SWEET POTATO (YAM) PIE



Sweet Potato (Yam) Pie image

1 unbaked pie crust, recipe follows*
1 1/2 cups cooked, peeled and mashed sweet potatoes
1 heaping teaspoon all-purpose flour
1 cup milk (canned, half and half, cream or whole milk)
1 cup sugar
3 egg yolks
1 teaspoon vanilla
1 teaspoon ground nutmeg
2 tablespoons margarine, melted
4 cups all-purpose flour
1 3/4 cups shortening (butter flavored)
2 teaspoons salt
1 tablespoon sugar
1 large egg
1/2 cup water
1 tablespoon white vinegar

Steps:

  • Preheat oven to 350 degrees F.
  • Roll out 1 pie crust and place it in a pie plate. Mix all of the remaining ingredients together and pour into the unbaked pie crust. Bake for 45 minutes or until pie is firm. Allow to cool completely.
  • Mix flour, shortening, salt and sugar together with a pastry blender until well blended. Slightly beat egg, water and vinegar together with a whisk and pour over the well blended flour mixture. Mix all ingredients together with a fork. Divide crust into 4 equal parts. Roll each with a rolling pin and place into 4 pie pans. Flute edges of crust.

1 tbs margarine or butter
3/4 cup milk
1/4 to 1/2 cup brown sugar
2 eggs
1/2 tsp salt
1/4 tsp cinnamon
2 tbs chopped walnuts

Steps:

  • Add butter to hot mashed yams; Stir in milk, sugar, eggs, salt and cinnamon; When blended pour into a greased 9" pie pan; Sprinkle with walnuts; Bake at 400 for 35 minutes

1 - 15 oz candied yams - drained & pureed
1 - 15 oz can - pumpkin - not pie mix
3/4 c sugar
3/4 tsp cinnamon
2 tsp fresh grated ginger
1/4 tsp nutmeg - optional
1 tsp salt
1/4 c maple syrup
1 c each - milk & heavy cream
1 tsp vanilla
3 eggs + 2 yolks
1 prebaked warm pie crust

Steps:

  • 1. In a food processor or blender - add the yams and puree. In a large sauce pan or dutch oven, add the pumpkin, ginger, pureed yams, sugar, cinnamon, nutmeg and salt. Cook for 20 minutes. Stirring constantly.
  • 2. Remove from burner and cool to luke - warm. In a bowl whisk eggs, cream and vanilla.
  • 3. Whisk in the egg mixture to the pumpkin mixture, until well blended.
  • 4. Preheat oven to 400 degree F. Now, pour the yam - pumpkin filling into the prepared warm pre - baked pie crust and baked for 10 minutes. Reduce oven temp to 300 and bake until pie is set around the edges and center is just a little jiggly... about 30 - 35 minutes or longer depending on oven. If crust begins to get too dark, cover the crust with foil.
  • 5. Cool for at least 4 hours and serve alone or with a big dollop of whipped cream.

1 cup mashed sweet potatoes, cooked or canned
1/3 cup brown sugar
3/4 tsp. cinnamon
3/4 tsp. ginger
1/4 tsp. salt
3/4 cup scalded milk
2 eggs, well beaten
1 cup mashed sweet potatoes, cooked or canned
1/3 cup brown sugar
3/4 tsp. cinnamon
3/4 tsp. ginger

Steps:

  • Combine sweet potatoes, brown sugar, cinnamon, ginger, salt, milk and eggs. (If fresh sweet potatoes are used, add 1/3 cup granulated sugar.) Cool and fill pie shell. Bake at 375 degrees for 20 minutes. Sprinkle with topping. Continue baking for an additional 20 minutes. Serve with whipped cream when cool. sugar, cinnamon, ginger, salt, milk and eggs. Take out 1/4 cup flour and blend with water to form a paste. Cut shortening into remaining flour until the pieces are the size of small peas. Add flour paste to blended shortening and flour mixture. Mix with fork until the dough comes together and can be shaped into a ball. Roll out crust 1/8-inch thick and line a 9-inch pie pan. 2-3 large sweet potatoes, unpeeled
1/4 c margarine/butter
1 c sugar
1/4 tsp salt
1 tsp cinnamon
1/2 tsp allspice, ground
2 eggs, beaten
3/4 c milk
1 tsp vanilla extract
1 unbaked 9" pastry shell

Steps:

  • 1. Scrub sweet potatoes, and cook in boiling water for 20 minutes, or until soft; drain and peel. Mash enough sweet potatoes to measure 2 cups; set aside to cool completely.
  • 2. Combine next 5 ingredients in a large mixing bowl, and mix well. Add mashed sweet potatoes and eggs, and beat until smooth. Gradually add milk and vanilla, beating well.
  • 3. Pour filling into pastry shell. Bake at 350 degrees for 1 hour, or until set. Serve pie warm or cold.
