1 can (4-1/4 ounces) chopped ripe olives, drained
1/3 cup thinly sliced green onions

  • In a large bowl, beat cream cheese until smooth; stir in the olives and onions. Spread over ham slices. Roll up, jelly-roll style, starting with a short side. Chill for at least 1 hour. Just before serving, cut into 1-in. pieces.

3 tablespoons bacon drippings
2 (8 ounce) packages cream cheese, softened
1 tomato, finely diced
4 green onions, minced
1 tablespoon prepared pesto sauce
10 (10 inch) flour tortillas
1 pound thinly sliced smoked turkey

Steps:

  • Arrange bacon slices in a microwave save baking dish, side by side. Cover dish with a paper towel. Microwave on high until bacon is soft and lightly browned, 4 to 6 minutes. Chop bacon into small pieces; reserve 3 tablespoons bacon drippings.
  • Combine the chopped bacon, reserved bacon drippings, cream cheese, tomato, green onions, and pesto in a large bowl; mix well. Evenly spread the cream cheese mixture on the tortillas; top each with a slice of turkey. Roll tortillas up tightly, and cut into 1/4 inch slices. Discard rounded ends.

1 pkg (8 oz) cream cheese, softened
2 Tbsp dijon mustard
3 green onions, chopped
6 (8 in.) flour tortillas
12-18 large spinach leaves, stems removed
1 jar(s) (12 oz) whole roasted red bell peppers, drained and patted dry
3/4 lb thinly sliced deli ham

Steps:

  • 1. In a small bowl, combine cream cheese and mustard. Add green onion; mix well. Spread about 1/4 cup cream cheese mixture, onto each tortilla, to within 1/2 inch of edge.
  • 2. Cover each tortilla with 2-3 spinach leaves, pressing lightly, into cream cheese mixture, top with 1-2 bell peppers and 2 ham slices, keeping layers as flat as possible.
  • 3. Roll up tightly, in jelly-roll fashion; wrap each securely, in parchment paper or plastic wrap. Refrigerate, seam side down, at least 1 hour.
  • 4. Remove wrapping; discard. Cut each roll crosswise, into 1 inch slices. Serve on lettuce-lined platter, if desired. Makes about 48 appetizers.

2 (8 ounce) packages shredded Cheddar cheese
1 bunch green onions

Steps:

  • In a medium microwave safe bowl, mix cream cheese and Cheddar cheese. Microwave on high heat approximately 45 seconds, stirring frequently until melted and smooth.
  • Lay ham slices flat, and spread with cheese mixture. Place one green onion parallel to one edge of each ham slice. Tightly roll the ham slices into thin logs around the green onions.
