WOOD GRILLED BUFFALO TENDERLOIN WITH WILD MUSHROOMS AND PORT WINE SAUCE



Wood Grilled Buffalo Tenderloin with Wild Mushrooms and Port Wine Sauce image

2 cups diced yellow onions
1 cup diced carrots
1 cup diced celery
2 tablespoons canola oil
6 cups ruby port wine
2 cups red wine
1 1/2 quarts veal stock or brown chicken stock
4 sprigs thyme
3 sprigs Italian parsley
Salt and pepper
24 small shallots
2 tablespoons olive oil
1 tablespoon thyme leaves
1 tablespoon chopped parsley leaves
2 3/4 pounds Yukon gold potatoes, sliced 2-inch thick
3/4 pound unsalted butter, chopped
1 cup half-and-half
1-ounce canola oil
1/2 pound mixed wild mushrooms, of your choice, sliced 1/2-inch thick
1 teaspoon minced garlic
1/2 cup crumbled blue cheese
4 (5-ounce) buffalo fillets

Steps:

  • Place the onion, carrot, and celery with the canola oil in a medium saucepan and saute over high heat for 10 minutes or until golden brown and caramelized. Deglaze the pan with the port wine and red wine and cook until most of the wine has been absorbed. Add veal stock and simmer for 1 hour. Strain, return to the saucepan and add thyme and parsley, simmer for 5 minutes. Strain the thyme and parsley, return back to the pot and let simmer for about 30 minutes or until reduced to 1 1/2 cups. Season with salt and pepper to taste, strain through a fine-mesh sieve. Keep warm.
  • Preheat oven to 350 degrees F.
  • Place shallots in an oven proof pan with the olive oil and cover with aluminum foil. Roast for 1 hour or until tender. Toss with thyme and parsley and season with salt and pepper. Keep warm.
  • Place the potatoes in a large saucepan and add enough cold water to cover. Salt the water and bring to a rolling boil over high heat. Reduce the heat and simmer for about 15 minutes, or until the potatoes are tender when pierced with a knife. Drain and place on a cookie sheet. Place in the oven for 3 to 5 minutes, until excess moisture is evaporated. Rice the potatoes in a food mill or a ricer into a bowl. Add butter and mash with a potato masher.
  • In a small saucepan, bring 1/2 cup half-and-half to a boil. Add to the potatoes, stirring gently until the desired consistency. Do not over mix the potatoes. Season with salt and pepper. Cover and set aside.
  • Preheat a large saute pan on medium height heat. Add oil and saute mushroom for 2 to 3 minutes. Stirring often. Once mushrooms become tender add garlic. Saute for 1 minute. Set aside for platting. Mushrooms maybe sauteed a day in advance.
  • Place an additional 1/2 cup of half-and-half in a small saucepan and bring to a boil. Add blue cheese and blend with a hand held blender prior to serving.
  • To assemble preheat the grill. Season buffalo with salt and pepper and place on the grill. Grill the steaks for 2 to 3 minutes on both sides for medium rare, or until preferred doneness. Remove steaks from grill and let rest. On a dinner plate place a small circle of mushrooms in the center of the plate. Place a quenelle of mashed potatoes in the center of the mushrooms, on top of the potatoes place the buffalo. Using a spoon, pour 1-ounce of port wine sauce around the mushrooms and a little on the buffalo. Blend the blue cheese cream until nice and frothy, and then spoon over buffalo.

Grilled Giant Porterhouse (or T-bone) with Grilled Exotic Mushrooms image

2 giant (2 to 2 1/2-inch thick) porterhouse (or T-bone) steaks, about 2 pounds each
1/2 cup olive oil (1/4 cup for steak, 1/4 cup for mushrooms)
Salt and freshly ground black pepper
1 1/2 pounds mixed large mushrooms (portobellos, shiitake, creminis, chanterelles, oyster, or other kinds), trimmed
1 teaspoon freshly ground black pepper
4 tablespoons unsalted butter
1/3 cup roughly chopped fresh flat leaf parsley
3 tablespoons dry sherry

Steps:

  • Build a multi-level fire in the grill: Leave 1/4 of the bottom free of coals, bank the coals in the remaining 3/4 of the grill so that they are 3 times as high on 1 side as on the other. When the coals are all ignited and the temperature is hot (Hold hand about 5-inches above grill grid, over the area where coals are deepest, for 2 seconds or less), the grill is ready to cook.
  • Pat the steaks dry with paper towels, then rub them all over with 1/4 cup of the olive oil and sprinkle generously with salt and pepper. Place the steaks over the hottest part of the fire and cook until well seared on 1 side, 6 to 8 minutes. Then move them to the medium hot part of the grill and cook, turning once, until they are done the way you like them, 10 to 15 minutes more for rare. Check for doneness.
  • Make mushrooms while grilling steaks: Combine the mushrooms, the remaining 1/4 cup of olive oil, and the teaspoon of pepper in a large bowl. Toss gently until the mushrooms are well coated and all the oil is absorbed.
  • When steaks are done, transfer them to a serving platter, cover loosely with foil, and let them rest while grilling mushrooms. Put the mushrooms on the medium-hot part of the grill and cook, turning occasionally, until they are golden brown and moist all the way through, about 8 to 10 minutes. Slice the cooked mushrooms and put them back in the bowl along with the butter, parsley, and sherry, season with salt and pepper, to taste, and toss gently to coat.
  • To serve, cut the meat away from the bone, then cut it into thick slices. Divide them among 4 serving plates and spoon mushrooms over the top.

1 (2 -2 1/2 lb) boneless pork loin
1 tablespoon vegetable oil

Steps:

  • Start with an untreated cedar plank (14x7x1 in). Make sure the plank is untreated. Immerse the plank in water and soak for at least 4 hours. You may have to weigh it down with a can.
  • Preheat grill to medium heat. Using a brush, brush one side of the plank with oil. This will help prevent food from sticking to wood. Top the plank with meat, place on center of grill. Close the lid.
  • Grill 1 hour or until meat thermometer inserted into thickest part of meat registers 150 degrees F.
  • Check back occasionally to ensure plank doesn't flare up.
  • You can brush with barbeque sauce during last 20 minutes of grilling time if desired.
  • Remove from grill, cover loosely with foil. Let stand 10 minutes until internal temp reaches 160 degrees F. Disgard plank.

GRILLED T-BONES WITH CHIPOTLE-LIME BUTTER

1 stick unsalted butter, softened
1 chipotle chile from canned chipotles in adobo, minced
Finely grated zest and juice from 1 lime
Kosher salt and freshly ground pepper
Vegetable oil, for grilling
2 T-bone steaks, each about 1 1/2 pounds and 1 1/2 to 2 inches thick

Steps:

  • In a small bowl, combine the butter, chipotle, lime zest and juice, and 1 teaspoon salt. Mash with a spoon until smooth. Mound the mixture onto a square of plastic wrap, form into a log shape about 6 inches long, and roll up in the plastic; twist the ends of the plastic tightly to seal. Refrigerate until firm, about 1 hour.
  • Prepare a grill for high-heat cooking. Rub some oil onto the steaks and sprinkle with salt and pepper. Brush the grill grate with oil. Grill the steaks, turning once, until an instant-read thermometer inserted horizontally in the meat but not touching the bone registers 130 degrees F for medium-rare, about 8 minutes per side. Transfer the steaks to a cutting board and allow to rest 10 minutes. Slice the steaks and divide among plates; top each serving with a slice of the chipotle butter.
