CANDIED YAMS AND APPLES
My husband's favorite (mother-in-law's recipe) for candied yams. It's more like a dessert than a vegetable. It is very easy to make, and very tasty.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Toss apple, pecans, brown sugar, and cinnamon together in a bowl. Alternate layers of coated apple and cut yams in an 11x7-inch pan. Dot with margarine and cover.
- Bake in the preheated oven until reduced and bubbly, 30 to 40 minutes. Cover with marshmallows and continue to bake until golden, 10 to 20 minutes more.

SCALLOPED YAMS AND APPLES
I used to waitress at a Stouffer's in Columbus, Ohio where they served this. It was so good, I decided to create my own version and it's been a part of our Thanksgiving and Christmas meals for over 25 years now!

Steps:
- In a 1 quart buttered (or use Pam) casserole, alternate layers of potatoes and apples.
- In a medium saucepan, melt butter, stir in brown sugar and spices.
- Add half of reserved sweet potato liquid and bring to a boil.
- Dissolve cornstarch in remaining potato liquid and add to pan.
- Lower heat and simmer while stirring until thickened.
- Pour over layered potatoes and apples until top layer is almost covered.
- Bake, covered, at 350°F for 1 hour.
- You may uncover during the last 15-20 minutes of baking time if the sauce needs thickening.
- This freezes well.
MASHED YAMS AND APPLES

- Preheat oven to 350°F. Boil yams in pot of boiling salted water until tender, about 20 minutes. Add apple; cook until tender, about 5 minutes. Drain well. Place yams and apples on large baking sheet. Bake until slightly dry, about 10 minutes. Blend yams and apple in processor until smooth. Add butter and spices; blend until butter melts. Season with salt and pepper. (Can be made 1 day ahead. Chill.) Transfer mixture to medium saucepan. Stir yams over medium-low heat until hot.
ASIAN BRINED PORK LOIN WITH GINGERED YAMS AND FIVE SPICE APPLES
Steps:
- Toast both peppercorns and anise until fragrant in a saute pan. Mix everything together and taste. The liquid should be tasty, but not overly salty. Place pork in brine overnight. After brining, thoroughly rinse pork in cold water. Season the pork with black pepper and saute in well oiled pan. Color both sides then place in a 375 degree oven for 15 to 20 minutes. The middle of the pork should get hot. Note: even when fully cooked, the meat will remain pink because of the brining process. Let loin rest for 10 minutes then slice. Place pork around a mound of yams. Garnish with apples, chive batons and chile oil. Optional garnish for the adventuresome would be fried yam chips.
- Place cream and ginger in saucepan and on low heat, reduce the cream to 1 cup. In another saucepan, place yams and garlic and completely cover with cold water. Place on stove at medium heat and slowly boil. Cook about 20 to 30 minutes or until yams can be pierced with a paring knife then easily fall off of the knife. Strain well and place in food processor. Puree and add cream, butter, salt and pepper. Check for seasoning. Keep warm for serving.
- In a saute pan, coat with oil and caramelize onions. Add five spice, sugar and apples. Deglaze with juice and season. Let mixture cook and reduce by 50 percent. The apples should remain intact and have some liquid left. Stir in the butter. Check for seasoning. Do not overcook apples to mash. This can be done in advance and reheated for plating.
MAPLE GLAZED YAMS AND APPLES
Steps:
- Using an apple peeler machine, peel, core and slice apples. Cut in half. Peel yams, cut in half end to end, then slice 3/8" thick (creating half circles.) Alternate slice of yam and two slices apples in baking dish. Drizzle with maple syrup and chopped rosemary. Sprinkle with brown sugar and dot with slices of cold butter. Cover with aluminum foil, and bake at 350 degrees for one hour.

- Boil sweet potatoes and apples until nearly done in very little boiling water.
- Spray baking dish with fat free cooking spray.
- Place alternate layers of drained sweet potatoes and sliced apples in baking dish.
- Sprinkle with spices.
- Dot with margarine and drizzle with syrup.
- Pour 1/2 cup of apple water over the top.
- Wrap tightly and freeze if preparing a week ahead.
- Bake about 30 minutes or longer if frozen.

- In a skillet, melt butter over medium heat. Saute apples until crisp-tender. Place apples and yams in a greased 3-qt. casserole. Sprinkle with the nutmeg. Combine cranberry sauce and marmalade. Spoon over yams. Bake at 350° for 30 minutes.
