2 tablespoons olive oil
1 1/2 lb beef chuck roast, cut into 1-inch pieces
1 large onion, chopped
4 cloves garlic, finely chopped
1/4 cup Gold Medal™ all-purpose flour
1 cup Burgundy or dry red wine
3 cups Progresso™ beef-flavored broth (from 32-oz carton)
1 1/2 cups ready-to-eat baby-cut carrots
4 medium parsnips, peeled, cut into 1/2-inch pieces
1/2 lb small red potatoes, cut in half
2 dried bay leaves
6 sprigs fresh thyme
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In 4-quart Dutch oven, heat 1 tablespoon of the oil over medium heat. Cook beef in oil 15 minutes, stirring occasionally, until browned. Remove beef to bowl; cover to keep warm.
  • In Dutch oven, heat remaining 1 tablespoon oil over medium-high heat. Cook onion and garlic in oil 5 minutes, stirring occasionally, until tender. Return beef to Dutch oven. Sprinkle with flour; cook and stir 1 minute. Add wine; cook 1 minute, scraping to loosen any browned bits from bottom of pan. Stir in broth, carrots, parsnips, potatoes, bay leaves, thyme, salt and pepper.
  • Heat to boiling; reduce heat. Cover; simmer about 40 minutes, stirring occasionally, until vegetables are tender. Remove bay leaves before serving.

1 can (14 oz) vegetable broth or 1 3/4 cups Progresso™ chicken broth (from 32-oz carton)

Steps:

  • In 4- to 5-quart slow cooker, place all ingredients except cornstarch and water.

2 tablespoons vegetable oil
1 pound lamb stew meat, cubed
2 cups beef broth
1 cup dry red wine
2 cloves garlic, minced
1 tablespoon chopped fresh thyme
¼ teaspoon salt

1 bay leaf
2 cups peeled, seeded, and sliced butternut squash
1 cup peeled, sliced parsnips
1 cup peeled, chopped sweet potatoes

1 medium onion, thinly sliced
½ cup sour cream
3 tablespoons all-purpose flour

Steps:

  • Heat the oil in a large saucepan, and brown the lamb meat on all sides. Drain fat, and stir in the beef broth and wine. Season with garlic, thyme, salt, pepper, and bay leaf. Bring the mixture to a boil. Reduce heat, cover, and simmer 20 minutes.
  • Mix in the squash, parsnips, sweet potatoes, celery, and onion. Bring to a boil, then reduce heat and simmer 30 minutes, or until the vegetables are tender.
  • In a small bowl, blend the sour cream and flour. Gradually stir in 1/2 cup of the hot stew mixture.
  • Stir the sour cream mixture into the saucepan. Remove the bay leaf, and continue to cook and stir until thickened.

3/4 cup KRAFT Zesty Italian Dressing
2 lb. beef stew meat, cut into 1-inch chunks
6 slices OSCAR MAYER Bacon, chopped
1/2 lb. sliced fresh mushrooms
1 large onion, chopped
6 carrots (about 1 lb.), sliced
1-1/2 lb. red potatoes (about 5), peeled, cut into large chunks
1 can (14-1/2 oz.) stewed tomatoes, undrained
1 can (14-1/2 oz.) beef broth

Steps:

  • Pour dressing over stew meat in resealable plastic bag. Seal bag; turn to evenly coat meat with dressing. Refrigerate 30 min. to marinate.
  • Cook bacon in large saucepan on medium heat 5 min. or until crisp, stirring occasionally. Use slotted spoon to remove bacon from pan, reserving drippings in pan; drain bacon on paper towels.
  • Add mushrooms and onions to reserved drippings; cook on medium-high heat 10 min. or until tender, stirring occasionally. Remove stew meat from marinade; add to saucepan with carrots, potatoes, tomatoes, broth and bacon. Discard bag and marinade.

Hearty Winter Vegetable and Beef Stew (Crock-Pot) image

I love stew in the winter, especially when I come home from work and it's already cooked and pretty much ready to be eaten. Yummy!

2 cups potatoes
1 cup parsnip
1 cup turnip
1 cup carrot
1 lb stewing beef
steak spice (I use clubhouse brand)
Worcestershire sauce
1 garlic clove (crushed)
1 onion (medium)
1 cup green beans
1 cup celery
1 1/2 cups button mushrooms
2 (10 ounce) cans cream of mushroom soup (I use the low fat Campbell's)
1/2 cup broth (beef or vegetable)
gravy mix (I use Veloutine)
1 cup frozen peas

Steps:

  • Chop up potatoes, parsnips, turnips and carrots into 1 inch cubes. Don't chop them too small - you want big chunky veggies. (if you want, you can also add sweet potatoes or yams too!).
  • Put the chopped potatoes, parsnips, turnips and carrots into the bottom of your crockpot, in that order.
  • Chop up the beef into approximately 1 inch cubes, and then put it on top of the veggies.
  • Squirt some Worcestershire sauce on top of the beef, and then sprinkle the steak spice and crushed garlic over top.
  • Chop the onion into big chunks - do not separate the layers - and put them over top of the beef.
  • Next cut up the green beans and celery into 1 inch long pieces, and put them on top of the onion.
  • Throw the button mushrooms on the top (or you can use large mushrooms cut in half).
  • Now mix the two cans of cream of mushroom soup and the 1/2 cup beef or vegetable broth together and dump it over top of the layers.
  • Lastly, I put aluminum foil over top of my crockpot, and then the lid because my lid doesn't fit tightly. If you want this to cook up nicely, you don't want to let any of the heat out.
  • Cook on low for approximately 6-8 hours.
  • Before you eat, ladle out the liquid and put into a pot with the gravy thickener and make a gravy base for the stew (otherwise it will be more soupy).
  • While you're making the gravy, throw the frozen peas into the crockpot and stir it up.
  • When the gravy is ready, pour it back into the crockpot, stir it all up, and it's ready to be eaten!

3 2/3 cups vegetable stock, divided

2 cubes chicken bouillon

Steps:

1 (10 ounce) package red pearl onions or 1 (10 ounce) package white pearl onions, cut in half through root end
10 cups vegetable stock
5 large sweet potatoes, peeled and cut into large dice
6 tablespoons tomato paste
1 head cauliflower, cut into flowerets
1 cup water
6 tablespoons cornstarch
1 cup all-purpose flour
1 cup cornmeal
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
6 tablespoons butter, cut into pieces
1 cup milk

Steps:

  • Preheat oven to 375 degrees.
  • Heat the olive oil in a large heavy stockpot over medium-low heat.
  • Add the onions, celery, carrots, garlic, bay leaves, chile powder, cumin, coriander, cinnamon, salt and pepper.
  • Saute, stirring often, until the mixture is juicy, about 15 minutes.
  • Meanwhile, bring a small saucepan of water to a boil and prepare a bowl of ice water.
  • Place the pearl onions in the boiling water; blanch about 1 minute.
  • Drain.
  • Transfer onions to ice water.
  • When cool, peel them.
  • Set aside.
  • Add the stock to the sauteed vegetables, stirring to scrape up any browned bits in the bottom of the pan.
  • Add the sweet potatoes and tomato paste.
  • Bring to a boil, reduce heat and simmer for 10 minutes.
  • Add the cauliflower and pearl onions.
  • Cover and simmer 5 minutes, stirring occasionally, until the cauliflower is tender.
  • Strain the liquid from the vegetables into a large pot.
  • Stir together the water and cornstarch.
  • Bring the stew liquid to a boil; keep at a simmer as you slowly add the cornstarch mixture, stirring constantly, until the liquid thickens.
  • Divide the vegetables between 2 large casserole dishes; add the thickened vegetable juices to cover.
  • (Save any excess liquid for another use.) Top with large dollops of the cornbread topping.
  • Bake about 30 minutes, or until the top is golden brown.

2 pounds london broil roast
1 teaspoons vegetable oil
1 units onion
1 packages baby carrots
4 stalks celery
0.25 teaspoons garlic
2 units onion soup mix
56 units potatoes
2 cans whole kernel corn
1 cans tomatoes
1 cans tomato juice
1 cans peas
1 cans baby lima beans
2 cans green beans
1 units salt
1 units pepper
12 cups water
0.5 heads cabbage

Steps:

  • Cut the London broil up into small bite sized pieces - just before finishing cutting the broil - place the oil into the stew pot and put on medium heat. Place the broil into the stew pot and sear the outside of the meat till brown - stirring occasionally.
  • Dice up your onion into "hearty" pieces as well as the carrots and cut up the celery into smaller pieces and place in the pot with the browning meat. Let the vegetables and meat simmer together until onions are starting to turn translucent and the 1/4 - 1/2 tsp. of fresh diced garlic and the two envelopes of onion soup mix. 1 cup of water can be added at this time to the pot continuing to stir occasionally.
  • Cut up potato into large bite sized pieces and add them at this time. Let this simmer while opening the cans of the remaining vegetables. Keep all juices with the vegetables EXCEPT for the green beans and lima beans..
  • Start putting in the canned vegetables including the juice for the corn, peas, diced tomatoes - drain the juice from the green beans and lima beans and pour those in as well. Stir well.
  • Now you can put in the tomato juice and an extra cup of water - amount of water varies depending on how "juicy" you like your stews this will be pretty thick by the end of the time. Salt & Pepper to taste
  • Let simmer for 2-3 hours on medium heat or until potatoes/carrots and celery are soft and tender to the fork. 45 minutes before serving if you like cabbage it can be added at this time.

1 white or cheese pumpkin, about 6 pounds
1/2 cup spice mixture, recipe follows
1 to 2 tablespoons extra virgin olive oil
2 ounces thinly sliced leeks
5 ounces cipolinni onions, roasted then peeled
5 ounces red pearl onions, roasted then peeled
1/2 teaspoon freshly grated nutmeg
1/2 jalapeno pepper, seeded and finely minced
3 toasted cinnamon sticks
12 to 15 ounces peeled butternut or other squash, cut into 1-inch cubes and roasted 20 minutes in a preheated 350 degree F oven
4 ounces peeled rutabaga, cut into 1-inch cubes and roasted 30 minutes
4 ounces peeled turnip, cut into 1-inch cubes and roasted 15 to 20 minutes
4 cups squash sauce, recipe follows
2 large Peruvian potatoes, steamed, peeled and cut into 1-inch cubes
3 to 4 large Yukon gold potatoes, steamed, peeled, and cut into1-inch cubes
1/4 cup coarsely chopped fresh herbs
2/3 cup ras el hanout
1/4 cup raw cane sugar
1 tablespoon kosher or coarse sea salt
Freshly ground black pepper

Steps:

  • Cut the top off the pumpkin as though you were going to make a Halloween Jack-o-lantern. Seed and scrape the pumpkin so the inside is clean. Clean and reserve the seeds. Rub the lid and inside of the pumpkin with 1/4 cup of the spice mixture. Rest the lid and pumpkin cut-side-down on a baking pan. Wrap the pumpkin completely with 1 layer of aluminum foil. Bake in a preheated 350 degree oven 45 to 55 minutes or until the pumpkin turns just tender.
  • Meanwhile, heat the oil in a large saucepot over medium heat. Add the leeks, onions, nutmeg, jalapeno, and cinnamon sticks. Saute until the leeks begin to soften. Add the squashes and root vegetables to heat through. Add the hot squash sauce, the potatoes, and bring to a simmer. Remove from heat and add the herbs. Remove the pumpkin from the oven and stand upright. Ladle the stew into the cavity of the pumpkin.
  • To serve, toast some Russian black bread or walnut raisin bread, and place a slice in each of several warmed bowls. Sprinkle some of the spice mixture on the rim of the pumpkin. Use a carving knife to cut thin slices off the pumpkin. Arrange the slices around the bread then ladle some of the stew over the bread. Sprinkle the freshly cut rim of the pumpkin with more spice mixture and the stew with more herbs. Repeat the process until the stew and pumpkin are gone.
  • Puree any leftover pumpkin with some spice mixture and brown sugar and use as you would canned pumpkin to make a savory pumpkin pie.
  • Combing above ingredients in a medium bowl and mix well.;

3 medium carrots, cut into 1/2-inch pieces (1 1/2 cups)
2 medium parsnips, peeled and cut into 1/2-inch pieces
2 medium leeks, cut into 1/2-inch pieces
1 can (14 oz) vegetable broth or 1 3/4 cups Progresso™ chicken broth (from 32-oz carton)
1/2 teaspoon salt
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried rosemary leaves
3 tablespoons cornstarch
3 tablespoons cold water

Steps:

  • In 4- to 5-quart slow cooker, place all ingredients except cornstarch and water.
  • Cover; cook on Low heat setting 8 to 10 hours.
  • In small bowl, mix cornstarch and water; gradually stir into stew until blended. Increase heat setting to High; cover and cook about 20 minutes longer, stirring occasionally, until thickened.

1/3 cup raz al hanout spice mixture (available at specialty markets)
2 tablespoons raw cane sugar
1/2 tablespoon kosher or coarse sea salt
3/4 teaspoon freshly ground black pepper
1 6 to 8 pound Hubbard squash
10 cipolini
10 red pearl onions
1/2 peeled butternut squash, cut into bite-size pieces (about 4 cups)
4 tablespoons extra virgin olive oil
1/2 peeled rutabaga, cut into bite-size pieces (about a cup)
1 medium peeled turnip, cut into bite-size pieces (about a cup)
2 large Peruvian potatoes, peeled and cut into 1-inch chunks
3 to 4 large Yukon Gold potatoes, peeled and cut into 1-inch chunks
1/2 leek, thinly sliced (white part and one inch of green)
3 toasted cinnamon sticks
1/2 jalapeno pepper, seeded and minced
1/2 teaspoon freshly grated nutmeg
Squash sauce (see recipe)
1/4 cup coarsely chopped fresh herbs
4 to 6 slices Russian black bread or walnut raisin bread

Steps:

  • Heat oven to 350 degrees. In a bowl, combine raz al hanout, sugar, coarse salt and pepper. Set aside.
  • Cut top off Hubbard squash as a lid. Seed and scrape inside of squash clean. Wash, and reserve seeds. Rub lid and inside of squash with half of spice mixture. Place lid and squash, cut side down, on baking sheet. Cover with foil. Bake for 45 minutes. Remove lid. Return squash to oven, and bake for 45 minutes more, until tender.
  • Meanwhile, place cipolini and pearl onions on a baking sheet, and roast for 15 minutes. Spread butternut squash cubes on a separate baking sheet, sprinkle lightly with 1 tablespoon olive oil and roast for 20 minutes. On another baking sheet, arrange rutabaga and turnip cubes in two separate piles. Sprinkle each lightly with 1/2 tablespoon olive oil, and roast, taking turnips out after 15 minutes and leaving rutabaga to continue for 10 minutes more. Peel roasted pearl onions, and cut cipolini onions in half.
  • Put potatoes in a steamer basket over simmering water, and steam for 10 minutes, until slightly softened.
  • In a large pot over medium heat, warm remaining olive oil. Add onions, leeks, cinnamon sticks, jalapeno and nutmeg, and saute until leeks start to soften. Add squash, rutabaga and turnip, and heat through. Add all of the squash sauce and potatoes, and bring to a simmer. Cook for 20 minutes, until all vegetables are tender.
  • Meanwhile, spread Hubbard squash on a baking sheet, sprinkle with olive oil and salt, and toast in oven until they start to pop, about 10 minutes. Set aside to cool.
  • When vegetables are done, turn off heat, and add fresh herbs. To serve, ladle stew into cavity of Hubbard squash. Toast bread, and place a slice in each warmed bowl. Ladle stew into bowl. Sprinkle spice mix on rim of squash. With carving knife, cut a thin slice of squash horizontally across rim. Place slice on stew in bowl. Sprinkle rim with more spice mix, and the stew with more fresh herbs. Repeat with remaining bowls. Garnish with seeds.

1 onion, chopped
2 tablespoons garlic, minced
1 tablespoon olive oil
1/2 cup orzo pasta
32 ounces vegetable broth
2 teaspoons ground mustard
1/2 teaspoon ground black pepper
16 ounces frozen vegetables, thawed (Beans, Carrots, Potatoes)
15 ounces corn kernels, drained
16 ounces beans (Great Northern & Pinto combination if available)
1 cup Bisquick
2/3 cup cornmeal
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon garlic powder
2/3 cup skim milk or 2/3 cup soymilk

Steps:

  • Cook Onion and Garlic in Olive Oil in Dutch Oven, stirring occasionally until tender.
  • Stir in Vegetable Broth, Orzo, Ground Mustard, Pepper, Vegetables, Corn and Beans.
  • Heat until Boiling, stirring occasionally.
  • In bowl, combine Bisquick, Cornmeal, Garlic Powder, Basil and Oregano.
  • Stir Milk into dry ingredients until just combined.
  • Drop dough by tablespoon fulls onto boiling stew.
  • Reduce heat to low.
  • Cook uncovered for 10 minutes.
  • Cook covered for a further 10 minutes.
  • Serve hot from the stove and enjoy!

1 cup cleaned and trimmed leek, cut into 1/2-inch slices
1/2 teaspoon ground coriander
1/2 teaspoon caraway seeds, crushed

1/8 teaspoon ground red pepper
1 clove garlic, minced
3 2/3 cups vegetable stock, divided
2 cups peeled butternut squash, cut into 1-inch cubes
1 cup carrot, cut into 1/2-inch slices
3/4 cup Yukon gold potato, peeled and cut into 1-inch cubes
1 tablespoon harissa (North African hot sauce, available in specialty stores)
1 1/2 teaspoons tomato paste
3/4 teaspoon salt
1 pound turnips (about 2 medium), peeled and each cut into 8 wedges
1 (15 1/2-ounce) can chickpeas (garbanzo beans), drained
1/4 cup chopped fresh flat-leaf parsley

  • 1. Heat oil in a large saucepan over medium-high heat. Add onion and leek; sauté 5 minutes. Add coriander and next 4 ingredients (through garlic); cook 1 minute, stirring constantly. Add 3 cups vegetable stock and the next 8 ingredients (through chickpeas); bring to a boil. Cover, reduce heat, and simmer 30 minutes. Stir in parsley and honey. 2. Remove 2/3 cup hot cooking liquid from squash mixture. Place cooking liquid and remaining 2/3 cup stock in a medium bowl. Stir in couscous. Cover and let stand 5 minutes. Fluff with a fork. 4 cups shredded green cabbage
1 medium onion
2 cups baby carrots
2 parsnips
1 sweet potato
4 medium potatoes

1 (1 1/4 ounce) package dry onion soup mix

Steps:

  • Cut up vegetables and kielbasa and put into crock pot.
  • Add water to cover.
  • Add seasonings and soup mix.
  • Cook on High 4-5 hours or until vegetables are done to desired tenderness.
  • May need additional water throughout cooking process.
  • This recipe may be altered in any way needed.
  • Vegetables can be substituted as to availability.
  • Can be prepared without kielbasa to make a vegetarian stew.

This recipe originates from Moosewood Restaurant cooks at home but I have tweaked it slightly over the years. Filling, tasty and nutritious. Delicious with a crusty bread on a cold night.

2 onions, chopped
2 celery ribs, chopped
2 tablespoons olive oil
2 medium carrots
2 medium parsnips
1 small sweet potato
1 large potato
10 ounces green beans (about 2 cups trimmed and halved, I use frozen)
1 teaspoon dried dill
1 teaspoon marjoram
1 vegetable stock
1 1/2 cups water
1 red bell pepper
2 cups sliced mushrooms (about 6 ounces )
1 tablespoon Dijon mustard
1 tablespoon molasses
salt and pepper

Steps:

  • Heat the oil in a large soup pot over medium low heat. Add the onions and celery and saute for a few minutes until soft.
  • Add the vegetables up to the green beans in order, stirring after each addition. (I just chop one, add it and stir, then move on to the next.).
  • After you add the green beans, add the herbs, stock and water and bring to a boil.
  • Chop up the pepper and mushrooms and stir in with the mustard and molasses. Lower the heat to simmer.
  • Partially cover and simmer for ten minutes, or until the veggies are cooked.
  • Taste and add salt and pepper as you like.

4 Tbs. olive oil
1 large yellow onion, finely chopped
2 celery stalks finely chopped
10 garlic cloves, smashed
2 Tbs. tomato paste
1/2 cup medium-dry sherry
1/2 cup vegetable or chicken stock
1 tsp. sherry vinegar or red wine vinegar
1 butternut squash, about 2 1/2 lb.
3 parsnips
3 large carrots
1 tsp. dried tarragon
Salt and freshly ground pepper, to taste
Grated zest and juice of 1 lemon
1 bunch watercress, tough stems removed and leaves chopped

Steps:

  • In a large, heavy fry pan over medium-high heat, warm 2 Tbs. of the olive oil. Add the onion and celery and sauté until softened and beginning to brown, about 6 minutes. Add the garlic and tomato paste and stir for 1 minute. Pour in the sherry, stock and vinegar and stir to dislodge any browned bits from the pan bottom. Transfer the contents of the pan to a slow cooker. Peel and seed the butternut squash and cut into chunks. Peel the parsnips and carrots and cut into chunks. Add the squash, parsnips, carrots and tarragon to the slow cooker, season with salt and pepper, and stir to blend evenly. Cover and cook on low according to the manufacturer's instructions for 5 hours. The vegetables should be tender. Stir the lemon juice, to taste, into the stew, then transfer the stew to a warmed serving bowl or shallow individual bowls. Drizzle with the remaining 2 Tbs. olive oil, top with the watercress and a sprinkle of lemon zest, and serve immediately. Can sprinkle with parmesan cheese
