Pork no longer needs to be massacred with cooking - I know it is a hard habit to break if this is how you were brought up but pork today is perfectly safe to eat slightly pink and it is so juicy, Try it - not blood rare but just a light pink. This is a very tasty recipe.

1/2 cup frozen apple juice concentrate
2 tablespoons honey mustard
2 tablespoons fresh rosemary, minced
3 garlic cloves, minced
1 tablespoon olive oil
1 shallot, minced
1/2 teaspoon pepper
1 1/2 lbs pork tenderloin, fat trimmed

Steps:

  • Combine all the ingredients (except pork), whisk well.
  • Pour over the loin in a zip lock plastic bag or glass bowl.
  • Marinade in the fridge for at least 2 hours.
  • Remove loin from marinade, save marinade.
  • Cook 6 inches from high heat source for about 15 minutes turning frequently and basting with the marinade The outside should be nicely browned and the inside just a slight pink color Rest for 5 minutes and slice into 1/2-inch slices.
  • Heat any remaining marinade and serve over the pork.

1 cup cider vinegar
1/2 cup ketchup
1 tablespoon sugar
3/4 teaspoon table salt
1/2 teaspoon ground black pepper

  • Whisk together all ingredients until sugar and salt are dissolved.
  • Pull pork into thin shreds and toss with half of the sauce. Save the remaining sauce to serve at the table for people who like a little more.

1 1/4 lbs pork tenderloin
2 tablespoons Dijon mustard
3 tablespoons maple syrup (( divided)
1 1/2 teaspoons fresh rosemary (( chopped)
1/4 teaspoon salt
1 dash pepper
2 medium apples (Granny Smith( peeled & in 16 wedge)

Steps:

  • Preheat oven to 425ºF.
  • Trim fat from pork. Place pork on a broiler pan coated with cooking spray.
  • Combine mustard, 2 tbsp maple syrup, rosemary, salt and pepper in small bowl; brush over pork.
  • Insert meat thermometer into thickest part of pork. Bake at 425ºF for 25 minutes or until thermometer registers 160ºF.
  • While pork is baking, heat nonstick skillet over medium-high heat untilpar hot. Add apples, and saute 5 minutes or until lightly browned. Reduce heat to low, and add 4 tbsp maple syrup.
  • Simmer 10 minutes or until apples are tender, stirring occasionally.
  • Cut pork crosswise into slices; spoon cooked apples over pork.

1 boneless pork shoulder butt roast (4 to 5 pounds)
2 tablespoons brown sugar
2 teaspoons salt
1 teaspoon paprika
1/2 teaspoon pepper
2 medium onions, quartered
3/4 cup cider vinegar
4 teaspoons Worcestershire sauce
1 tablespoon sugar
1 tablespoon crushed red pepper flakes
1 teaspoon garlic salt
1 teaspoon ground mustard
1/2 teaspoon cayenne pepper
14 hamburger buns, split
1-3/4 pounds deli coleslaw

Steps:

  • Cut roast into quarters. Mix brown sugar, salt, paprika and pepper; rub over meat. Place meat and onions in a 5-qt. slow cooker., In a small bowl, whisk vinegar, Worcestershire sauce, sugar and seasonings; pour over roast. Cook, covered, on low 6-8 hours or until meat is tender., Remove roast; cool slightly. Reserve 1-1/2 cups cooking juices; discard remaining juices. Skim fat from reserved juices.
