CHICKEN WITH WILD MUSHROOM AND BALSAMIC CREAM SAUCE

This recipe is a modern take on the ol' Cream of Mushroom Chicken. This one is more healthful and almost as easy as pouring that condensed, salty mass out of a can. It will heal a long day!

1/2 pound orzo pasta
2 tablespoons extra-virgin olive oil, 2 turns of the pan
4 boneless, skinless chicken breasts, 6 ounces
Pepper
2 tablespoons butter
12 cremini or baby portobello mushrooms, sliced
12 shiitake mushrooms, stems removed and sliced
12 white mushrooms, sliced
2 large cloves garlic, chopped
1 tablespoon thyme leaves, a couple of sprigs, chopped
2 large shallots, thinly sliced
2 tablespoons all-purpose flour
1 1/2 cups chicken stock
1 tablespoon balsamic vinegar, eyeball it
3 tablespoons heavy cream or half-and-half, a couple turns of the pan
1/4 cup chopped flat-leaf parsley, a generous handful

Steps:

  • Heat a large pot of water to a boil. Salt the water and add orzo pasta. Cook to al dente.
  • Preheat a large nonstick skillet over medium-high heat and add extra-virgin olive oil, 2 turns of the pan. Season chicken liberally with salt and pepper and add to the hot skillet. Cook the chicken for 5 to 6 minutes on each side. Remove the chicken from the pan and cover with foil to keep warm.
  • Return the skillet to the heat, turn heat back a bit, and add the butter. Once the butter melts add the mushrooms and brown stirring occasionally for about 4 to 5 minutes. Once the mushrooms are brown season with salt and pepper then add the garlic, thyme and shallots. Cook stirring occasionally for about 2 minutes or until the shallots are wilted. Sprinkle the flour into the pan and cook 2 minutes more. Whisk in the stock, balsamic vinegar and the cream. Turn the heat up to high and simmer for about 2 minutes or until thickened. Slice the chicken on an angle. Add the parsley and the chicken back to the skillet to heat up, about 1 minute.
  • To serve, pile orzo on dinner plates and top with the sliced chicken and sauce.

1 pound assorted wild mushrooms, stems trimmed, wiped clean, and thinly sliced
1/4 cup chopped shallots

2 cups heavy cream
1/2 cup finely grated Parmesan
2 tablespoons finely chopped chives

Steps:

  • In a large pot of boiling salted water, cook the pasta until al dente. Drain and return to the pot. Cover to keep warm.
  • Meanwhile, in a large saute pan, heat the oil over medium-high heat. Add the mushrooms and cook, stirring, until soft, 3 to 4 minutes. Add the shallots, garlic, thyme, salt, and pepper, and cook, stirring, until fragrant, 2 minutes. Add the cream, increase the heat to high, and bring to a boil. Reduce the heat and simmer until the sauce thickens enough to coat the back of a spoon, about 5 minutes. Add the Parmesan and adjust the seasoning, to taste.
  • Add the pasta, stir to coat with the sauce, and cook until the pasta is heated through, 1 minute. Remove from the heat and divide among 4 serving bowls or plates. Sprinkle each serving with chives and serve immediately.

  • Dredge scallops in flour, shaking off excess, and season with salt and pepper. In large skillet set over moderate flame, heat olive oil and butter until hot. Add scallops and saute for 1 minute on each side. Transfer to sauce for just a minute and season mixture with fresh lemon juice and chervil.
  • Make the sauce: In a saute pan set over moderately high flame, heat the oil and butter until hot. Add the shallots and cook, stirring, 1 minute. Add the mushrooms, thyme and salt and pepper and cook, stirring occasionally, for 3 to 5 minutes, or until mushrooms are soft. Add the garlic and cook, stirring, 1 minute. This is an excellent recipe if you like mushrooms. I use a cobination of reconstituted Porcini mushrooms (that I can get dried at my local food store), baby bella, and button mushrooms that I soak in the porcini water. The combination is awesome.

2 tablespoons olive oil

NO-CREAM WILD MUSHROOM PASTA SAUCE



No-Cream Wild Mushroom Pasta Sauce image

I love this over 3-cheese ravioli, but you can easily use this over bow tie, linquini, or your favorite pasta. It is not difficult, rich in flavor and a bit lighter than a heavier cream sauce. The variety of all three mushrooms in this is what makes it so good. Now, I love shitake and porcini mushrooms, so I buy one or the other fresh, and the other dried to give a nice balance. But use what you can find. The dried mushrooms in this dish really add flavor. And, like all pasta dishes, garnish with good grated cheese - my choice is pecorino romano with this earthy mushroom dish.

8 ounces shiitake mushrooms, sliced
8 ounces cremini mushrooms, sliced
2 ounces dried mushrooms (I used porcini)
2 1/2 cups vegetable broth
1 cup mushroom broth (the liquid from the mushrooms you rehydrated)
1 teaspoon minced garlic
1 cup onion (cut in half and thin sliced)
4 scallions, diced (whites and greens)
1 teaspoon fresh rosemary, chopped fine
1 teaspoon dried thyme leaves
2 tablespoons fresh parsley, chopped fine
3 tablespoons olive oil
1 1/2 tablespoons cornstarch
salt
pepper

Steps:

  • Dried Mushrooms -- Rehydrate the mushrooms by adding 2 1/2 cups of boiling water to a bowl with the mushrooms and cover with plastic wrap. They will take about 10-15 minutes. Once they are re-hydrated and soft, thin slice. Don't throw away the liquid. You will be adding that to the broth.
  • Mushrooms -- In a large saute pan, add the olive oil and heat to medium high. Add in the mushrooms, onions, scallions, garlic, rosemary, thyme and rosemary. and cook about 7-10 minutes until the mushrooms get brown and the liquid from the mushrooms has evaporated, (mushrooms give off a natural liquid when cooked, but as they brown, the liquid will evaporate).
  • Once the mushrooms are brown, add in the broth (reserve 1/4 cup to add to the corn starch to make a slurry or thickening agent. This will be used to thicken your sauce at the end), and the liquid from re-hydrating the mushrooms to the mushroom and onion mixture. Cook on medium to medium low heat for about 8-10 minutes until the broth is reduced by about 1/2.
  • Finish -- Add the 1/4 reserved broth with the corn starch to make a slurry. This is what will thicken your sauce. Add to the mushrooms and bring to medium high heat. The sauce will begin to thicken. Continue to cook for a minute or two, and then add in the parsley and check for any seasoning, salt and pepper.
  • Serve -- I really love this over a 3-cheese ravioli (just store bought it fine), but you can use any pasta you like. Top with cheese and ENJOY!

WILD MUSHROOM ENCHILADAS WITH ANCHO CHILI-CREAM SAUCE

2 dried ancho chilies
4 large garlic cloves, peeled
2 cups whipping cream
4 teaspoons fresh lime juice
3 tablespoons butter
3/4 cup chopped onion
12 ounces fresh wild mushrooms (such as oyster and/or stemmed and sliced shiitake and portobello)
5 ounces feta cheese, crumbled
6 tablespoons chopped fresh cilantro
2 medium tomatoes, seeded, chopped
1 small avocado, pitted, peeled, cut into 1/2-inch pieces
8 6-inch-diameter corn tortillas

Steps:

  • Bring 2 cups water to boil in small saucepan. Remove saucepan from heat, add chilies and soak 30 minutes. Drain chilies, reserving 6 tablespoons soaking liquid. Cut stems off chilies. Cut chilies open. Scrape out seeds and discard. Combine chilies, 6 tablespoons reserved soaking liquid and garlic in blender and puree until smooth.
  • Preheat oven to 350°F. Combine cream and chili puree in heavy large skillet. Bring to boil. Reduce heat; simmer 3 minutes. Whisk in lime juice. Season with salt. Strain sauce; return to skillet. (Sauce can be made 1 day ahead. Cover and chill.)
  • Melt butter in another heavy large skillet over medium heat. Add onion and mushrooms and sauté until onion is translucent and mushrooms are tender, about 5 minutes. Add cheese, cilantro, tomatoes and 3 tablespoons cream sauce. Simmer until just heated through, about 4 minutes. Stir in avocado. Season filling with salt and pepper. Remove from heat.
  • Bring remaining cream sauce to simmer over low heat. Cook 1 tortilla in cream mixture until softened, turning to coat, about 15 seconds. Carefully transfer tortilla to baking sheet. Repeat with remaining tortillas. Cover remaining sauce and keep warm. Spoon generous 1/3 cup filling down center of each tortilla. Roll up tortillas, enclosing filling completely. Arrange seam side down on same baking sheet. Cover enchiladas with foil.
  • Bake enchiladas until heated through, about 10 minutes. Transfer to plates. Spoon some sauce atop each. Serve, passing any remaining sauce separately.

  • In a large saute pan over high heat, add olive oil. Add the red onion and saute until tender. Season with salt and crushed red pepper. Add the mushrooms and bay leaf and cook until mushrooms begin to brown, about 4 to 5 minutes. Deglaze the pan with the balsamic. Add the parsley and garlic and cook for 2 minutes. 1/3 cup dry Marsala
1 pound fusilli pasta
1 cup beef stock or canned beef broth
1/4 cup whipping cream
1 cup freshly grated Parmesan cheese (about 3 ounces)
2 tablespoons (1/4 stick) butter
Additional grated Parmesan cheese

Steps:

  • Place porcini mushrooms in small bowl. Pour 2 cups hot water over. Let stand until mushrooms soften, about 25 minutes. Using slotted spoon, transfer mushrooms to work surface and coarsely chop. Discard soaking liquid.
  • Heat olive oil in heavy large pot over medium-high heat. Add porcini, crimini and portobello mushrooms, minced garlic and bay leaf. Sauté until mushrooms are brown and tender, stirring often, about 10 minutes. Add Marsala and simmer until almost all liquid evaporates, scraping up browned bits, about 1 minute. Season mushroom mixture to taste with salt and pepper. Remove from heat. (Mushroom mixture can be prepared 1 day ahead. Cover and refrigerate.)
  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well.
  • Mix beef stock and whipping cream into mushroom mixture and simmer 3 minutes. Add 1 cup Parmesan cheese, butter and drained pasta; toss to coat. Cook until sauce coats pasta, stirring frequently, about 2 minutes. Season to taste with salt and pepper. Serve, passing additional grated Parmesan separately.

Steps:

  • To Make Asiago Basil Cream Sauce: Bring heavy cream, all seasonings, garlic, basil and chicken base to a low simmer in a 2 quart saucepan. Let it simmer for 10 minutes to develop flavors.
  • Carefully add the shredded cheese. Stir constantly to avoid breaking the sauce. You must not boil the sauce at any time or it will separate.
  • Cover the sauce and set it aside from the heat until you are ready to add it to the pasta.
  • To Finish the Pasta: In a large saute pan, over medium high heat, add bacon and stir occasionally.
  • Once bacon is about 3/4 cooked, season with salt, white pepper and granulated garlic add mushrooms and cook them thoroughly. Note: If there's excessive rendered bacon grease, remove some.

2 1/2 cups sharp Cheddar, grated
1 head broccoli, cut in small pieces, blanched

2 slices duck prosciutto, diced
Tricolor fusilli pasta, cooked to al dente, for serving, optional

Steps:

  • Preheat the oven to 350 degrees F. Grease an 8- by 8-inch baking dish with 2 tablespoons of the butter.
  • Melt 2 tablespoons of the butter in a large pot over medium heat, and then add the mushrooms and shallots and saute until the mushrooms are golden brown, about 10 minutes. Add the flour and cook for 2 minutes, and then add the milk, mustard powder, nutmeg and cayenne pepper and sprinkle with salt and pepper. Cook until thick, about 5 minutes. 1 ounce dried porcini mushrooms
2 cups hot water
3 tablespoons olive oil
1 lb cremini mushroom, chopped
1/2 lb portabella mushroom, stemmed, dark gills scraped off, chopped
2 garlic cloves, minced
1 bay leaf
1/3 cup dry marsala
1/4 cup whipping cream
1 cup parmesan cheese
2 tablespoons butter

Steps:

  • Place porcini mushrooms in small bowl. Pour 2 cups hot water over. Let stand until mushrooms soften, about 25 minutes. Using slotted spoon, transfer mushrooms to work surface and coarsely chop. Reserve soaking liquid.
  • Heat olive oil in heavy large pot over medium-high heat. Add porcini, crimini and portobello mushrooms, minced garlic and bay leaf. Sauté until mushrooms are brown and tender, stirring often, about 10 minutes.
  • Add Marsala and simmer until almost all liquid evaporates, scraping up browned bits, about 1 minute. Season mushroom mixture to taste with salt and pepper.
  • Mix 1 cup reserved mushroom liquid and whipping cream into mushroom mixture and simmer 3 minutes. Add 1 cup Parmesan cheese and butter. Cook, stirring frequently, about 2 minutes. Season to taste with salt and pepper.
  • Serve over polenta, pasta or rice passing additional grated Parmesan separately.

Pasta:
2 1/4 cups Bread Flour
3 Eggs
Water
Salt
Olive Oil
2 Tbsp. Butter
Ravioli Filling:
6-8 Shitake Mushrooms sliced
6-8 Baby Bella Mushrooms diced
6-8 Button Mushrooms sliced
Olive Oil
Salt
Pepper
2 sprigs Basil
2 sprigs Thyme
2 Tbsp Shallots
1 sprig Sage
1 sprig Chives
2 Tbsp Garlic
4 oz. White wine
Sherry Cream Sauce:
6 oz. Heavy Cream
3/4 cup Sherry
4 Tbsp. Butter
1 Tbsp. Shallots
2 Tbsp. Mushroom filling

Steps:

  • Pasta: Combine 2 cups of flour, 2 eggs, salt, olive oil, and water as needed in mixer and mix together until a dry consistency. Knead until dough sticks together. Refrigerate for at least 30 minutes. Run through pasta maker until fairly thin (setting 6 on the Kitchen Aid Pasta Attachment). Cut pasta into squares. Spoon one tablespoon filling into the center of one of the squares. Beat the remaining egg in a small bowl and brush the edges of the square. Place another square on top of the filling and press the edges. Lightly flour the ravioli so they do not stick together. Boil ravioli until done. Brown the ravioli in butter over medium high heat until lightly browned. Filling: Heat 3 Tbsp of olive oil in a large skillet over medium high heat. Sauté garlic and shallots in oil until browned. Add mushrooms and 2 Tbsp of oil. Sauté mushrooms for 3-5 minutes. Add 2 Tbsp. basil, 2 Tbsp. thyme, 1 Tbsp. sage, 1 Tbsp. chives, and white wine and cook for 4-5 more minutes. Sherry Cream Sauce: Sauté shallots in 2 Tbsp. butter over medium high heat until browned. Add 3/4 cup sherry and reduce by half. Add cream and remainder of herbs and mushroom mixture. Add remaining butter and cook until thickened.

1 tbsp butter
1 shallot, diced
2 cloves garlic, minced
2 cups sliced mixed wild mushrooms, such as cremini, shitake and oyster
1/2 cup white wine
1/2 cup 35% cream
1 tbsp chopped fresh parsley

Steps:

  • In skillet, melt butter over medium heat; sook shallot until softened, about 2 minutes. Add garlic; cook for one minute. Add mushrooms; cook over medium-high heat until softened and no liquid remains, about 5 minutes. Add wine; reduce heat and simmer for 4 minutes. Add cream, salt and pepper; simmer until thick enough to coat back of spoon, about two minutes. Stir in parsley.

ROAST SADDLE OF VENISON WITH WILD MUSHROOM-CREAM SAUCE



Roast Saddle of Venison With Wild Mushroom-Cream Sauce image

The saddle is a backcut of deer. Whilst with larger deer, this cut is removed to make filet, with smaller deer, it is better to do it on the bones to prevent drying out. This recipe makes lots of sauce, which should be served over dumplings, potatoes or rice. This is a combination of a few different recipes I had. I did it with a very small roe deer (a bit over 1kg for the saddle but would be good with large deer, just adjust the time according and you might need foil to cover the ham at the end to prevent burning.

1 venison saddle
2 tablespoons lard or 2 tablespoons duck fat, melted
salt and pepper
5 -8 slices dry-cured ham, thinly sliced (I need 5 for mine, must be dry-cured)
300 ml veal stock or 300 ml good beef stock
125 ml dry red wine (preferably what you intend to eat the meal with)
1 teaspoon butter
100 g wild mushrooms (I used Honey Fungus but any flavourful wild mushroom would work, note some types of Honey Fungus are)
1 small shallot, finely diced
200 ml cream
1 teaspoon cornstarch
1 tablespoon cold water

Steps:

  • Preheat oven to 220°C/425°F/Gas Mark 7.
  • Rub lard or duck fat on meaty side of saddle.
  • Season the saddle generously with salt and pepper.
  • Cover with ham slices and put on roasting tray and put it in the preheated oven for 20 minutes.
  • Lower oven to 150°C/300°F/Gas Mark 3.
  • Add wine and broth to roasting tray and roast for 10 minutes per 500g for medium-rare to medium. The temperature of the thickest part should 60-65°C/135-145°F.
  • While that the saddle is roasting, saute lightly the shallot and mushrooms in butter on medium heat and set aside.
  • When the saddle is ready, remove from oven and remove the ham and cover in foil, leaving for 20 minutes.
  • Pour the juices and wine from roasting pan into a sauce pan on high heat.
  • Mix cold water and starch and add to the sauce pan.
  • Bring to a boil and allow sauce to thicken.
  • After sauce thickens, put temperature to low, add cream and wild mushrooms mix and cook until warm.
  • Crumble the ham into the sauce and taste and add salt and pepper as necessary.
  • Serve with hot dumplings, potatoes or rice and a salad.

0.5 ounce(s) mixed dried wild mushrooms 15 g
3/4 cup(s) beef broth, low sodium 175 ml
2 teaspoon(s) canola oil, divided 10 ml
1 teaspoon(s) butter, softened 5 ml
1 tablespoon(s) finely diced shallots 15 ml
1/3 cup(s) dry white wine 75 ml
1/3 cup(s) 35% whipping cream 75 ml
2 - (5 oz) aaa beef medallions 150 g
- salt and pepper

Steps:

  • Preheat oven to 400°F (200°C). Place mushrooms in a bowl with warm broth and soak for 20 min. or until tender. Strain mushrooms and reserve broth.
  • In large saucepan on medium-high heat, add 1 tsp (5 mL) of oil, butter, shallots and mushrooms. Cook until shallots are caramelized, about 5 min. Add wine and deglaze the pan, about 3 min. Next add the broth and simmer, allowing the liquid to reduce by half, about 5 to 8 min. Add cream and cook another 2 min.
  • Meanwhile, season beef with salt and pepper. Add remaining oil to an ovenproof skillet and pan-sear beef on high heat, 1 min. per side, and place in the oven. Cook about 6 to 8 min. or until an instant-read thermometer reaches 145°F (63°C) for medium rare. .
  • Remove beef from oven and set aside to rest. Divide steaks among 2 plates, drizzle 3 tbsp (45 mL) mushroom sauce overtop (save any leftovers for another use) and serve
