Salt
1 pound cavatappi (hollow corkscrew shaped pasta) or other short cut pasta
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup chicken stock
1 1/2 cups whole milk
Freshly ground black pepper
A few grates nutmeg
1 cup shredded Gruyere
1 cup shredded white sharp Cheddar
2 tablespoons Dijon mustard
1/4 pound French ham, deli sliced, finely chopped

Steps:

  • Heat a large pot of salted water to a boil, drop in pasta. Cook pasta to just shy of al dente.
  • Heat sauce pot with butter over medium heat, whisk in flour and cook for 1 minute, whisk in stock then milk, allow the sauce to thicken, and season with salt, pepper and nutmeg. Stir in cheeses in a figure eight motion. Stir in Dijon and ham and remove the sauce from heat. Drain pasta and combine with sauce.

1 pound elbow pasta
4 tablespoons butter
1 small onion, chopped
1/4 cup all-purpose flour (spooned and leveled)
4 cups milk
1/8 teaspoon cayenne pepper, (optional)
1 1/4 cups shredded yellow cheddar cheese (5 ounces)
1 1/4 cups shredded white cheddar cheese (5 ounces)
8 ounces ham, diced into 1/2-inch pieces
2 slices white sandwich bread

Steps:

  • Preheat oven to 375 degrees. In a large pot of boiling salted water, cook pasta until al dente; drain and reserve. Meanwhile, in a 5-quart heavy pot, melt butter over medium heat. Add onion; cook, stirring occasionally, until softened, 3 to 5 minutes. Whisk in flour to coat onion. In a slow steady stream, whisk in milk until there are no lumps.
  • Cook, whisking often, until mixture is thick and bubbly and coats the back of a wooden spoon, 6 to 8 minutes. Stir in cayenne, if using, and 1 cup each yellow and white cheddar cheese. Season with 1 teaspoon salt and 1/4 teaspoon pepper.
  • Toss pasta with cheese mixture; fold in ham. Transfer to a 9-by-13-inch baking dish or individual dishes. Set aside.
  • In a food processor, pulse bread until large crumbs form. Toss together with remaining 1/4 cup each white and yellow cheddar, and 1/4 teaspoon salt. Top pasta with breadcrumb mixture. Bake until top is golden, about 30 minutes.

11/2 cups uncooked elbow macaroni (8 oz)
1/4 cup butter or margarine
2 cloves garlic, finely chopped
1/4 cup Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/4 teaspoon ground mustard
1/8 teaspoon ground red pepper (cayenne)
2 cups milk
11/2 cups chopped cooked ham
1 can (14.5 oz) diced tomatoes, drained
2 cups shredded sharp Cheddar cheese (8 oz)
1 cup soft bread crumbs (about 1 1/2 slices bread)
2 tablespoons butter or margarine, melted

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain macaroni as directed on package, using minimum cook time.
  • Meanwhile, in 3-quart saucepan, melt 1/4 cup butter over medium-high heat. Cook garlic in butter, stirring frequently, until golden. Reduce heat to medium. Stir in flour, salt, mustard and red pepper. Cook and stir until mixture is smooth and bubbly. Gradually add milk, stirring constantly, until mixture boils and thickens, about 5 minutes. Gently stir in ham, tomatoes and cooked macaroni.
  • Remove from heat; stir in cheese until melted. Spoon into baking dish. In small bowl, mix bread crumbs and melted butter; sprinkle over macaroni.
  • Bake uncovered 20 minutes or until browned and bubbly.

8 ounces whole wheat elbow macaroni
1 (8 ounce) can cheddar cheese soup
3/4 cup milk
6 ounces reduced-fat cream cheese
1/2 cup cheddar cheese, shredded
1/2 cup swiss cheese, shredded
1/2 cup mozzarella cheese, shredded
1 lb ham, cubed
1/2 teaspoon dry mustard
1 teaspoon garlic powder

Steps:

  • cook the macaroni, using a splash of olive oil and a dash of salt.
  • Drain.
  • heat cheese soup and milk, stirring frequently.
  • Gradually add other cheeses, and seasonings to make it all nice and smooth and gooey.
  • Mix together the cheese, the cooked macaroni and the ham.
  • At this point, you can bake it in the oven in an 8x8 pan - 350F for about 30 minutes, or heat it through on the stove top - depends on how patient your family is!

1/2 pound uncooked macaroni, about 2 cups
Salt to taste, if desired
3/4 pound cooked ham, sliced
1/4 pound mushrooms
1/2 pound sharp Cheddar cheese
3 tablespoons butter
1 tablespoon flour
2 cups milk
1/8 teaspoon freshly grated nutmeg
Freshly ground black pepper to taste
1/2 cup finely chopped onion
1/8 teaspoon cayenne pepper
1 cup heavy cream
3 tablespoons freshly grated Parmesan cheese

Steps:

  • Preheat the oven to 425 degrees.
  • Bring 3 quarts of water to a boil for cooking the macaroni. Add salt to taste. Add the macaroni and cook 10 to 12 minutes, or until tender. Drain and return to pot.
  • Meanwhile, cut the ham into 1/2-inch cubes and set aside. There should be about 2 cups.
  • Slice the mushrooms. There should be about 2 cups.
  • Cut the Cheddar into slices about 1/4 inch thick. Stack the slices and cut them into 1/4-inch-wide strips. Cut the strips into 1/4-inch cubes. There should be about 2 cups.
  • Melt 2 tablespoons of the butter in a saucepan and add the flour, stirring with a wire whisk. Cook for about a minute; then add the milk, stirring rapidly with the whisk. Let simmer about 1 minute and add the nutmeg, Cheddar cheese, and salt and black pepper to taste.
  • Heat the remaining tablespoon of butter in a skillet and add the onions and mushrooms. Cook, stirring, until the mushrooms are wilted. Add the ham and cook, stirring, about 1 minute. Add the cheese sauce, the cayenne and cream. Cook, stirring, about 1 minute.
  • Pour and scrape the mixture into the macaroni and mix well. Transfer to a buttered 10-cup baking dish. Sprinkle the top with Parmesan cheese and place in the oven. Bake 10 minutes. Turn the broiler to high.
  • Brown the macaroni and cheese under the broiler until the top is nicely browned, 2 to 3 minutes.

This is a macaroni and cheese that's not too heavy and benefits mightily from the use of whole-wheat pasta and the addition of broccoli. You can assemble it ahead and bake it when you need it, or bake it ahead and reheat. There are a number of excellent whole wheat macaroni products on the market now. When you cook the macaroni, be sure to cook it for less time than usual so that it is more al dente; otherwise it will become too soft and may fall apart when you bake it in the final casserole.

2 tablespoons plus 2 teaspoons extra virgin olive oil, plus additional for oiling dish
1/2 pound whole grain macaroni shells, elbows, penne, or fusilli
1 large broccoli crown, broken into small florets (about 3/4 pound)
2 tablespoons finely chopped shallot
2 tablespoons flour, sifted
3 cups milk (1 percent, 2 percent or whole, to taste)
Salt and white or black pepper
Pinch of nutmeg
4 ounces Gruyère, grated (1 cup tightly packed)
1 ounce freshly grated Parmesan (1/4 cup tightly packed)

Steps:

  • Heat oven to 350 degrees. Oil a 2-quart baking dish.
  • Bring a large pot of water to a boil and salt generously. Add macaroni and cook al dente, a minute short of however long you typically cook pasta if you were serving it right away. Use a skimmer or strainer to lift macaroni from cooking water and transfer it to a large bowl. Toss with 2 teaspoons olive oil and set aside.
  • Add broccoli to boiling water and boil 3 minutes. Transfer to a bowl of cold water, drain, and then drain again on paper towels or a kitchen towel.
  • To make béchamel, heat remaining 2 tablespoons oil over medium heat in a medium-size heavy saucepan. Add shallot and cook, stirring, until softened, 2 to 3 minutes. Stir in flour and cook, stirring, for about 3 minutes, until smooth and bubbling, but not browned. It should have the texture of wet sand. Whisk in milk all at once and bring to a simmer, whisking constantly until mixture begins to thicken. Turn heat to very low and simmer, whisking often and scraping the bottom and edges of the pan with a rubber spatula, for 15 minutes, until sauce has thickened and lost its raw flour taste. Season with salt, pepper and a pinch of nutmeg. Remove from heat.
  • Strain béchamel while hot into the bowl with the pasta. Add cheeses and broccoli and stir together until pasta is nicely coated with sauce. Scrape into prepared baking dish.
  • Bake 30 to 40 minutes, until bubbly and the top is lightly browned. Remove from oven and allow to sit for 5 to 10 minutes before serving.
