My son had the idea for these one fall Saturday morning after we had gone apple picking. They are delicious! Great for school lunches, too.

1 cup all-purpose flour
1 cup white whole wheat flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
2 tablespoons unsalted butter
¾ cup natural creamy peanut butter
⅔ cup brown sugar
¾ cup milk, or more as needed
1 egg, beaten
1 teaspoon vanilla extract
1 cup peeled and diced apple
1 cup peanut butter chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with paper liners.
  • Mix flours, baking powder, baking soda, and salt in a large bowl.
  • Melt butter in a small saucepan. Stir in peanut butter and brown sugar. Remove from heat and add milk, egg, and vanilla extract. Add butter mixture to the flour mixture, mixing until just blended. Add more milk, 1 tablespoon at a time, if the batter seems dry.
  • Add apple and peanut butter chips, stirring gently to distribute. Divide the batter evenly among the muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes.

1 ¼ cups all-purpose flour
¾ cup rolled oats
¾ cup brown sugar
1 tablespoon baking powder
½ teaspoon salt
1 ¼ cups milk
¼ cup peanut butter
1 egg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix flour, oats, brown sugar, baking powder, and salt in a large bowl. Beat milk, peanut butter, and eggs in another bowl; stir into oat mixture, mixing until batter is well blended. Spoon batter evenly into 12 muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 15 to 18 minutes.

I teach quick-bread making for 4-H, and I'm always on the lookout for good new recipes. My sister-in-law shared this recipe with me for a slightly different kind of muffin. With apples and coconut, they are moist, chewy and tasty. -Gloria Kaufmann, Orrville, Ohio

Yield 1-1/2 dozen.

Number Of Ingredients 12

1-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon baking soda
2 eggs
3/4 cup sugar
1/3 cup canola oil
3 tablespoons milk
1-1/2 cups diced peeled apples
1 cup chopped walnuts
3/4 cup sweetened shredded coconut

Steps:

  • In a large bowl, combine the flour, baking powder, salt, nutmeg and baking soda. In another bowl, beat eggs, sugar, oil and milk. Stir in apples, nuts and coconut. Stir into dry ingredients just until moistened. , Fill 18 greased muffin cups three-fourths full. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool in pan 10 minutes before removing to a wire rack.
