2 boneless skinless chicken breasts
4 slices bacon or 4 slices turkey bacon
1 cup shredded low-fat cheese (your choice) or 1 cup fat free cheese (your choice)
1/2 cup chopped tomato

Steps:

  • Preheat oven to 400 degrees.
  • Wrap two bacon slices around each chicken breast.
  • In a small skillet, place the chicken breast with the bacon and cook until the bacon is done.
  • Place the chicken into a baking dish and bake for 10-20 minutes until done.
  • Remove from oven and sprinkle with cheese. Bake for 2-3 minutes until cheese melts.
  • Top with tomatoes.
  • For different versions, try adding a sauce like ranch or barbecue (but remember to add on any extra points for this) or add more toppings like mushrooms, green onions, etc.

I enjoyed this sandwich at The Smokestack in Thurber, TX. It is a chicken version of the popular patty melt. Sort of a chicken grilled cheese. Prep time includes grilling a chicken breast.

1 slice onion (thick)
2 slices rye bread
1 tablespoon butter
1 grilled chicken breast
2 slices swiss cheese

Steps:

  • Saute onion in half the butter till golden.
  • Set aside.
  • Heat non stick pan.
  • Spread butter on both slices of bread.
  • Place one slice of bread, buttered side down in pre-heated pan.
  • Put one slice of cheese, onions, chicken breast, one slice of cheese and then the remaining slice of bread with the buttered side up.
  • Continue to cook until bread on bottom is brown and toasty.
  • Turn the entire sandwich and toast the other side and wait for cheese to get melty.
  • SLice in half and enjoy.

I love Caesar and this is a quick and easy sandwich. I brush the chicken with Caesar with dressing while grilling for extra flavor. You could also marinate the chicken in some Caesar before grilling.

2 tablespoons prepared caesar salad dressing
2 slices white cheddar cheese (yellow Cheddar may be used as a substitute)

Steps:

  • Spread 1 tablespoon of the Caesar dressing on 1 side of each slice of bread. Place spread side down.
  • Place 1 slice of white Cheddar on each slice.
  • Top cheese with freshly grilled chicken fillet.
  • Sprinkle with the grated Parmesan cheese. Close sandwich.
  • Melt 1 tablespoon butter in skillet or griddle over moderate heat. Cook sandwich, on both sides, until golden brown.
