This recipe is mixed in the bread machine and baked in the oven, but I suppose you could make it completely in the bread machine. (you may want to reduce yeast to 2 t. if you do this)

Number Of Ingredients 10

2/3 cup water
1 tablespoon butter
1/8 cup honey
1 egg
1 1/2 cups whole wheat flour
1 1/2 cups unbleached flour
2 small bananas, sliced
1/2 teaspoon salt
1 tablespoon yeast
1 tablespoon vital wheat gluten

Steps:

  • Put all ingredients in bread pan in the order recommended for your machine. Select the dough/pasta cycle and press start.
  • When dough is finished, turn out onto a lightly floured board and knead out all bubbles, adding more flour to board as necessary.
  • Shape into loaf about 1 foot in length and place on parchment paper lined cookie sheet. Let rise for 15-20 minutes.
  • Meanwhile pre-heat oven to 375 degrees.
  • When loaf in risen, bake in pre-heated oven for 20-25 minutes.
  • Cool on wire rack.

I have a habit of jotting down promising recipes whenever I'm perusing magazines in a waiting room. This one is on an envelope postmarked 1996. The whole wheat flour and banana flavors in this yeast bread really complement one another. I like to make cheese sandwiches with this, or eat with butter and jam. Try french toast with it, too. It's much lower in fat than the typical quick bread banana bread. Prep time is approximate, depending on which alternative you choose.

Number Of Ingredients 11

1/4 ounce dry yeast (one envelope)
1 1/2 cups bread flour
1 1/2 cups whole wheat flour
1/2 teaspoon salt
2 medium ripe bananas
1/4 cup honey
1/4 cup warm water
1 large egg
1/4 cup vegetable oil
1/2 teaspoon vanilla extract
1 teaspoon poppy seed (optional)

Steps:

  • Place ingredients into your bread machine in order specified by the manufacturer. Slice the bananas right into the pan with the liquid ingredients.
  • Set machine to white bread setting and let 'er rip.
  • Check for the consistency of the dough - you may need to add more flour or more liquid, depending on the exact size of your bananas.
  • Alternatively, set on dough setting, and after it rises, remove, punch down, put into a greased loaf pan, let rise, covered, in warm spot. Then bake at 350° for about 35 minutes, or until done.

1/8 cup honey
1/8 cup Splenda sugar substitute
1/4 cup water
1 egg
1/2 teaspoon vanilla
2 ripe bananas, mashed
1/2 teaspoon cinnamon
1 1/2 cups bread flour
1 1/2 cups white whole wheat flour
1 tablespoon active dry yeast
1/2 cup chopped walnuts
1/2 tablespoon ground flax seeds

Steps:

  • Add ingredients according to your bread machine manual.
  • *For Toastmaster Bread Maker, layer wet, dry, yeast.
  • Use Whole Wheat Setting.
  • *Optional* I mixed up some brown sugar, walnuts, and water for a little topping and added it before the bread started to bake.
