1 pound ground beef
1 medium green pepper, chopped
1 medium onion, chopped
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
6 French rolls
6 slices provolone cheese
Mayonnaise, optional

Steps:

  • Preheat broiler. In a large skillet, cook and crumble beef with pepper and onion over medium-high heat until no longer pink, 5-7 minutes; drain. Stir in seasonings., Cut rolls horizontally in half. Place bottoms on a baking sheet; broil 3-4 in. from heat until toasted, about 30 seconds. Top with beef mixture, then with cheese. Broil until cheese is melted, 45-60 seconds., Place roll tops on a baking sheet; broil 3-4 in. from heat until toasted, about 30 seconds. If desired, spread with mayonnaise. Close sandwiches. Freeze option: Freeze cooled beef mixture in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, stirring occasionally. Prepare sandwiches as directed.

1 pound lean ground beef
½ red bell pepper, thinly sliced
½ green bell pepper, thinly sliced
½ yellow onion, thinly sliced
1 clove garlic, minced
1 cup cold water
1 tablespoon cornstarch
2 teaspoons beef bouillon granules
1 teaspoon Worcestershire sauce
salt and ground black pepper to taste
¾ cup shredded mozzarella cheese
4 whole wheat hamburger buns, split

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add bell peppers, onion, and garlic; saute until beginning to tenderize, about 5 minutes more.
  • Stir water, cornstarch, bouillon, and Worcestershire sauce together in a bowl. Add to beef mixture in skillet. Cover with a lid and reduce heat to low. Simmer until sauce thickens and veggies are tender, 7 to 10 minutes. Season with salt and pepper. Add mozzarella cheese; cover until melted, about 2 minutes. Stir to combine.
  • Serve beef mixture on buns, Sloppy Joe-style.

1 tablespoon olive oil
1 pound ground beef
1 tablespoon Worcestershire sauce
1 teaspoon granulated garlic or garlic powder
Kosher salt and freshly cracked black pepper
1 yellow onion, diced
1/2 green bell pepper, roughly diced
1/2 red bell pepper, roughly diced
2 tablespoons unsalted butter
1 cup beef stock
5 ounces provolone cheese (7 to 8 slices)
4 to 6 potato hamburger buns, buttered and toasted
Pickled banana peppers, for serving
Sweet potato fries, for serving

Steps:

  • Heat the oil in a large skillet with a lid over medium-high heat. Add the ground beef and break it up with the back of a wooden spoon. Sprinkle the Worcestershire, granulated garlic, 1/2 teaspoon salt and some pepper over the beef. Cook, stirring and breaking the beef up frequently, until it is no longer pink and develops a deep brown crust, about 6 minutes. Add the onion and bell peppers. Add the butter and cook, stirring frequently, until the onions and peppers are softened and browning on the edges, about 5 minutes. There should also be browning forming on the bottom of the skillet. Pour the stock into the skillet, a little at a time, scraping up any browned bits. Bring everything to a simmer, reduce the heat to medium, cover and cook until the sauce reduces and thickens slightly, 6 to 8 minutes.
  • Turn off the heat and lay the cheese slices directly onto the beef mixture in a single layer. Cover and let the cheese melt completely, about 1 minute. Stir the cheese to slightly incorporate. Scoop the meat and cheese onto the buns and top with banana peppers. Serve with fries.
