  • Whisk tomato paste, melted butter, garlic powder, paprika, mayonnaise, sugar, cayenne pepper, and water together until smooth. Cover and refrigerate overnight.

YUMM SAUCE:
1/2 cup water
1/2 cup fresh lemon juice
1/2 cup grape seed or canola oil
1/2 cup almond meal or finely chopped almonds
1/3 cup nutritional yeast
1/2 cup cooked garbanzo beans
1/4 cup cooked soybeans or 1/3 cup tofu
1 to 2 garlic cloves, minced or pressed
1/2 teaspoon salt
1 1/2 teaspoons curry powder
1 teaspoon dried oregano
1 teaspoon dried cilantro
ASSEMBLY:
Brown rice, cooked
Black beans, cooked
Shredded cheddar cheese
Salsa
Diced fresh tomato
Sliced fresh avocado
Sliced black olives
Sour cream
Fresh cilantro sprigs

Steps:

  • YUMM SAUCE: In a small measuring cup, mix together the water and lemon juice. In a separate small measuring cup, measure out the appropriate amount of oil. Set both aside. In a blender or food processor, process the almonds, nutritional yeast, garbanzo beans, soybeans or tofu, garlic, salt, curry, oregano, and cilantro together until almost fully ground, about 15 seconds. Scrape down the bowl with a rubber spatula. With the machine running, add lemon juice-water mixture in steady stream through feed tube. Scrape down bowl and continue to process for 1 minute. With the machine running, add the oil mixture in a steady stream through feed tube; continue to process until the sauce is smooth and creamy, about 15 seconds, scraping down bowl as needed. Transfer the sauce to a clean bottle or jar, cover, and refrigerate overnight to allow the flavors to blend. ASSEMBLY: Place a scoop of brown rice in an individual-sized serving bowl, then layer a scoop of black beans over the rice. Drizzle the rice and beans with a desired amount of Yumm Sauce, then sprinkle shredded cheddar cheese over the rice. Spoon a dollop of salsa in the middle of the bowl, then spoon the tomato, avocado, and olives around the perimeter. Place a dollop of sour cream in the center of the bowl, garnish with some cilantro sprigs, and serve. Cook's Notes: Careful not to go too overboard with the Yumm Sauce! This is as close as it gets to Café Yumm's® original Yumm Sauce®. I have eaten many yummy bowls over the years and I've tried to dissect the flavors of the sauce and come up with a recipe that's close, and here it is. This sauce is egg free, dairy free, gluten free and sugar free. If you have nut allergies I suggest you stay away, sorry. This sauce is great with rice and beans, pasta, a topping for chili and basting for chicken on the grill. Use your imagination, it tastes darn good with almost everything...enjoy.

1/2 cup canola oil (preferably cold pressed)
1/2 cup almonds (for a creamier sauce, use almond flour)
1/3 cup nutritional yeast (available at Whole Foods grocery stores)
1/2 cup chickpeas or 1/2 cup garbanzo beans, cooked
1/4 cup soybeans, cooked (not green edamame beans)
1/2 cup filtered water (important for flavor)
1/2 cup lemon juice (fresh is best)
1 -2 garlic clove (small to medium size)
1/2 teaspoon salt
1 1/2 teaspoons curry powder
1 teaspoon dried oregano
1 teaspoon dried cilantro

Steps:

  • In a blender or food processor blend almonds beans and oil.
  • Add all other ingredients and puree until creamy smooth.
  • Cover and let stand in the refrigerator for one hour.
  • Don't cover to tight, remember the yeast.

1/4 cup extra-virgin olive oil
1/4 cup raw almonds
1/3 cup water
1/4 cup cooked chickpeas, drained and rinsed
1/4 cup nutritional yeast
2 1/2 Tbsp. lemon juice
1 tsp. garlic, minced
1/4 tsp. salt
3/4 tsp. curry powder
1/2 tsp. dried oregano
1/2 tsp. dried cilantro

Steps:

  • In a high-speed blender or food processor, combine oil, almonds, water and chickpeas. Blend until relatively smooth. Add remaining ingredients and blend until smooth. Transfer to a small bowl, cover and refrigerate until serving. Makes 1 1/2 cups sauce.
