Whole-Wheat Pasta Salad with Walnuts and Feta Cheese image

1/2 pound whole-wheat fusilli or other spiral shaped pasta
1/2 cup walnuts
1/2 cup crumbled feta cheese
1/2 cup diced red onion
1 1/2 cups chopped baby spinach leaves
2 tablespoons walnut oil
2 tablespoons red wine vinegar
1 clove of garlic, minced (about 1/2 teaspoon)
1/2 teaspoon Dijon mustard
Salt
Freshly ground black pepper

Steps:

  • Cook the pasta according to the directions on the package. Drain the pasta, rinse it under cold water, and put it in the refrigerator to chill.
  • In a dry saute pan toast the walnuts over a medium-high flame until they are fragrant, about 2 minutes. Set the walnuts aside to cool then chop them coarsely.
  • In a large bowl, toss together the chilled pasta, walnuts, feta cheese, onion, and spinach. In a small bowl whisk the oil, vinegar, garlic and mustard. Pour the dressing over the pasta salad and toss to combine. Season with salt and pepper.

¼ cup apple cider vinegar
¼ cup olive oil
¼ cup crumbled feta cheese, or to taste
6 leaves fresh basil, chopped
salt and ground black pepper to taste
1 bunch asparagus, trimmed and chopped
3 tomatoes, chopped
2 large carrots, chopped
1 bunch green onions
4 cloves garlic, minced

Steps:

  • Bring a large pot with lightly salted water to a rolling boil. Cook rotini at a boil until the pasta is cooked yet slightly firm to the bite, about 8 minutes; drain.
  • Rinse the pasta with cold water until completely chilled; drain completely.
  • While the pasta cooks, whisk the apple cider vinegar and olive oil together in a large bowl until blended. Stir feta cheese, basil, salt, and black pepper into the vinaigrette.
  • Fold the asparagus, tomatoes, carrots, green onions, and garlic into the vinaigrette to coat evenly.
  • Stir the cooled pasta into the vegetable mixture; toss until evenly mixed.

1 (12 ounce) box whole wheat rotini pasta
3 tablespoons extra-virgin olive oil
3 tablespoons white vinegar
lemon, juiced
1 tablespoon honey
2 avocados - peeled, pitted, and chopped
1 green bell pepper, sliced
1 large carrot, cut into matchstick-size pieces
6 green onions, sliced
1 stalk celery, sliced
1 clove garlic, minced
2 teaspoons chopped fresh basil
2 teaspoons chopped fresh parsley
2 teaspoons chopped fresh cilantro
1 teaspoon lemon zest
salt and ground black pepper to taste

Steps:

  • Bring a large pot of salted water to a boil. Cook the rotini at a boil until tender yet firm to the bite, about 10 minutes; drain and run under cold water to prevent sticking.

1 1/2 pounds vine-ripened tomatoes chopped
1/2 cup red onion, chopped fine
2 garlic cloves, minced and mashed to a paste with 1 teaspoon salt
2 tablespoons red-wine vinegar
1/4 cup olive oil (preferabley extra-virgin) plus additional for brushing zucchini
1 1/2 pounds zucchini, cut diagonally into 1/3-inch-thick slices
1 pound whole-wheat penne or other tubular pasta
2/3 cup Kalamata or other brine-cured black olives, chopped coarse
6 ounces ricotta salata or feta cheese, diced
1 1/2 cups whole small or torn large fresh basil leaves

Steps:

  • In a large bowl gently stir together tomatoes, onion, garlic paste, vinegar, and 1/4 cup oil
  • Brush one side of zucchini slices lightly with additional oil and season with salt and pepper. Heat a well-seasoned ridged grill pan over moderate heat until hot and grill zucchini, oiled sides down, in batches, brushing tops with more oil before turning, 1 to 2 minutes on each side, or until just tender but not soft. Transfer zucchini as grilled to a small bowl.
  • In a kettle of salted boiling water cook pasta until just tender and drain well. Add hot pasta to tomato mixture and toss well. Cool pasta slightly and stir in zucchini, olives, cheese, basil, and salt and pepper to taste. Pasta may be made 4 hours ahead and kept covered at room temperature.
  • Serve pasta warm or at room temperature.

1 large red bell pepper
1 teaspoon sugar
1 tablespoon red wine vinegar
Kosher salt
1 pound whole wheat fusilli pasta
1 cup Nut-Free Basil Pesto
1/2 cup finely grated Parmesan
Fresh basil leaves, for garnish, optional
3 cups fresh basil leaves
2 large cloves garlic, grated
1 teaspoon sugar
Generous pinch kosher salt, or more as needed
1/2 to 2/3 cup extra-virgin olive oil
1/2 cup finely grated Parmesan

Steps:

  • Place the pepper directly over a gas flame to char and cook, turning, about 3 minutes per side. Place the pepper in a bowl and let sit, uncovered, until cool enough to handle.
  • Place the pepper on a cutting board. Remove the seeds and core and open the pepper up so it lies flat on the cutting board, charred skin-side up. Use a kitchen towel to wipe the charred skin away. Sprinkle the pepper with the sugar, then chop the pepper into 1/4-inch dice. Place the diced peppers back in the bowl and drizzle with the vinegar. Set aside.
  • Bring 4 quarts water to a rolling boil in a large pot. Add a generous amount of salt. (It should taste like seawater.) Cook the pasta, stirring from time to time, until "al dente" (chewy but not hard or raw tasting), 8 to 10 minutes. Drain, reserving 1 cup of the pasta water.
  • Transfer the pasta to a large bowl and toss with the pesto. If the pesto is too thick, add some pasta water to thin it out. Place half of the pasta in a serving bowl, then top with half of the Parmesan and half of the roasted peppers. Top with the remaining pasta, Parmesan and roasted peppers. Garnish with fresh basil and serve.
  • Pulse the basil with the garlic, sugar and salt in a food processor. Slowly stream in 1/2 cup olive oil and 1/4 cup water through the top of the machine, pulsing until almost completely smooth. Taste for seasoning. Add more oil if too chunky or dry. Transfer to a bowl and stir in the Parmesan.

2 (5 ounce) cans skinless, boneless salmon, drained
1 cucumber, thinly sliced
2 (5.3 ounce) containers Greek yogurt
⅔ cup mayonnaise
2 teaspoons dried dill weed
1 teaspoon onion powder
2 Roma tomatoes, thinly sliced

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in rotini, and return to a boil. Cook uncovered, stirring occasionally, until rotini has cooked through, but is still firm to the bite, 10 to 12 minutes. Drain and rinse with cold water.
  • Transfer pasta to a large bowl.
  • Toss salmon and cucumber in with rotini, flaking the salmon as you stir.
  • Combine Greek yogurt, mayonnaise, dill, and onion powder in a small bowl.
  • Spoon yogurt mixture over rotini and gently combine.
  • Chill in the refrigerator for at least 30 minutes.
  • Arrange slices of Roma tomatoes on the salad before serving.

This is always a hit at my BBQ's because it is so light and no cream based products in it. They also like it because I use whole wheat pasta, which is much more health friendly. It's great cold in the summer but also quite good hot in the winter. Add some chicken breast and make it a complete and healthy pasta dish!

1 lb whole wheat fusilli (cork screw pasta)
1 pint cherry tomatoes, sliced in half
1 sliced red pepper
1 sliced yellow pepper
1 sliced red onion
1 shallot, minced
3 finely minced garlic cloves
1 lb fresh mozzarella cheese, diced
1 lemon, juice of
fresh basil, chiffonade (thin strips)

Steps:

  • Boil the pasta according to directions on the package. I have never been a fan of al dente for whole wheat pasta because it has a little bit more of a bite to it than regular al dente pasta. But cook it to whatever bite you would prefer. Strain in colander and transfer to a bowl large enough to toss in olive oil.
  • Sauté the shallots, peppers and onions in olive oil until they are soft. Add the tomatoes, and sauté until they get soft. Add the garlic at the end so it does not burn. Transfer the mixture into the pasta and toss. Add diced mozzarella cheese, basil, lemon juice, salt and pepper to taste. Toss everything together and enjoy!

1/2 box whole wheat pasta (Whestbrae natural)
Wild Thymes Balsamic Vinagrette
1/2 pint Cherry tomatoes
1/4 cup dried fruit (cranberries)
Grated cheese (manchego, parmesan, feta)
Grilled Shrimp
1 Lemon

Steps:

  • Prepare sphegetti as directed. Rinse noodles in cold water. Add spinach to help wilt slightly. In the meantime, zest a lemon and then season shrimp with lemon, salt, pepper and grill. Mix remaining ingredients together. Add vinagrette to taste.
