A traditional Italian soup that is full of fresh vegetables and Romano cheese. Sprinkle additional Romano on top before serving.

1 (3 pound) whole chicken
3 quarts water
11 carrots
6 stalks celery
2 onions
½ cup uncooked white rice
6 ounces baby spinach, chopped
½ cup grated Romano cheese
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon dried oregano
1 tablespoon lemon juice
3 (14 ounce) cans chicken broth
4 eggs, lightly beaten

Steps:

  • Cut up chicken into large pieces and place in a large soup pot with the water. Chop 8 carrots, 3 stalks of celery and 1 onion and place them in the pot as well. Bring to a boil, then cover, reduce heat and simmer 45 minutes, until chicken is tender. Remove chicken and reserve stock. When cool enough to handle, bone chicken and cut meat into bite-size pieces.
  • Process reserved stock in a blender or food processor or using an immersion blender and return it to the pot with the chicken meat. Chop the remaining 3 carrots, 3 stalks of celery and 1 onion and stir into the chicken mixture with the rice. Bring to a boil, then reduce heat and simmer until rice is tender, about 20 minutes.
  • Remove chicken mixture from heat and stir in spinach, Romano, salt, pepper, lemon juice and oregano. Set aside.
  • In large saucepan, bring chicken broth to a boil. Pour the eggs into the boiling broth, slowly, in a thin stream. Remove the broth from the heat and stir it into the chicken mixture. Serve hot.

This recipe was developed by my grandmother, Anna Buhal'tsev Bell Mersky, and then slightly improved by my mother, Sandy, and it is the MOST AUTHENTIC and BEST recipe for Jewish Chicken Soup that you will ever find. Trust me, it is GREAT!!!

1 whole fresh chicken
2 bunches carrots
2 stalks celery
3 large sweet potatoes
4 medium onions
2 bunches soup greens (anise tops)
1 -2 parsnip
pot stickers (used in place of kreplach)
salt and pepper
garlic granules

Steps:

  • Do not cut up the chicken.
  • Place the whole chicken in a very large pot.
  • Cover chicken with water.
  • Place on high heat and bring to a boil.
  • Cook for 5 minutes.
  • Remove from heat& skim the scum off the top.
  • Slice carrots across into pieces 1/4" thick and place into pot.
  • Slice celery the same as the carrots and place into pot.
  • Quarter onion and place into pot.
  • Peel& quarter the sweet potatoes and place into pot.
  • Cut up parsnips and place into pot.
  • Place the soup greens, which are the tops of anise, into the pot.
  • Discard the actual anise root.
  • Place pot back on the burner on medium-low heat and simmer.
  • Slightly season with salt, pepper and garlic to taste.
  • Cover and continue to simmer until vegetables are tender and the chicken is done and almost falling off the bone.
  • Remove the chicken from the pot and remove all of the chicken from the carcass.
  • Discard the carcass and return the chicken pieces back to the pot.
  • Taste to see if it is seasoned to your liking.
  • If it's not, adjust with more salt, pepper and garlic as needed.
  • Separately boil the pot stickers and then add them to the soup just before serving, or else you can make matzo balls as directed on the box of matzo ball mix, and then add the matzo balls to the soup just before serving.

5 cups chicken stock or 5 cups prepared broth
3 garlic cloves, thinly sliced
1 small carrot, peeled and julienned
1 stalk celery, julienned
2 tablespoons freshly grated parmesan cheese
4 tablespoons finely chopped fresh flat-leaf parsley
1 lb boneless skinless chicken breast
1/2 lb spinach leaves, washed well
2 eggs, lightly beaten
salt & freshly ground black pepper

Steps:

  • Cut chicken breasts into 1/2 inch thick slices.
  • In a saucepan, combine the stock and garlic and bring to a boil over medium-high heat.
  • Add the carrot and celery, cover, and cook until the vegetables are just tender, about 4 minutes.
  • Add the parmesan, 2 TBS of the parsley, the chicken and the spinach.
  • Return to a simmer and cook until the chicken is just cooked through, the spinach is wilted but still bright green and the cheese is melted, about 2 minutes.
  • Remove from the heat.
  • Pour the eggs into the soup and stir back and forth with a fork until white threads of cooked egg appear.
  • Season to taste with salt and pepper.
  • Ladle into warmed bowls and garnish with the remaining 2 TBS of parsley.
  • Serve immediately.
