It may strike you as curious, but adding an entire orange to this easy snacking cake, rind and all, imparts a wonderful flavor reminiscent of orange marmalade, pleasantly bitter and sweet. A high-speed blender is the best way to process the orange, but a food processor works too. You want the purée to be as smooth as possible. While the cake bakes, prepare an easy orange glaze. For that step - or any recipe requiring both orange zest and juice - be sure to zest your orange before juicing it, as it's much more difficult the other way around.

6 tablespoons/85 grams unsalted butter, at room temperature, plus more for greasing the pan
1 small navel orange (about 250 grams), ends trimmed, cut into large chunks, and seeds removed, if necessary
1/4 cup/60 milliliters whole milk
1 1/2 cups/192 grams all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
3/4 cup/151 grams granulated sugar
2 large eggs, at room temperature
3/4 cup/77 grams confectioners' sugar
1/2 teaspoon freshly grated orange zest, plus 3 to 4 teaspoons freshly squeezed orange juice (from 1 orange)

Steps:

  • Heat the oven to 350 degrees. Prepare the pan: Butter an 8-inch square baking pan. Line the pan with parchment paper, leaving a 2-inch overhang on two sides. Butter the parchment.
  • Transfer the orange chunks and milk to a high-speed blender (or food processor) and process until it is the texture of smooth applesauce. (You should have about 1 generous cup.)
  • In a medium bowl, whisk together the flour, baking powder, baking soda and salt.
  • In a large bowl with an electric mixer, beat the butter and granulated sugar on medium until light and fluffy, about 3 minutes. Add the eggs, one at a time, scraping down the bowl as needed.
  • Add half the flour mixture and beat just until combined. Beat in the orange mixture, then beat in the remaining flour mixture. Transfer the batter to the prepared pan and smooth the top.
  • Bake the cake until a toothpick inserted into the center comes out with moist crumbs attached, 35 to 40 minutes. Transfer to a rack to cool for 20 minutes. Then, using the parchment, transfer the cake to a rack to cool completely.
  • While the cake cools, prepare the glaze, if using: In a small bowl, whisk together the confectioners' sugar, orange zest and orange juice. (Use a little less juice for a thicker glaze that will sit on top of the cake, or add a little more juice for a thinner glaze that will soak into the cake.)
  • Spread the glaze over the cooled cake, then slice to serve. Store leftovers well-wrapped at room temperature for up to 3 days.

Many carrot cakes call for as much as a cup of oil, 4 eggs, 2 cups of sugar. But all that oil isn't necessary for this moist, delicious cake. I love this low fat cake. Use Whole Wheat PASTRY flour found in health food stores. You can use whole wheat flour but the cake will be denser. I also sifted my all purpose flour.

2 -3 large carrots
1 large navel orange
1 tablespoon raisins
1 cup whole wheat flour
1 cup unbleached all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon freshly grated nutmeg
1/2 teaspoon salt
2 eggs, lightly beaten
1/3 cup buttermilk
1/2 cup pure maple syrup
1/2 cup packed brown sugar
1/3 cup canola oil
4 tablespoons fat-free cream cheese, softened
1 teaspoon orange juice
1/2-2/3 cup powdered sugar

Steps:

  • Preheat oven to 350°F (175 C).
  • Lightly butter a 13 x 9-inch baking pan.
  • Wash and trim carrots and cut into large pieces.
  • Place in a food processor and process until finely chopped, or grate carrots finely, to make 2 cups.
  • I grated my carrots.
  • Set aside.
  • Cut orange into 8 wedges.
  • Do not peel.
  • Remove white center and seeds.
  • Cut wedges into 3 or 4 pieces each and puree in a food processor or blender along with the raisins.
  • Combine flours, cinnamon, baking powder, baking soda, nutmeg and salt in a large bowl.
  • In another bowl, combine eggs, buttermilk, maple syrup, brown sugar, oil, carrots and orange.
  • Stir carrot mixture into dry ingredients until combined.
  • Spread batter evenly in pan and bake 25 to 30 minutes, until a cake tester or wooden pick inserted in the center comes out clean.
  • Cool cake in pan.
  • Prepare icing by working cream cheese and orange juice together with the back of a spoon until combined.
  • Stir in enough powdered sugar to obtain a spreadable consistency.
  • When cake is cool, spread top with icing.

I have made this cake a few times already and everybody loved it! The secret for this cake is that it uses a whole orange (skin and all). If you prefer, you can replace the raisins by dates.

1 large orange
1 cup raisins
1/2 cup walnuts
2 cups flour
1 cup granulated sugar
1 teaspoon baking soda
1 teaspoon salt
1 cup low-fat milk
1/2 cup butter
2 eggs
1/2 cup butter, softened
3 cups icing sugar, sifted
1 tablespoon grated orange zest
1/3 cup orange juice

Steps:

  • Preheat oven to 350°F Grease a 13x9 inch cake pan.
  • Cake: squeeze orange; reserve juice for frosting. Grind together or finely chop in food processor orange rind and pulp, raisins and nuts. Set aside.
  • Combine remaining cake ingredients in large mixer bowl. Beat on low speed just until blended, then on medium speed for 3 minutes. Stir in orange raisin mixture. Spread batter evenly in prepared pan.
  • Bake for 35 to 40 minutes. Cool completely.

1 cup butter, softened (*not* margarine!)
1 1/4 cups granulated sugar
3 large eggs
1/2 teaspoon almond extract (*)
2 oranges, ends trimmed, then cut into chunks and seeded (about 1 lb. total-save some zest for garnishing the finished cake)
2 1/2 cups flour
1/4 teaspoon salt
1/4 teaspoon ground cardamom (*)
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 cups powdered sugar (I only used maybe 2/3 cup total)
3 tablespoons fresh orange juice
1/2 teaspoon orange blossom water (*)
toasted almond, chopped (*)

Steps:

  • Preheat oven to 325°. Coat a 10-cup Bundt pan with butter. I don't have a bundt pan anymore and used a tube pan instead.
  • In a large bowl with a mixer on medium speed, beat butter and granulated sugar until fluffy. Beat in eggs (and almond extract if using.) Note: I used my KitchenAid stand up mixer to prep the batter.
  • Whirl orange chunks in a food processor until mostly smooth but not puréed. Add the orange chunks to the batter and beat until blended.
  • Add flour, salt, (cardamom if using), baking soda, and baking powder to bowl and beat until smooth. Spread batter in prepared pan.

In this spunky citrus cake, you chuck fresh chunks of orange-skin, pith, and juicy flesh-right in the food processor and blitz till only tiny flecks of skin remain. After mixing this pulpy orange slush into the batter, the cake that comes out is incredibly moist (and gets more so by the day), with a flavor that's marmalade-like but brighter, for people who prefer a bit of bitterness and complexity to straight sweet. And for those who don't, the glaze is a good distraction. Recipe adapted from Sunset Magazine and Stephanie Spencer.

2 sticks (225g) unsalted butter, softened, plus more for the pan
1 1/4 cups (250g) sugar
3 large eggs
2 oranges (about 1 pound/450g), ends trimmed, then cut into chunks and seeds removed
2 1/2 cups (315g) all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 cups (185g) confectioners' sugar
2 tablespoons plus 1 teaspoon freshly squeezed orange juice, from half an orange

Steps:

  • Heat the oven to 325°F (165°C) with a rack positioned in the center. Butter a 10-cup (2.37L) Bundt pan. In a large bowl with an electric mixer on medium speed, beat the butter and sugar until fluffy. Beat in the eggs one by one.
  • Pulse orange chunks in a food processor until mostly smooth but not completely puréed. Spoon out 1 1/2 cups (355ml) of the pulpy orange mixture and add to the batter, then beat until blended. Add the flour, salt, baking soda, and baking powder and beat just until smooth. Scrapte the batter into the prepared pan and smooth the top.
  • Bake until the cake is risen and firm to the touch, and a toothpick stuck in the middle comes out with just crumbs clinging, about 55 minutes. Cool the pan on a rack set over a rimmed baking sheet for 10 minutes, then invert the cake onto the rack and let cool completely.
  • Whisk together powdered sugar and orange juice in a small bowl. Once the cake is cool, spoon the glaze over the top. Let the glaze set, then slice cake and serve. Store any leftovers airtight at room temperature.
