30 Ritz crackers, fine crumbs
2 tablespoons butter
2 (4 ounce) boxes sugar-free instant vanilla pudding mix
1 1/2 cups skim milk or 1 1/2 cups 1% low-fat milk
2 quarts low-fat vanilla frozen yogurt, softened

Steps:

  • Preheat oven to 350°F.
  • Melt butter in baking dish in microwave or oven.
  • Mix cracker crumbs with melted butter and place into 350°F oven. Bake for 5 minutes.
  • Meanwhile, mix pudding with milk.
  • Add softened frozen yogurt to pudding and milk and mix well with mixer.
  • Add pudding to bowl and top with baked crumbs.
  • Refrigerate until set.

This makes a large cake, perfect for a pot luck or a family gathering. It is a fairly flat cake--ends up less than two inches high after you have added the toppings. This recipe came from my sister-in-law in Chicago. I had a piece at a family reunion dinner and couldn't leave without the recipe! Yum Yum!

1 (18 ounce) package yellow cake mix
3 eggs (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
1 (3 1/2 ounce) package vanilla pudding mix (not instant)
1 cup milk
1 (9 ounce) package cream cheese
1 (9 ounce) package Cool Whip Topping
1 (15 1/2 ounce) package crushed pineapple, well drained
1 cup flaked coconut
1 cup walnuts, chopped

Steps:

  • Grease and flour a 12 x 17 or 12 x 15-inch pan.
  • Mix cake according to directions and bake for 20 minutes or until done; let cool completely.
  • Cook pudding with 1 cup milk, let cool.
  • Mix pudding, cream cheese and frozen topping with mixer; spread over cool cake.
  • Top with crushed pineapple.
  • Sprinkle with coconut and nuts.
  • Be sure to refrigerate leftovers.

500 g nonfat yogurt, plain
2 leaves unflavored gelatin
2 tablespoons granulated sugar (optional)

Steps:

  • I've used a strawberry flavored soy yogurt.
  • Pour the gelatin leafs into a cold water for 3 - 4 minutes.
  • Meanwhile combine the yogurt with the sugar into a medium saucepan and heat over medium heat about a minute, stirring to dissolve the sugar.
  • Squeeze the softened gelatin leafs from the water and dissolve into a small saucepan with 2 tbsp of water over low heat. Remove from the heat and add to the yogurt mixture, stir well. Divide the mixture into an individual silicon pudding caps and pour into the refrigerator. Chill at least 4 hours or overnight.
  • Turn onto a serving dishes and serve with a whipped whipping cream or melted chocolate.
