6 oz Homemade guacamole about 3/4 cup
0.25 cup(s) Low-fat shredded cheddar cheese
4 medium Uncooked scallion(s) chopped
1 small Fresh tomato(es) chopped
6 large Olive(s) black, sliced

Steps:

  • Combine sour cream and taco seasoning; mix well.
  • Spread bean dip on bottom of a 12-inch round glass serving bowl or edged-platter. Top with guacamole, sour cream, cheese, scallions, tomatoes and olives. Yields about 1/4 cup dip per serving.

I got this dip from the WW site...it is absolutely delicious and just ONE POINT per serving! I serve it with baked Tostitos chips for a guilt-free treat, but no one would ever guess it's low fat if you served it to guests. Keep in mind, the creamy ingredients cool down the salsa, so a hot salsa will yield a nice medium dip. Great way to get your mexican dip fix. Enjoy!

1/2 cup salsa
3/4 cup avocado, diced
1/3 cup fresh cilantro, chopped
1/4 cup red onion, finely chopped
1/2 teaspoon ground cumin
1/2 teaspoon salt (to taste)

Steps:

  • In a medium bowl, stir together yogurt and salsa until blended.
  • Stir in remaining ingredients. Cover and refrigerate up to 1 day.
  • Before serving, garnish with additional cilantro, chopped avocado and chopped red onion.

8 ounces cream cheese, softened
8 ounces sour cream
16 ounces salsa
1 medium green pepper, chopped
2 large tomatoes, chopped
1 bunch green onion, chopped (green tops included)
2 cups shredded cheddar cheese
1 lb bacon, fried crisp and crumbled

Steps:

  • Mix softened cream cheese and sour cream together. Spread into bottom of dish at least 3 inches deep. Pour salsa over this and spread evenly. Layer additional ingredients as listed, adding bacon prior to serving. Chill prior to serving at least 2 hours. Add bacon before serving to keep crisp. Serve with corn or tortilla chips.

3 medium ripe avocados
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1 (8 ounce) sour cream
1/2 cup mayonnaise
1 (1/4-1 1/8 ounce) package taco seasoning mix
2 (10 1/2 ounce) cans bean dip
1 bunch green onions with top, chopped (1 cup)
3 medium tomatoes, cored, halved, seeded and coarsely chopped (2 cups)
2 (3 1/2 ounce) cans pitted ripe olives, drained, coarsely chopped
1 (8 ounce) package sharp cheddar cheese, shredded
tortilla chips

Steps:

  • Peel, pit and mash avocados in a medium-size bowl with lemon juice, salt and pepper.
  • Combine sour cream, mayonnaise, and taco seasoning mix in a bowl.
  • To assemble: Spread bean dip on a large shallow serving platter; top with seasoned avocado mixture; layer with sour cream-taco mixture.
  • Sprinkle with chopped onions, tomatoes and olives; cover with shredded cheese.
  • Serve chilled or at room temperature with round tortilla chips.

1 (9 ounce) can bean dip
1 (6 ounce) container guacamole
12 ounces sour cream
1 (1 ounce) package taco seasoning mix
1 (8 ounce) package shredded Cheddar cheese
1 jalapeno pepper, seeded and diced
1 tomato, chopped

Steps:

  • In a clear pie pan, or similar dish, spread a layer of bean dip. Top the bean dip with a layer of guacamole. Allow the layers to thicken in the refrigerator for approximately 20 minutes.
  • In a mixing bowl, while the bean dip and guacamole chill, combine the sour cream and taco seasoning. When the chilled mixture is sufficiently thickened, spread a layer of the sour cream mixture over the layer of guacamole. Top the sour cream layer with the grated cheese. Garnish the layers with the jalapenos and tomatoes.

2 avocados - peeled, pitted and diced
1 ½ tablespoons fresh lime juice
¼ cup chopped fresh cilantro
¼ cup salsa
garlic salt to taste
ground black pepper to taste
1 (8 ounce) container sour cream
1 (1 ounce) package taco seasoning mix
4 roma (plum) tomatoes, diced
1 bunch green onions, finely chopped
1 (16 ounce) can refried beans
2 cups shredded Mexican-style cheese blend
1 (2.25 ounce) can black olives - drained and finely chopped

Steps:

  • In a medium bowl, mash the avocados. Mix in lime juice, cilantro, salsa, garlic salt and pepper.
  • In a small bowl, blend the sour cream and taco seasoning.
  • In a 9x13 inch dish or on a large serving platter, spread the refried beans. Top with sour cream mixture. Spread on guacamole. Top with tomatoes, green onions, Mexican-style cheese blend and black olives.

1 (16 ounce) can refried beans (traditional variety)
1 (4.5 ounce) can chopped green chiles, undrained
1 tablespoon fresh lime juice, plus
2 tablespoons fresh lime juice for avocado layer
2 teaspoons chili powder
¼ teaspoon ground cumin
Salt
3 avocados, halved, pitted, flesh spooned out
1 cup sour cream
½ cup mayonnaise
1 cup salsa (drain to equal 1 cup if salsa is especially runny)
¾ cup sliced canned black olives, drained
1 cup grated pepper Jack cheese
½ cup thin sliced scallion greens, green part only

Steps:

  • Mix beans, chiles, 1 Tb. of lime juice, chili powder, cumin, and a pinch of salt in a small bowl. In a second small bowl, mash avocados with a fork; stir in remaining 2 Tbs. lime juice and 1/2 teaspoon of salt to make guacamole. In a third small bowl, mix sour cream and mayonnaise.
  • Spread bean mixture, then guacamole, then sour cream mixture, and finally salsa over the bottom of a 9-inch deep-dish pie plate or similar size pan. Sprinkle with olives, then cheese. (Dip can be covered and refrigerated up to 2 days) To serve, sprinkle with green onions.
