1 1/2 cups water
1 teaspoon honey
1 1/2 teaspoons olive oil
1/2 teaspoon salt
2 -4 cups whole wheat flour
2 tablespoons vital wheat gluten
1 1/2 tablespoons yeast
1 teaspoon garlic powder (optional)

Steps:

  • Mix water, oil, honey and yeast.
  • Add wheat gluton, garlic powder (optional) and two cups of the flour.
  • If you are using a mixer like a Bosch, Dimension or a KitchenAid you add additional flour until the sides of the mixer come clean.
  • Knead about 7 minutes in your mixer.
  • If mixing by hand add one cup at a time until the right consistence and knead until smooth and elastic.
  • If you choose you can let the dough rise but I just divide the dough and half and roll out one on my pizza stone.
  • After you roll the dough out pierce the rolled out pizza dough with a fork.
  • Bake the pizza crust 450 degrees for about five minutes.
  • Add your toppings such as sauce and cheese or whatever you want on pizza and then put back into the oven at 450 for about 10 minutes.
  • Repeat for the second crust.

1 teaspoon instant yeast
1/2 teaspoon sugar
1/2 ml salt (less than 1/8 tsp)
75 ml warm water (or a bit more)
30 ml all-purpose flour
1 tablespoon ground flax seeds

Steps:

  • Preheat oven to 425.
  • In a large bowl, stir together first 4 ingredients.
  • Pour warm water into first 4 ingredients, mixing strongly.
  • Add flaxseed first, then add additional flour and stir until dough forms a ball, noting that not all the flour will likely be picked up by the dough ball.
  • gently knead dough on floured surface until smooth.
  • Cover and let rise for 5 minutes.
  • grease 9inch pie plate, and spread dough in it.
  • put on tomato sauce, toppings, then cheese, and put in oven for 15-20 minutes.

3 1/2 cups white whole wheat flour
1 teaspoon salt
1 tablespoon active dry yeast
1 tablespoon extra virgin olive oil
1 1/2 cups warm water

Steps:

  • In a large bowl, dissolve sugar in warm water. Sprinkle yeast over the top, and let stand for about 10 minutes, until foamy.
  • Stir the olive oil and salt into the yeast mixture, then mix in 2 cups of the whole wheat flour until dough starts to come together. Tip dough out onto a floured surface, and knead until all of the flour has been absorbed, and the ball of dough becomes smooth, about 10 minutes. Place dough in an oiled bowl, and turn to coat the surface. Cover loosely with a towel, and let stand in a warm place until doubled in size, about 1 hour.
  • When the dough is doubled, tip the dough out onto a lightly floured surface, and divide into 2 pieces for 2 thin crust, or leave whole to make one thick crust. Form into a tight ball. Let rise for about 45 minutes, until doubled.
  • Preheat the oven to 425 degrees F (220 degrees C). Roll a ball of dough with a rolling pin until it will not stretch any further. Then, drape it over both of your fists, and gently pull the edges outward, while rotating the crust. When the circle has reached the desired size, place on a well oiled pizza pan. 1 tablespoon active dry yeast

CRUST
1 1/2 c. stoneground whole wheat flour
2/3 c. oat bran
1 T. active dry yeast
2 t. kosher salt
1 1/2 T. olive oil
1 T. molasses
about 1 c. warm water
TOPPING
4 oz. baby spinach (about 4 cups loosely packed)
3-4 ripe tomatoes, seeded and diced
2 cloves garlic, minced
1 T. olive oil
3 oz. crumbled feta cheese
2 T. grated romano cheese
2 T. chopped kalamata olives
1/4 t. freshly ground pepper
pinch freshly grated nutmeg (optional)

Steps:

  • Prepare dough: Mix molasses and yeast into warm water (110-120°) and rest for 10 minutes to proof (alternately- skip this step and mix all ingredients together at once). Put dry ingredients in bowl of stand mixer and add and mix in wet ingredients with paddle attachment until combined. Change to dough hook and knead for 10 minutes on low to medium speed. (Alternately, mix all ingredients with spoon in large bowl, then knead by hand for 10 minutes). Let dough rest until doubled, about 45 minutes. While dough is rising, preheat oven to 475° with pizza stone on lowest rack position possible. Topping (mix and lest rest while dough is rising) Roughly chop spinach and add to large mixing bowl. Add remaining ingredients and mix well. Let rest and "marinate" while dough is rising. Pizza: Flour your counter surface, pull out dough onto surface and press into shape to match your pizza stone (round or rectangular) until dough is about 1/8 - 1/4" thick (do not punch down dough). Use fingertips to press out dough, keeping air bubbles in dough for a light crust. Sprinkle cornmeal or flour on pizza peel (or rimless baking sheet) and place dough on peel. Brush 2 t. olive oil on dough (optional). Bake in oven for about 3-4 minutes until partially cooked. Remove from oven and spread topping on dough, getting close to edges. Place back in oven and finish cooking (about 7-10 minutes). Remove from oven and let cool slightly on a rack (to keep crust from getting soggy). Cut into desired slices and enjoy!

1/4 cup safflower or extra-virgin olive oil
2 tablespoons natural granulated sugar
2 cups whole-wheat flour
3 cups unbleached all-purpose flour
1 teaspoon salt

Steps:

  • Combine the yeast with 2 cups warm water in a medium bowl. Let stand for 10 minutes to dissolve. Stir in the oil and sugar.
  • In a large mixing bowl, combine the flours and salt. Make a well in the center and stir in the yeast mixture. Work everything together, first with a wooden spoon and then with your hands, to form a dough.
  • Turn out the dough onto a well-floured board and knead it for 8 minutes, adding flour until the dough loses its stickiness. Place the dough in a floured bowl, cover it with a tea towel, and put it in a warm place. Let it rise until doubled in bulk, about 1 to 1 1/2 hours.

I have been trying to remove the "white" in my diet as much as possible but its hard when most "healthier" foods are 2xs more expensive, I just dont get that. In my transition I needed to adjust our regular quick dinner of pizza into something I have to make on my own. I started with a basic recipe and started tweeking from there. I think that this is the final draft and I am pretty satisfied on how this crust has turned out. Try it you may like it.

2 cups whole wheat flour
1/2 teaspoon salt
1 teaspoon garlic salt
1 1/4 teaspoons instant yeast (quick rise)
2 tablespoons sodium-free seasoning (mrs.dash type)
2 tablespoons organic honey

Steps:

  • Mix the first 5 dry ingredients in a bowl. Add the wet ingredients and mix well until dough leaves the side of the bowl, I usually do this with a serving spoon and then a use my hands.

1 package active dry yeast (about 2 1/4 teaspoons)
1 cup warm water (100° to 110°)
1 1/2 cups all-purpose flour (about 6 3/4 ounces), divided
1 cup whole wheat flour (about 4 3/4 ounces)
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/4 cup chopped fresh basil
Cooking spray
2 tablespoons stone-ground yellow cornmeal
Remaining ingredients:
2 plum tomatoes, thinly sliced (about 1/2 pound)
1 cup (4 ounces) shredded fontina cheese
3 tablespoons chopped pitted kalamata olives
1/2 cup (2 ounces) shredded part-skim mozzarella cheese
1 tablespoon pine nuts, coarsely chopped
Cracked black pepper (optional)

Steps:

  • To prepare dough, dissolve honey and yeast in 1 cup warm water in a large bowl; let stand 5 minutes. Lightly spoon flours into dry measuring cups; level with a knife. Add 1 1/4 cups all-purpose flour, whole wheat flour, salt, and 1/8 teaspoon freshly ground pepper to yeast mixture; stir until a soft dough forms. Turn dough out onto a lightly floured surface. 2 (1/4 ounce) envelopes yeast (.5 oz total)
1 1/4 cups warm water
1 teaspoon sugar
1 3/4 cups flour
1 1/4 cups whole wheat flour

1/4 cup corn oil

Steps:

  • Oven 450. I like thin, crunchy crust - I bake crust on a drying rack right on oven shelf.
  • Combine sugar into water, add yeast. Set aside.
  • Combine flours and salt.
  • Pour in yeast and corn oil.
  • Mix or hand knead for 3 minutes.
  • Place in oiled bowl, cover, and let rise 30 minutes in a warm place.
  • Punch down and divide for two crusts.
  • You can freeze dough up to one month. Thaw in refrigerator 8-12 hours or room temp 2-3 hours. No need to let it rise after thawing.

  • For crust:.
  • Put ingredients into bread machine in order manufacturer calls for.
  • Select dough cycle. (Knead and first rise only) Add more water, a teaspoon at a time, if needed, to make dough form a smooth ball.
  • After machine finishes, remove dough and roll out on a lightly floured surface, to a circle, to fit 15" pizza pan. Spray pan and put crust on it. ( I have great success with Airbake Pizza Pan).
  • Meanwhile, heat 2 tbls. olive oil in skillet and saute onion and mushroom, with rosemary, until onions are soft. Stir in salt and pepper, and remove from heat and cool.
  • Drain off liquid and save for use in soup or pasta sauce.
  • To make pizza:.

  • Brush crust with remaining 2 tbls. oil. Spread mushrooms and onions over crust. Sprinkle with cheeses.

1 tsp white sugar
1½ c warm water (110°)
1 Tbsp active dry yeast (use only active dry)
1 Tbsp evoo (extra virgin olive oil)
1 tsp salt
2 c whole wheat flour
1½ c all-purpose flour

  • 1. In a large bowl, dissolve sugar in warm water. Add yeast, dissolve and let stand 10 minutes until it proofs and is foamy. Add olive oil and salt to yeast mixture. Then add whole wheat flour and 1 cup all-purpose flour until dough begins to come together. Put dough onto surface dusted with all-purpose flour. Knead until flour has been absorbed and ball of dough is smooth - about 8 - 10 minutes. Coat a bowl with EVOO and add ball of dough and coat surface of dough with the oil. Cover top of bowl with a kitchen towel and place in oven with the light on to rise for about an hour. It should be doubled in size. When dough has risen, turn dough onto lightly floured surface and divide into 2 pieces for thin crust or leave it whole for a thick crust. Form into a tight ball and let rise about 45 minutes. Preheat oven to 425°. Roll dough with a rolling pin and pull dough with it shaped over your fist to desired size of pizza pan. Place on well oiled or sprayed pan. Top with your favorite toppings.
