Ziti con Broccoli di Rape e Salsicce (Ziti with Broccoli di Rabe and Sausage) image

1/2 pound sweet Italian sausage
2 pounds broccoli di rape
3 tablespoons coarse salt
1 pound ziti
1/4 cup olive oil
3 large cloves garlic, crushed
1/4 teaspoon salt
1/4 teaspoon hot pepper flakes
2 teaspoons unsalted butter
1 cup chicken stock
1/2 cup grated Parmigiano cheese

Steps:

  • Grill or broil the sausage in advance. When cooled, slice it thin and set aside. Wash and drain the broccoli di rape and set it aside. In a large pot, put 10 quarts water on to boil, with 3 tablespoons coarse salt added, and immediately start preparing the sauce. Add the ziti to the pot when the water boils and cook until al dente. In a large, deep, heavy skillet with a fitted lid, heat the olive oil, add the garlic, and saute, uncovered, until golden, about 2 minutes. Add the broccoli di rape, 1/4 teaspoon salt, and pepper flakes, cover, and stream 5 minutes, stirring occasionally. Stir in the sausage. Add the butter and chicken stock, and cook over high heat, uncovered, about 3 minutes, until the liquids are slightly reduced. Add the drained pasta to the sauce and toss gently. Sprinkle on 1/2 of the cheese, toss again, serve immediately, and distribute the remaining cheese over the pasta.

Salsiccia Con Cima Di Rapa: Sausage with Broccoli Rabe image

Large bunch of rapini or broccoli rabe, cleaned and cut in half
Salt
5 tablespoons extra-virgin olive oil
3 cloves garlic, crushed
Whole chilies
8 (3-ounce) pork sausage links

Steps:

  • Cook the rapini in boiling salted water for 2 to 3 minutes. Drain.
  • In a saucepan, heat 4 tablespoons of extra-virgin olive oil. Add the garlic and chili peppers, and cook until the garlic is golden brown. Add the rapini to the saucepan, and saute for a few minutes. Season with salt to taste.
  • In another saucepan, heat 1 tablespoon of olive oil, and add the sausages. Cook the sausage for a few minutes, turning frequently, before piercing with a knife in order to release some of the fat. If the sausages are sticking to the pan, add a few tablespoons of water instead of adding more oil. Continue cooking until the sausages are golden brown and fully cooked.
  • Add the cooked sausages to the rapini, and cook together for a few minutes. Transfer the mixture to a warm plate and serve hot.

PIZZA WITH BROCOLI RABE AND SAUSAGE

2 pounds broccoli rabe
2 pounds hot or mild sausage
1/2 cup olive oil
2 tablespoons chopped garlic
1/2 teaspoons crushed red flakes
2 1/4 cups grated Romano cheese
2 1/4 cups grated fontina cheese
Kosher salt, to taste
1 recipe Pizza Crust, divided into six pieces (recipe follows)
11 ounces lukewarm water
1 teaspoon fresh yeast
1 tablespoon molasses
2 1/2 teaspoon kosher salt
2 1/2 tablespoons olive oil
3 1/2 cups all-purpose flour
1/3 cup whole wheat flour

Steps:

  • In a large pot of boiling water, blanch the broccoli rabe over high heat for about 4 minutes. Using tongs or a slotted spoon lift from the water and set aside to cool. When cool, chop coarsely. Bring the water back to a boil and cook the sausage for about 15 minutes, until cooked through. Using tongs or a slotted spoon, remove the sausage from the water and immediately plunge in cold water to stop the cooking. When cool, remove the meat from the casing and crumble. (You should have 6 cups of sausage.) In a large saute pan, over medium-high heat, heat the olive oil and cook the garlic for about 30 seconds, until browned. Add the broccoli rabe and red pepper flakes to the pan and season to taste with salt. Cook for 6 to 7 minutes, until very tender. In a bowl, mix together the Romano and fontina cheeses. Spread about 3/4 cup of the Romano-fontina mixture over each Pizza Crust, top each with equal amounts of broccoli rabe and sausage and then slide them back to the edge of the hot section of the grill. Rotate them for every 3 to 4 minutes until the bottoms are evenly golden brown. Cut the pizzas and serve.
  • Mix the water, yeast, and molasses in the bowl of a stand mixer fitted with a dough hook. Let this stand for 12 minutes to activate the yeast (the water will foam slightly.) Add the salt and oil to the bowl and mix well. With mixer on low speed add the all-purpose flour and the whole wheat flour to the bowl and mix until all the flour is absorbed and the dough pulls away from the side of the bowl. Remove the dough from the bowl and cut the dough into 6 (5 1/2 ounce) portions. Roll the portioned dough into balls and place on an oiled baking pan. Brush the ball lightly with olive oil and cover with plastic wrap. If you are going to use the dough right away let the dough sit at room temperature for 30 minutes before using. You can store the dough after portioning for 1 day in the refrigerator, but you must let sit at room temperature for 1 hour before using.

ORECCHIETTE WITH BROCCOLI AND SAUSAGE



Orecchiette with Broccoli and Sausage image

1/4 cup Flavored Olive Oil
4 garlic cloves, peeled and chopped
1 pound Italian sausage, a mix of hot and sweet according to your taste, cut into bite size pieces
Salt and pepper to taste
1 pound broccoli rabe, cooked (reserve 1 cup of cooking water)
1 pound orecchiette
Freshly grated Pecorino Romano cheese

Steps:

  • Heat oil and stir in garlic in a large saute pan over medium heat. Add the sausages and saute until meat is cooked and loses its raw look. Salt and pepper to taste, and saute one minute. Add the rabe water. Raise heat and cook until sauce is hot. Meanwhile, cook orecchiette in rapidly boiling salted water until al dente. Drain orecchiette. Return drained orecchiette to the pot. Place over mediumhigh heat and stir in 3/4 cup of broccoli rabe and sausage sauce. Using a wooden spoon, toss together for 1 minute. Remove from heat and pour into a large serving platter or bowl. Spoon remaining sauce over the top. Sprinkle with Pecorino Romano cheese.
