MEDITERRANEAN SPINACH CHICKPEA STEW

This spinach chickpea stew turns a bag of frozen spinach and some chickpeas into a wholesome one-pot dinner to feed a crowd! There are variations of this spinach stew recipe with tomatoes throughout the Mediterranean and the Middle East. My mom made her spinach stew, Egyptian-style using lean ground beef, but I opted for a vegan option, which is just as hearty and satisfying, thanks to chickpeas!

extra virgin olive oil
1 medium yellow onion ((finely chopped))
4 garlic cloves ((minced))
kosher salt
1 cup san Marzano tomatoes ((with their juices))
2 cups chicken broth ((or vegetable broth))
1 pound frozen spinach ((chopped))
15 ounces canned chickpeas, drained and rinsed
1 cup fresh parsley ((chopped))
1 teaspoon allspice
1 teaspoon coriander
1 teaspoon paprika
1/2 teaspoon red pepper flakes
black pepper
1/2 cup broken vermicelli noodles ((or orzo))
1 lemon ((juice of))

Steps:

  • In a large pot, heat ΒΌ cup extra virgin olive oil over medium heat until shimmering. Add the onions and garlic and cook, tossing regularly, for 3 to 5 minutes or until softened.
  • Add the tomatoes, spinach, chickpeas, and chicken broth. Add the parsley and season with a good dash of kosher salt and black pepper. Stir in the spices.
  • Bring to a boil of medium-high, then turn the heat down to low and cover partway, leaving part of the top open. Allow the spinach to simmer for 25 minutes over low heat, stirring occasionally.
  • While the spinach stew is simmering, toast the vermicelli. In a small pan, heat about 1 tablespoon olive oil over medium-high. Add the vermicelli and continuously stir to toast it evenly. Vermicelli should turn a nice golden brown, but watch carefully not to over-brown or burn. Remove from heat.
  • Stir in the toasted vermicelli in the spinach stew and cook for another 10 minutes or until the vermicelli noodles are cooked to tender.
  • Remove from the heat and finish with lemon juice and a good drizzle of extra virgin olive oil.

This is mostly a pantry dish, very quick to put together. You can serve it on its own, with couscous or pasta, or over a thick slice of toasted bread rubbed with garlic.

1 tablespoon olive oil
1 medium onion, chopped
2 garlic cloves, minced
1 teaspoon cumin seeds, lightly toasted and ground
Salt, preferably kosher salt
Freshly ground black pepper, to taste
1 tablespoon tomato paste
1 (15-ounce) can chickpeas, drained and rinsed
1 cup chicken or vegetable stock, or water
Cayenne, to taste
1 (6-ounce) bag baby spinach

Steps:

  • Heat the olive oil in a large, heavy saucepan over medium heat and add the onion. Cook, stirring, until tender, about five minutes. Add the garlic, cumin, tomato paste and 1/2 teaspoon salt. Cook, stirring for one to two minutes, until fragrant and the tomato paste has turned a darker color. Add the chickpeas, the stock or water, and the cayenne, and bring to a simmer. Cover, reduce the heat, and simmer 10 minutes.
  • Stir in the spinach, a handful at a time, stirring until each addition of spinach wilts. Add salt to taste and simmer uncovered, stirring often, for five minutes. Add lots of freshly ground pepper, taste and adjust salt and cayenne, and serve.

2 tablespoons olive oil
1 teaspoon cumin seeds
1 medium onion, finely chopped
1 fresh garlic clove (large), minced
1 tablespoon peeled minced fresh ginger
1/2 cup , yellow split garbanzo beans, (channal dal), sorted and washed in 3 to 4 changes of water
1 large tomato, finely chopped, or 1/2 cup canned tomato sauce
1 teaspoon salt, or to taste
1/2 teaspoon cayenne pepper, or to taste
1 (8-ounce) box frozen spinach, thawed
1/2 bunch (1/4 cup) fresh dill, finely chopped
1 small russet potato (or any kind), peeled and finely chopped
1 small carrot, peeled and finely chopped
1 cup water
1 tablespoon fresh lemon juice or lemon juice
Finely chopped fresh cilantro

Steps:

  • 1. Heat the oil in a large pressure cooker over medium-high heat and add the cumin seeds they should sizzle upon contact with the hot oil. Quickly add the onion, garlic, and ginger and cook, stirring, until golden, about 5 minutes. Add the dal and cook, stirring, about 5 minutes. Then ad the tomato (or tomato sauce), salt, and cayenne pepper, and stir about 2 minutes.2. Add the spinach, dill, potato, and carrot, stir about 5 minutes then add the water. Secure the lid and cook over high heat until the regulator indicates high pressure, then cook 30 seconds more. Remove from the heat and allow the pot to depressurize on its own, 12 to 15 minutes. Carefully open the lid, add the lemon juice, and stir well, mashing some of the dal and vegetables with a ladle or a spatula. I've been fascinated with yellow split peas lately. I found this in my 365 Low Fat Recipes cookbook. This would freeze well.

2 teaspoons vegetable oil
1 cup onion, chopped
1 garlic clove, chopped
1 1/2 teaspoons fresh ginger, finely chopped
1/2 teaspoon ground cumin
1/2 teaspoon curry powder
1/4 teaspoon turmeric
1/4 teaspoon ground coriander
1/4 teaspoon cayenne
2 cups dried split yellow peas
1 1/2 cups fresh spinach, shredded
1/2 teaspoon salt

Steps:

  • In a large soup pot, heat oil over medium heat. Add onion and garlic and cook until soft, 3-5 minutes.
  • Add ginger, cumin, curry powder, turmeric, coriander and cayenne. Cook, stirring, 1 minute to toast the spices.
  • Add yellow split peas and 8 cups of water. Bring to a boil over high heat.
  • Reduce heat to medium-low, cover and simmer until split peas are soft, about 45 minutes.
  • Add spinach and salt. Cook until spinach wilts, about 1-2 minutes. Soup will thicken upon standing. Add additional water to thin.
