2 (5 ounce) packages arugula
¼ cup roughly chopped cilantro
1 teaspoon fresh lemon juice
1 teaspoon olive oil
1 teaspoon balsamic vinegar
1 teaspoon red pepper flakes
1 pinch ground black pepper
¼ cup shaved Parmesan cheese

Steps:

  • Toss arugula and cilantro together in a large salad bowl. Drizzle arugula mixture with lemon juice, olive oil, and balsamic vinegar. Sprinkle with red pepper flakes and black pepper; toss salad again. If desired, add more lemon juice, olive oil, balsamic vinegar, red pepper flakes, and black pepper to taste.
  • Sprinkle salad with Parmesan cheese shavings and toss again to serve.

Wild Arugula and Beet Salad With Orange, Walnuts and Tarragon image

This is a salad filled with contrasting sweet and peppery flavors. Pungent wild arugula contrasts beautifully with sweet beets, anisy tarragon and juicy oranges. If you can find purslane, it makes a great addition to the salad, with its earthy flavor and almost juicy, delicate crunch. You can use a mix of colors for the beets. I roasted golden and red beets together, and the red beets bled into the outside layer of the golden beets, making their color striking in the salad.

3 cups wild arugula
1/2 cup chopped purslane, if available (substitute more arugula if not)
3 tablespoons chopped fresh tarragon
3 to 4 tablespoons chopped walnuts
2 large or 4 small or medium beets, any color or a mix, roasted peeled and cut in wedges
1 navel orange, peeled, pith removed, and sections cut from between membranes
1 teaspoon balsamic vinegar
Salt to taste
1 tablespoon sherry vinegar
1 small garlic clove, puréed or put through a press
1 tablespoon walnut oil
2 tablespoons extra-virgin olive oil
Freshly ground pepper (optional)

Steps:

  • Combine the salad ingredients in a large bowl.
  • Whisk together balsamic vinegar, salt, sherry vinegar, garlic, walnut oil and olive oil. Toss with salad. Season if desired with freshly ground pepper.

1 8-ounce piece ciabatta with crust (preferably day-old)
1 large garlic clove, peeled
1/4 cup plus 3 tablespoons extra-virgin olive oil
6 ounces arugula (preferably wild; about 10 cups packed)
2 tablespoons (or more) fresh lemon juice
3 ounces Parmesan cheese, shaved into strips with vegetable peeler

Steps:

  • Preheat oven to 400°F. Rub crust of bread with garlic clove. Tear bread into 1-inch pieces and place in large bowl; toss with 1/4 cup olive oil. Sprinkle bread lightly with salt; arrange in single layer on rimmed baking sheet. Bake until golden and crisp around edges, about 10 minutes. Cool. DO AHEAD: Can be made 4 hours ahead. Let stand at room temperature.
  • Place arugula in large bowl. Drizzle with 3 tablespoons olive oil and 2 tablespoons lemon juice, adding more lemon juice, if desired. Sprinkle with salt and pepper. Add 2/3 of croutons and half of Parmesan cheese and toss. Transfer to serving bowl; scatter remaining croutons and Parmesan cheese over and serve.

12 ounces wild arugula
1 medium head fennel, halved and thinly sliced
One 15-ounce can chickpeas, drained, rinsed and drained again
1 cup grape tomatoes, halved
1/4 cup fresh dill
2 tablespoons lemon juice
2 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
2 ounces thinly shaved Parmigiano-Reggiano

Steps:

  • Combine the arugula, fennel, chickpeas, tomatoes and dill in a large shallow bowl. Whisk together the lemon juice and olive oil and season with salt and pepper. Toss the salad with the dressing and top with the shaved cheese.

1/4 cup salt
1/4 cup brown sugar
1 tablespoon chipotle powder
1/2 tablespoon black pepper
1 tablespoon garlic, minced
2 pound rib eye, 3 inches thick
2 teaspoons olive oil
8 garlic cloves, minced
1 tablespoon shallots, minced
8 tomatoes, halved and cored
3 portobellos, sliced 1/2-inch thick
6 shiitakes, sliced
1/2 teaspoon thyme leaves
Salt and pepper
2 bunches arugula
1 1/2 cups sour cream
1/3 cup fresh horseradish, grated
1/4 cup minced parsley
1/2 teaspoon chipotle powder
Kosher salt, to taste

Steps:

  • In a small bowl, mix salt, sugar, chipotle powder, pepper and garlic. Rub vigorously into the steak. Place the steak in a sealed container and refrigerate overnight. Place steak over medium high hickory smoke fire and sear for 10 minutes on each side. Remove from heat and allow to sit for 10 minutes. Slice into 1/2-inch slices. Place on arugula and add ragout. Top steak with horseradish sour cream.;
  • In a saucepan place 1 teaspoon oil, garlic and shallots. Lightly brown. In a large bowl, toss tomatoes, mushrooms, 1 teaspoon oil and thyme and season with salt and pepper. Place tomatoes, skin side up, on medium hot grill for 8 minutes. Roughly chop tomatoes and add to the mushrooms.;
  • In a medium mixing bowl combine all ingredients. Mix well.;

HEARTY SWEET POTATO, ARUGULA & WILD RICE SALAD WITH GINGER DRESSING



Hearty Sweet Potato, Arugula & Wild Rice Salad with Ginger Dressing image

1 cup wild rice, rinsed
1/2 teaspoon fine sea salt, divided
1 1/2 pounds sweet potatoes (2 medium or 3 small), peeled and sliced into 1" cubes
1 1/2 tablespoons extra-virgin olive oil
3/4 cup raw pepitas (green pumpkin seeds), sunflower seeds, chopped pecans or almonds, or any combination thereof
5 ounces arugula
1/2 cup crumbled feta or goat cheese (about 2 ounces)
1/2 cup thinly sliced green onion
1/4 cup dried cranberries
1/2 cup extra-virgin olive oil
2 tablespoons apple cider vinegar, to taste
2 tablespoon Dijon mustard
1 tablespoon maple syrup or honey
2 teaspoons finely grated fresh ginger
1/2 teaspoon fine sea salt
20 twists of freshly ground black pepper

Steps:

  • To cook the wild rice: Bring a large pot of water to boil (or see Instant Pot option provided in notes). Add the rinsed rice and continue boiling, reducing heat as necessary to prevent overflow, for 40 minutes to 55 minutes, until the rice is pleasantly tender but still offers a light resistance to the bite. Remove from heat, drain the rice and return the rice to pot. Cover and let the rice rest for 10 minutes, then remove the lid, stir in ¼ teaspoon of the salt, and set aside.
  • Meanwhile, to roast the sweet potatoes: Preheat the oven to 425 degrees Fahrenheit. Line a large, rimmed baking sheet with parchment paper for easy cleanup. Place the cubed sweet potato on the pan, drizzle with the olive oil and sprinkle with ¼ teaspoon of the salt. Toss until the sweet potatoes are lightly and evenly coated in oil. Arrange the sweet potatoes in a single layer and roast for 25 to 30 minutes, tossing halfway, until they are caramelized on the edges and tender when pierced through with a fork. Leave the oven on and let the sweet potatoes cool for a few minutes.
  • To make the dressing, simply combine all of the ingredients in a small bowl and whisk until thoroughly combined. Set aside.
  • Combine the arugula, wild rice and roasted sweet potatoes (keep the parchment paper) in a large serving bowl or platter.
  • Spread the seeds and/or chopped nuts on your parchment-covered baking sheet. Bake for 3 to 4 minutes, until lightly golden and fragrant (be sure to set a timer; we're toasting at high heat here).
  • Spread the toasted seeds/nuts over the salad. Top with the crumbled feta, green onion and dried cranberries.
  • If you're serving the salad immediately, go ahead and drizzle most of the dressing on top (you probably won't use it all). Gently toss to combine, and let the salad rest for a few minutes so the rice has time to absorb some of the dressing. Serve.
  • If you're planning to have leftovers, divide the salad into portions and store the dressing separately. The salad and dressing will keep well, each covered in the refrigerator, for up to 5 days. Leftover dressing is great to keep on hand for future salads!

WILD ARUGULA, CELERY AND APPLE SALAD WITH ANCHOVY DRESSING



Wild Arugula, Celery and Apple Salad With Anchovy Dressing image

The dressing in this salad is inspired by a much more robust dressing in Jennifer McLagan's wonderful new cookbook, "Bitter." I have reduced the anchovies significantly, not because I don't adore anchovies, but to reduce the sodium levels, which would be too high if an entire can were used. The salad presents a delicious play of bitter, pungent, sweet and salty flavors.

3 anchovy fillets
5 tablespoons extra virgin olive oil
1 large garlic clove, green germ removed, minced
1 tablespoon fresh lemon juice or sherry vinegar
1 teaspoon Dijon mustard
Freshly ground pepper
4 cups arugula, preferably feathery wild arugula, stemmed
2 cups thinly sliced celery, from the inner stalks of the bunch
2 tablespoons chopped celery leaves
1 tart apple, such as a Pink Lady or Granny Smith, thinly sliced and tossed with 2 teaspoons lemon juice

Steps:

  • Make dressing. Rinse anchovies briefly and chop. Heat 2 tablespoons of olive oil over low heat in a small skillet and add anchovies and garlic. Stir until garlic is fragrant and just beginning to color and anchovies have broken down into smaller bits. Transfer to a mortar and pestle. Use the pestle to grind mixture into a paste. Add lemon juice or vinegar to the still-hot pan and stir to deglaze bottom of pan, then transfer to mortar and pestle. Add mustard. Work together, then slowly add olive oil, one tablespoon at a time, working each tablespoon into anchovy mixture before adding the next. Season to taste with freshly ground pepper.
  • In a salad bowl, toss together arugula, celery and celery leaves, and apple slices. Add dressing, toss until coated, and serve.

HERB-ROASTED HEN WITH WILD ARUGULA SALAD



Herb-Roasted Hen with Wild Arugula Salad image

This savory roasted hen, perfect for special occasions, comes from Ben Ford, executive chef at Ford's Filling Station.

1/2 onion, thickly sliced
1/2 bulb fennel, thickly sliced
1 whole (2-to-3-pound) chicken, preferably organic
Coarse salt and freshly ground black pepper
2 teaspoons minced fresh thyme leaves
1 tablespoon unsalted butter
Wild Arugula Salad

Steps:

  • Preheat oven to 450 degrees. Fit a roasting pan with a rack; place onion and fennel slices on top of rack and set roasting pan aside.
  • Remove giblets from chicken and discard or reserve for another use. Rinse chicken inside and out and pat dry, very well. Season cavity with salt and pepper and truss chicken with kitchen twine.
  • Generously season outside of chicken and set on vegetables in roasting pan. Transfer to oven and roast until chicken reaches 165 degrees on an instant-read thermometer inserted into the thickest part of the thigh (avoiding bone), 50 to 60 minutes.
  • Remove chicken from roasting pan and stir thyme and butter into pan juices. Baste chicken with pan juice mixture and let stand 15 minutes.
  • Remove twine and place chicken breast side up. Cut through the skin between breast and thigh. Gently pull leg away to expose joint. Cut through joint to free the whole leg. Cut off wings at joints. Cut through joint where drumstick meets the thigh in a firm downward motion. Slice each breast half from bone, working knife along contour of rib cage. Serve chicken pieces with arugula salad.
