Who doesn't like croutons on their salad? Some croutons can lead up to 100 extra calories! These croutons are tasty and have great nutritional content. Plus the whole wheat bread is a bonus on fiber! No need for oil on these!

3 slices whole wheat bread, each cut into 25 cubes
¼ teaspoon salt
¼ teaspoon paprika
¼ teaspoon garlic powder
¼ teaspoon dried oregano
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Spread bread cubes onto a baking sheet. Sprinkle salt, paprika, garlic powder, oregano, and black pepper over the cubes.
  • Bake in preheated oven for 3 minutes, turn, and continue cooking until slightly crisp, about 3 minutes more.

White Chicory Salad with Apricot Dressing and Grilled Whole Wheat Pita Croutons image

1/4 cup white wine vinegar
2 tablespoons Dijon mustard
2 tablespoons apricot puree
1 tablespoon honey
Kosher salt and freshly ground black pepper
1/2 cup extra-virgin olive oil
2 whole-wheat pitas
Canola oil, for brushing
Kosher salt and freshly ground black pepper
2 heads frisee, sliced
4 ounces baby arugula
1/3 cup Marcona almonds
4 ounces young fontina cheese, grated
Kosher salt and freshly ground black pepper
1/4 cup chopped fresh chives

Steps:

  • For the apricot dressing: In a bowl, whisk together the vinegar, mustard, apricot puree, honey and some salt and pepper. Slowly whisk in the olive oil until thickened. Set aside.
  • For the pita croutons: Heat a grill to high. Brush the pitas on one side with oil and season with salt and pepper. Grill until golden brown on both sides, about 1 minute per side. Cut into thin triangles.
  • For the chicory salad: Put the frisee, arugula, almonds, croutons, and about three-quarters of the fontina in a large bowl. Season with salt and pepper. Drizzle some of the dressing around the side of the bowl and toss the greens to coat. Taste and add salt and pepper if desired. Top with remaining cheese, a drizzle of dressing, and the chives, and serve.

4 slices whole wheat bread
2 tablespoons melted butter
1 tablespoon chopped parsley
1/2 teaspoon garlic salt

Steps:

  • Cut the bread into 1 inch cubes. Mix together the bread cubes, melted butter, chopped parsley and garlic salt.
  • Spread on one layer deep on a baking sheet and toast in a 300 degree oven for 20 minutes or until crisp.

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. In small bowl, combine oil and garlic.
  • 3. Using pastry brush, paint over lightly both sides of bread.
  • 4. Trim crusts and cut bread into 1/2-inch cubes. Bake on baking sheets for 20 to 25 minutes or until golden brown.
