FRUIT SALAD
This simple, homemade fruit salad recipe is an ideal light, healthy side. With a citrus poppy seed dressing, you'll love its fresh taste!

- If you will not be serving the fruit salad right away, place all of the fruit except the banana in a large serving bowl: strawberries, pineapple, blueberries, kiwi, and grapes.
- In a small bowl or large measuring cup, whisk together the dressing: orange zest and juice, lemon zest and juice, honey, vanilla extract, and poppy seeds.
- Pour the dressing over the fruit and with a large spoon, toss gently to combine. Cover and refrigerate for at least 30 minutes to allow the juices to marry (1 hour is even better). Just before serving, stir in the banana. Sprinkle with fresh mint. Enjoy!

- In blender or food processor, place sugar, onion, salt, lemon juice and mustard; cover and process until blended.
- With machine running, add oil in slow steady stream, processing until thick and smooth. Add poppy seed; process a few seconds to mix.
- In large serving bowl, mix all salad ingredients. Pour dressing over salad; toss to coat.

This is one of my go-to fruit salad recipes! Fresh apples, mandarins, kiwi, bananas and pomegranate arils are all tossed with a sweet, bright poppyseed dressing. Always a party favorite! I've also tried this with pears in place of bananas for another delicious option.

- For the dressing: In a mixing bowl or jar whisk together lemon juice and sugar until sugar has dissolved.
- Mix in olive oil, vegetable oil and honey until well blended. Stir in poppy seeds.
- For the fruit salad: In a salad bowl toss together all of the fruit then pour dressing over top and gently toss to coat.
- Serve immediately for best results.
