VIRGINIA PEANUT SOUP

Rich, creamy and smooth, this Virginia Peanut Soup is the old-fashioned recipe made famous at the taverns in Colonial Williamsburg.

¼ cup butter
1 medium onion, chopped
2 ribs celery, chopped
¼ cup all-purpose flour
8 cups chicken broth
2 cups smooth peanut butter ((use a jar of store-bought peanut butter, or see note below to make your own natural peanut butter))
1 ¾ cups light cream
Garnish: chopped roasted salted peanuts, chopped fresh parsley; sliced green onion

Steps:

  • Melt butter in a large Dutch oven or soup pot over medium-high heat. Add onion and celery and sauté until soft, but not brown (about 5-7 minutes). Stir in flour until well blended, about 1 minute.
  • Add chicken broth, stirring constantly, and bring to a boil. Reduce heat to low and simmer broth uncovered for about 10 minutes (to allow the broth to thicken slightly). Remove from heat and puree with a hand-held stick blender, in a food processor, or in batches in a regular blender.
  • Add peanut butter and cream, stirring to combine. Heat over low heat, just until warmed through and peanut butter is melted (do not boil). Ladle into individual bowls and garnish with chopped peanuts, parsley and/or sliced green onion.

4 cucumbers, peeled, seeded and cut into l-inch slices
1/2 large onion, peeled and diced
1/2 stalk celery, sliced
1/2 green pepper, seeds removed and cut into strips
1 large ripe tomatoes, peeled and seeded
1 garlic clove, peeled and minced
1 1/4 cups broken pieces white bread
2 tablespoons extra virgin olive oil
1 cup water
2 tablespoons red wine vinegar
1/2 teaspoon salt
2 cups tomatoes or 2 cups v 8 vegetable juice
fresh ground black pepper

Steps:

  • Pass the cucumbers, onion, celery, green pepper, tomato, garlic and bread through the small die of a meat grinder, or chop finely (but do not puree) in a food processor fitted with the steel blade, using on and off pulsing action.
  • Combine with the remaining ingredients, season to taste and stir well. Serve very chilled.
  • Note: The soup can be made up to a day in advance and refrigerated, tightly covered.

1 1/2-2 quarts mixed salad greens (Boston, romaine, endive, leaf, etc)
1/2 lb baked ham, thinly sliced and cut into strips
1/2 lb turkey or 1/2 lb chicken, thinly sliced and cut into strips
1/2 lb cheddar cheese, thinly sliced and cut into strips
4 hard-boiled eggs, sliced
8 celery hearts
16 black olives
16 anchovy fillets
1 1/2 teaspoons salt
3/4 teaspoon white pepper
1/2 cup cider vinegar
1 1/2 cups vegetable oil

Steps:

  • Wash, drain, dry, and tear lettuce.
  • Arrange the greems on individual salad plates.
  • Place the remaining ingredients evenly over the top and around the greens.
  • Sprinkle lightly wtih oil and vinegar dressing.
  • Pass remaining dressing as needed.
  • Dressing: Dissolve salt and pepper in the vinegar.
  • Add oil and shake in a covered jar or whirl in the blender to keep it from separating.

2 lbs sweet potatoes
1/2 cup light brown sugar (divided)
2 tablespoons butter
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
2/3 cup milk

Steps:

  • Preheat oven to 400 degrees.
  • Grease 1.5 quart casserole dish.
  • Cook sweet potatoes in boiling salted water until soft when pierced with a two pronged fork.
  • Drain, peel, and mash potatoes.
  • Add remaining ingredients, except 2 tablespoons brown sugar.
  • Mix well.
  • Spoon into greased casserole dish and sprinkle remaining brown sugar on top.
  • Bake for 30 minutes.

1/2 cup Major Grey chutney
3 tablespoons Grand Marnier (or flavor or your choice)
