4 cups day-old bread, cut in cubes
3/4 cup fat free egg substitute
1/2 cup sugar
1 cup 1% low-fat milk
1 teaspoon vanilla extract
1 (20 ounce) can pineapple tidbits in juice
1 tablespoon butter, melted

Steps:

  • Coat a medium-size casserole dish with nonstick spray.
  • Place the bread cubes in the casserole dish and set aside.
  • In a medium-size bowl, mix together the egg substitute, sugar, milk, and vanilla.
  • Add the pineapple and juice and mix thoroughly.
  • Pour over the bread cubes in the casserole dish.
  • Cover and place in refrigerator for at least two hours-- or overnight.
  • When ready to bake, preheat oven to 325 degrees.
  • Uncover the casserole dish and pour the melted butter evenly over the top.
  • Bake for about 50 minutes or until the top is lightly browned.
  • Serve warm.
  • Refrigerate leftovers.

4 cups bread, cubes
2 cups skim milk, hot
2/3 cup brown sugar (try SugarTwin Brown)
1/2 cup raisins
2 apples, sliced thin
1/2 teaspoon cinnamon
1 teaspoon vanilla
3 egg whites (Just Whites or Egg Beaters)

Steps:

  • Preheat oven to 350 degrees F.
  • Spray 1-1/2 quart baking dish with cooking spray.
  • Combine bread, raisins and apples in a large bowl.
  • Add milk and sugar; mix well.
  • Pour mixture into baking dish.
  • Let stand for 20 to 30 minute.
  • Beat egg whites until foamy.
  • Add vanilla and cinnamon to egg whites, mix well.
  • Pour egg mixture over bread in baking pan.
  • Bake uncovered for 45 minutes to 1 hour until set and lightly browned.

1 (20 ounce) can crushed unsweetened pineapple, , with juice
1 cup packed light brown sugar
4 eggs, beaten
2 teaspoons fresh lemon juice
1/2 teaspoon grated fresh nutmeg
6 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 325 and grease a 2-quart soufflĂ© dish.
  • In a large bowl, combine bread and pineapple and place in soufflĂ© dish.
  • Using the same bowl, mix together brown sugar, eggs, lemon juice, nutmeg and butter, and pour over bread mixture.
  • Bake until puffed and golden, about 40 minutes.

6 slices day-old bread (better if low in fat)
1 tablespoon oil (can use butter or margarine)
1/2 cup raisins (optional)
8 egg whites
2 cups low-fat milk
1/2 cup white sugar (or sweetner)
1 teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Break bread into small pieces into an 8 inch square baking pan.
  • Drizzle melted oil over bread.
  • If desired, sprinkle with raisins.
  • In a medium mixing bowl, combine egg whites, milk, sugar, cinnamon, and vanilla Beat until slighty foamy.
  • Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
  • Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.

butter, softened
granulated sugar
4 slices good quality firm white bread
2 tablespoons dark rum
2 tablespoons firmly packed dark brown sugar
1/4 teaspoon ground cinnamon
1 pinch grated nutmeg
2 teaspoons lemon juice
1 cup cubed ripe pineapple
1 tablespoon butter, melted and cooled
unsweetened whipped cream or vanilla ice cream

Steps:

  • Preheat the oven to 375 degrees.
  • Generously butter two 8-ounce ovenproof glass pudding dishes and sprinkle the bottom of the dishes lightly with granulated sugar.
  • Butter the bread on both sides and then cut into cubes.
  • Using half the bread cubes, place a single layer in the bottom of each dish.
  • In a medium bowl, combine the rum, brown sugar, spices, and lemon juice.
  • Add the pineapple and melted butter and toss well to coat.
  • Layer half the pineapple mixture into the dishes, followed by the remaining bread cubes and then the remaining pineapple.
  • Sprinkle lightly with additional granulated sugar.
  • Place the dishes in a shallow baking pan and pour hot water into the pan about halfway up the side of the dishes.
  • Place the pan in the oven and bake about 30 minutes or until the puddings are nicely browned.
  • Serve warm with dabs of whipped cream or vanilla ice cream.
