ZIPPY BARBECUE SAUCE

I make this in huge batches and made the mistake giving out jars of it to friends. Now I can't keep enough of it around.

½ cup ketchup
½ cup water
2 tablespoons molasses
2 tablespoons Worcestershire sauce
1 tablespoon white wine vinegar
1 tablespoon Dijon mustard
1 tablespoon light brown sugar
½ teaspoon kosher salt
¼ teaspoon hot pepper sauce (such as Tabasco®)
¼ teaspoon granulated garlic
¼ teaspoon freshly ground black pepper

Steps:

  • Whisk the ketchup, water, molasses, Worcestershire sauce, white wine vinegar, Dijon mustard, brown sugar, salt, hot pepper sauce, granulated garlic, and black pepper together in a small heavy-bottomed saucepan and place over medium heat. Bring to a boil, reduce heat to low, and continue cooking at a simmer, stirring together, another 10 minutes. Remove from heat and allow to cool completely. Pour into a glass jar and store uncovered in the refrigerator for 8 hours or overnight. This allows the flavors to blend and reduce any sharpness from the vinegar.

This thick and hearty sauce goes a long way to fill my hungry family. They enjoy any leftovers ladled over thick slices of grilled garlic bread. To make sure I have the ingredients on hand, I keep a bag of chopped green pepper in my freezer and minced garlic in my fridge-always! -Elaine Priest, Dover, Pennsylvania

2 pounds ground beef
1 cup chopped onion
1/2 cup chopped green pepper
2 cans (15 ounces each) tomato sauce
1 can (28 ounces) diced tomatoes, undrained
1 can (12 ounces) tomato paste
1/2 pound sliced fresh mushrooms
1 cup grated Parmesan cheese
1/2 to 3/4 cup dry red wine or beef broth
1/2 cup sliced pimiento-stuffed olives
1/4 cup dried parsley flakes
1 to 2 tablespoons dried oregano
2 teaspoons Italian seasoning
2 teaspoons minced garlic
1 teaspoon salt
1 teaspoon pepper
Hot cooked spaghetti

Steps:

  • In a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. , Transfer to a 5-qt. slow cooker. Stir in the tomato sauce, tomatoes, tomato paste, mushrooms, cheese, wine, olives, parsley, oregano, Italian seasoning, garlic, salt and pepper. Cover and cook on low for 6-8 hours. Serve with spaghetti.

1 tablespoon extra virgin olive oil
3 red onions
2 (10 ounce) jars roasted red peppers
10 roma tomatoes
2 jalapeno peppers, seeded
1 tablespoon splenda brown sugar substitute
1 tablespoon Italian salad dressing mix
1/4 tablespoon nu salt salt substitute
1/4 teaspoon pepper
3 garlic cloves
1/2 cup cabernet sauvignon wine
1 tablespoon sugar
2 fresh basil, springs
1 fresh thyme sprig
1 small carrot
2 stalks celery
2 curly parsley sprigs
1 tablespoon dried rosemary
2 teaspoons tomato paste
1/2 cup sun-dried tomato
1/4 cup beef stock

Steps:

  • Put all veggies and herbs in food Processor and coarse chop.
  • add into a large stock pot and add everything else.
  • Mix and simmer, covered for 3-4 hours, stirring often.
  • Put excess sauce into Mason jars and freeze.

This is the famous zip sauce that goes with steak served locally in Detroit. It really brings out the best in beef, and adds a spicy punch to the flavor.

¼ cup butter
1 teaspoon dried rosemary, crushed
¼ teaspoon dried thyme, crushed
¼ teaspoon garlic powder
1 teaspoon dried parsley
1 teaspoon salt
1 tablespoon Dijon mustard
½ teaspoon coarsely ground black pepper
1 ½ tablespoons Worcestershire sauce
¼ teaspoon ground cumin
⅛ teaspoon cayenne pepper
⅓ cup beef drippings

Steps:

  • Melt butter in a small saucepan over medium heat. Stir in the rosemary, thyme, garlic powder, parsley flakes and salt. Mix in the mustard, black pepper, Worcestershire sauce, cumin, and cayenne pepper. Warm gently for about a minute. Mix equal parts of the sauce with beef steak drippings to complete the sauce just before serving.

This is a spicy sweet tomato chow chow that we make in the summertime with our home grown tomatoes. This goes well as a side to peas and other vegetables and also poured over a block of cream cheese as a spread with crackers.

12 cups tomatoes
2 large onions
3 green bell peppers (seeds removed)
5 hot peppers (the seeds and white membranes add heat, your choice to use or remove)
2 cups white vinegar
2 tablespoons salt
1 1/2 cups sugar

Steps:

  • Process all vegetables in a food processor to desired consistency. We like ours to be a bit chunky like salsa.
  • Bring vinegar, salt and sugar to a boil on the stove to dissolve ingredients.
  • Combine everything in a large stock pot.
  • Bring to a boil and then simmer uncovered for 2 hours.
  • Can in pint jars or enjoy immediately.
