A flavorful shrimp and pasta dish that can be ready in only 20 minutes. Toss with Italian seasonings and parmesan and you'll have a crowd-pleasing dinner on the table in no time.

1/2 lb whole wheat penne pasta
Olive oil cooking spray
1 lb raw shrimp, peeled
Sea salt
Pepper
1 tablespoon extra virgin olive oil
1/4 cup fresh finely chopped basil leaves
1 tablespoon finely chopped Italian parsley leaves
1 tablespoon finely chopped fresh thyme leaves
1/2 cup freshly grated Parmesan cheese

Steps:

  • Cook the penne according to package directions. Drain well.
  • Meanwhile, spray large skillet with olive oil cooking spray. Heat over medium heat until hot; add the shrimp. Salt and pepper liberally. Cook, stirring frequently 5 to 7 minutes or until opaque and thoroughly cooked. Remove from heat.
  • In a large bowl, combine cooked pasta, shrimp, olive oil, basil, parsley, thyme and Parmesan cheese. Toss to combine.
  • Serve immediately.

Penne with Roasted Tomatoes, Garlic, and White Beans image

3 large tomatoes, cut into wedges
4 cloves garlic, unpeeled
2 tablespoons olive oil
1/4 teaspoon salt
Freshly ground black pepper
1(15 ounce) can cannellini beans
1/2 pound penne pasta
1/4 cup fresh basil leaves, torn
2 tablespoons freshly grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F.
  • Slice each tomato into 8 wedges and discard the seeds. Put the tomato wedges and garlic into a 9 by 13-inch roasting pan. Drizzle with 1 tablespoon of olive oil and sprinkle with salt and a few turns of pepper. Roast in the oven, uncovered, for 40 minutes.
  • Drain the beans into a large colander in the sink. Cook the pasta according to the directions on the package. Drain the pasta into the colander containing the beans, so the hot pasta water will warm the beans. Return drained pasta and beans to the pasta pot.
  • When the tomatoes are done, pick out the garlic cloves, squeeze the garlic out of the skin into a small bowl and mash with a fork. Pour the roasted tomatoes into the pasta pot, add the garlic, the remaining 1 tablespoon of olive oil, the basil and additional salt and pepper, to taste. Toss to combine. Serve topped with the Parmesan.

1/2 pound whole-wheat spaghetti pasta
1 clove garlic, minced
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
1 tablespoon olive oil
4 (4-ounce) pieces salmon
1/4 cup chopped fresh basil leaves
3 tablespoons capers
1 lemon, zested
2 tablespoons lemon juice
2 cups fresh baby spinach leaves

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta and transfer to a large bowl. Add the garlic, extra-virgin olive oil, salt, and pepper. Toss to combine.
  • Meanwhile, warm the olive oil in a medium skillet over medium-high heat. Season the salmon with salt and pepper. Add the fish to the pan and cook until medium-rare, about 2 minutes per side, depending on the thickness of the fish. Remove the salmon from the pan.
  • Add the basil, capers, lemon zest, and lemon juice to the spaghetti mixture and toss to combine. Set out 4 serving plates or shallow bowls. Place 1/2 cup spinach in each bowl. Top with 1/4 of the pasta. Top each mound of pasta with a piece of salmon. Serve immediately.

3 tablespoons extra virgin olive oil
1 cup onion, chopped
1 red bell pepper, finely chopped
4 celery ribs, finely chopped
3 garlic cloves, minced
2 cups canned white beans, rinsed and drained
2 cups vegetable stock
1 teaspoon crushed red pepper flakes
2 (6 ounce) cans tuna packed in oil, drained, rinsed, and flaked
salt & freshly ground black pepper
1 lb whole wheat spaghetti

Steps:

  • Bring a large pot of water on to boil.
  • Heat the oil in a large skillet over medium low heat.
  • Add the onion and cook until softened.
  • Add the red pepper, celery, and garlic and cook for 3 minutes more.
  • Stir in the white beans and vegetable stock. Bring to a boil and simmer, for 5 minutes.
  • Add the hot pepper flakes and tuna, season with salt and pepper, to taste, and simmer until heated through.
  • Keep warm while you cook the pasta according to apckage directions.
  • Drain pasta and transfer to a bowl.
  • Toss with the sauce.

3/4 lb whole wheat spaghetti
4 teaspoons olive oil
1 onion, chopped
1 cup mushroom, sliced
4 garlic cloves, minced
1 cup beans, rinced and drained (I used black beans but any beans would work well)
1 lb shrimp, peeled and deveined
1 cup chicken broth
2 teaspoons lemon juice
1/2 teaspoon red pepper flakes
1/4 cup basil leaves, sliced

Steps:

  • Cook spaghetti according to package directions, drain.
  • While spaghetti is cooking, in a skillet over medium high heat heat oil.
  • Add onion, garlic and mushrooms (3-5 minutes).
  • Stir in beans, shrimp, broth, lemon juice and red pepper; cover and bring to a boil. Reduce heat to a simmer and simmer covered for 3-5 minutes or until shrimp is cooked.
  • In a large bowl toss shrimp mixture with pasta. Sprinkle with basil and toss again.
