BOURBON GLAZED SALMON
This simple salmon with bourbon glaze is absolutely delicious! It's a simple and delicious weeknight dinner that only requires 7 ingredients - and it's perfect for the whole family!

- Preheat oven to 425 F.
- For the glaze: In a small saucepan, combine the bourbon, sugar, soy sauce, garlic and mustard. Bring to a boil and simmer on low for 10-15 minutes, or until reduced by half. Remove from heat and let sit to thicken.
- Pat salmon fillets dry and season with salt and pepper on both sides. Lay the salmon skin side down on a lightly oiled wire rack set over a baking sheet (to catch the drips). If you don't have a rack, a baking sheet will work just fine. Bake for about 10-15 minutes or so, depending on the size of your fish. When the salmon is nearly done, turn the broiler on in your oven. With a food brush, spread the glaze on top of the salmon. Be generous with your glaze!
- Return to the oven and broil (not too close to heat) for about 30 seconds. Watch carefully that glaze doesn't burn. Repeat the process: take out the salmon, brush with more of the glaze and broil for a few seconds. Remove from oven.
- Arrange the fillets on each plate and drizzle each serving with the remaining glaze. Enjoy!

- Pre-heat your oven to 450 degrees.
- Juice lemon and combine with brown sugar into a medium sized bowl.
- Add bourbon until it becomes a spreadable paste. (You might not use all 1/8 cup).
- Cover a lipped baking pan with foil. If using fillets place salmon skin side down directly on the foil - do not grease.
- Spread bourbon paste on top of your salmon.
- Cook on middle shelf for about 20 to 25 minutes or until fully cooked.
- Wedge a spatula between the salmon and the skin and remove fillet. the skin will remain on the foil.

- Heat olive oil, and 1 tablespoons butter in medium frying pan over medium-high heat.
- Lightly salt skin side of salmon.
- Rub flesh side of salmon with half of sage, salt and pepper to taste.
- Place salmon skin side down in pan. Cook until salmon is cooked halfway through. Don't worry about burning the skin as it can take a good deal of heat and tastes better the crispier it gets.
- Remove salmon from pan and set aside.
- Add remaining butter, sage, onions and garlic to pan. Sautee until onions are slightly transparent.
- Return salmon to pan flesh side down and cook 3-5 minutes or until cooked through and flaky.
- Remove from pan and serve immediately with onions on top.

- Combine the pineapple juice, soy sauce, brown sugar, bourbon, pepper and garlic powder in a medium bowl. Stir to dissolve the sugar. Add the oil.
- Be sure all the skin is removed from the salmon. Place the filets in a shallow dish and pour the bourbon marinade over them, saving a little to brush on the fish as it cooks. Put a lid over the fish and refrigerate for at least an hour. A few over is even better.
- Preheat your barbeque or stovetop grill over medium-high heat. Cook the fish for 5 to 7 minutes per side or until each filet is cooked all the way through. Regularly brush the filets with the marinade.
- Arrange the filets on each plate with the chives sprinkled over the top.
