 350F degrees. Shred apples and zucchini leaving the skins on. Set aside.
  • 2. Using 2 8" bread loaf pans, place foil in center overlapping the sides for more ease to lift out the bread. Grease with non-stick spray.
  • 3. Mix wet ingredients and spices together using an electric mixer on low-med speed.
  • 4. On low speed, slowly add dry ingredients.
  • 5. Then add apples and zucchini and mix until combined.
  • 6. Optional: Add 1/2 cup of your favorite nuts to the batter for a yummy crunch! My favorites are pistachios :)
  • 7. Split the batter between the two loaf pans.
  • 8. Add crumble ingredients to a bowl.
  • 9. Cut cold butter into the ingredients until crumbles form.
  • 10. Split crumble mixture between the two loaf pans pressing the crumbles slightly into the batter.
  • 11. Bake for 60 minutes. Cool 20 minutes before removing from loaf pan.
  • 12. Cool completely before cutting into and serving. Enjoy!

6 -8 cups zucchini (peel, cut lengthwise, remove seeds, slice 1/4-inch thick)
3/4 cup granulated sugar
1/2 cup brown sugar
2 teaspoons cinnamon
1/4 teaspoon fresh grated nutmeg

1 1/2 teaspoons cream of tartar
2 tablespoons cornstarch or 2 tablespoons flour

1 tablespoon butter
2 ready pie crusts, Pillsbury
1/2 teaspoon sugar, for topping the crust

Steps:

  • Preheat oven to 425 degrees.
  • Cook zucchini slices in boiling water until barely tender, about 2 minutes.
  • Remove from stove and drain very well and cool.Remove as much moisture as you can with paper towels.
  • In a bowl, toss zucchini with sugars, cinnamon, nutmeg, cardamom, cream of tartar, cornstarch or flour, and salt until well coated.
  • Place lightly floured pastry in a 9-inch, pan.
  • Fill with zucchini mixture.
  • Dot with butter, drizzle with vinegar.
  • Top with crust.
  • Brush top crust lightly with water and sprinkle crust with sugar.
  • Bake for 15 minutes at 425.
  • Reduce heat to 350 and bake about 45 minutes.
  • Serve hot with a scoop of vanilla ice cream.
  • Or serve chilled.
