Steps:

  • Mix salt, paprika, cayenne pepper, onion powder, thyme, white pepper, garlic powder, and black pepper together in a small bowl.
  • Rub seasoning mixture over the entire chicken to evenly season. Put rubbed chicken into a large resealable plastic bag; refrigerate 8 hours to overnight.
  • Remove chicken from bag and cook in slow cooker on Low until no longer pink at the bone and the juices run clear, 4 to 8 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).

1 ½ pounds potatoes, peeled and cubed
1 medium onion, chopped
1 (4 to 6 pound) whole roasting chicken
6 cloves garlic, halved lengthwise
2 tablespoons rosemary
freshly cracked salt and pepper to taste

Steps:

  • Place potatoes in the bottom of a slow cooker. Add onion over the top of the potatoes.
  • Remove the chicken parts inside the cavity and pat the outside of the chicken dry. Slice deep, garlic clove-width slits into your chicken with a knife. Make 4 cuts on each side of the chicken, and 1 in each of the drumsticks. Stick a sliver of garlic deep into each cut. Place the remaining chunks of garlic into the cavity.
  • Starting on the back of the chicken, season generously with about 1/2 of the rosemary and cracked salt and pepper. Add some seasoning inside the chicken's cavity as well. Flip the chicken and place it breast side up in the slow cooker on top of the potatoes and onions. Season the top of the chicken generously with the remaining rosemary and more cracked salt and pepper.
  • Cook on Low until the chicken is cooked through completely and the juices run clear when the chicken is cut, 8 to 10 hours, depending on the size. Serve with the potatoes and onions from the pot.

2 1/2 teaspoons sweet paprika
1 1/2 teaspoons garlic powder
1 1/2 teaspoons freshly ground pepper

One 4- to 5-pound whole chicken, giblets removed, excess fat trimmed
1 cup ketchup
1/4 cup apple cider vinegar
1/2 cup packed light brown sugar
2 tablespoons yellow mustard
1 teaspoon kosher salt

1 teaspoon onion powder
3/4 teaspoon garlic powder
1/4 teaspoon cayenne
1/4 teaspoon freshly ground pepper

Steps:

  • Coat the insert of a 6-quart slow cooker with cooking spray and place 3 to 4 canning jar lid bands (without the flat metal rounds) in the bottom. Combine the paprika, garlic powder, pepper, salt, coriander and cumin in a small bowl.
  • Dry the chicken well and turn it upside down. Cut a 1-inch-long slit in the skin between the thigh and the backbone on each side. Rub the spice mixture all over the chicken, making sure both sides are evenly coated, and place the chicken in the slow cooker on top of the lid bands. Cover and cook on low until the chicken is tender and cooked through, about 7 hours.
  • Meanwhile, make the barbecue sauce: Combine the ketchup, vinegar, brown sugar, mustard, salt, chili powder, onion powder, garlic powder, cayenne and pepper in a medium microwave-safe bowl and microwave for 4 minutes, stirring once halfway through, until the sugar and spices are dissolved and the sauce is thickened. Let cool completely.
  • When the chicken is ready, remove the lid from the slow cooker and brush the chicken with barbecue sauce to cover well and let it rest for 10 minutes. Carefully lift the chicken from the slow cooker by putting tongs into the cavity, and sliding a spatula underneath and transfer it to a platter. Serve additional barbecue sauce on the side.

  • Heat the slow cooker if necessary and add a splash of water to the base. Scrunch up some foil to make a trivet to sit in the base of the bowl to rest the chicken on. 1 jar (12 oz) sweet orange marmalade
1/2 cup packed brown sugar
1/4 cup soy sauce
2 tablespoons chili garlic sauce
1 teaspoon salt
1 whole chicken (3 1/2 to 4 1/2 lb)
1-inch piece fresh gingerroot, peeled
1/4 cup cornstarch
1/4 cup orange juice
6 thin slices of orange, halved
2 tablespoons chopped fresh cilantro leaves
Cooked white rice, if desired

Steps:

  • Spray 5-quart oval slow cooker with cooking spray. In small bowl, mix marmalade, brown sugar, soy sauce, chili garlic sauce and salt. Add chicken and marmalade mixture to slow cooker, spreading marmalade mixture over chicken, inside and out. Place chicken breast side down; add gingerroot.
  • Cover; cook on Low heat setting 4 to 5 hours, until instant-read thermometer inserted in thickest part of chicken thigh muscle and not touching bone reads at least 165°F (legs should move easily when lifted or twisted). Do not uncover slow cooker before 4 hours.
  • Remove gingerroot, and discard. Transfer chicken to cutting board; let stand about 5 minutes or until cool enough to handle. Cut into 8 pieces.
  • Meanwhile, in small bowl, mix cornstarch and orange juice; stir into liquid mixture in slow cooker. Cover; cook on High heat setting 10 to 15 minutes or until sauce thickens.
  • Position oven rack 4 inches from broiling element. Set oven control to broil. Line large rimmed baking pan with foil; carefully transfer chicken, skin side up, to pan. Place orange slices around chicken; brush oranges and chicken with sauce. Broil 3 to 5 minutes or until skin is golden brown and crisp; sprinkle with cilantro, and serve with more of the sauce over rice.

I've never had much luck cooking a whole chicken in the instant pot or crockpot. The chicken ends up tender but the skin winds up with a rubbery, inedible texture. Now I finish the chicken in the oven to crisp up the skin and it makes all the difference. My husband thought i picked up a rotisserie chicken from the grocery store!

5 lbs whole chickens
cooking spray
2 tablespoons bacon grease (or any oil of choice)
2 tablespoons mccormick's roasted garlic and herb seasoning
1 lemon, cut into quarters
1 onion, cut into quarters

Steps:

  • 1. Spray the insert to the Slow Cooker with cooking spray. I like to use the Slow Cooker liners, so I sprayed the inside of the liner.
  • 2. Place a metal trivet (I used the one that came with my Instant Pot) in the center of the Slow Cooker. You can also make a metal ring out of aluminum foil.
  • 3. Removed the giblets and rinse and pat the chicken dry.
  • 4. Rub bacon grease on the chicken and sprinkle liberally with seasoning.
  • 5. Stuff the onion quarters and lemon quarters inside the cavity.
  • 6. Place the chicken in the Slow Cooker breast side up.
  • 7. Cook on high for 3-4 hours or until the internal temperature is 165 degrees F.
  • 8. Remove chicken from Slow Cooker and place on a baking dish. I did this by placing tongs underneath the trivet and through the cavity to not disturb the skin.
  • 9. Place chicken in a preheated oven at 375 degrees for 30 minutes (or until the skin is crispy and brown). If using a broiler safe dish you can broil for 5 minutes instead.

1 whole chicken (or thawed bone-in turkey breast, I remove the back)
String to secure the legs and wings, optional
Olive oil or cooking spray
Salt, to taste
Garlic salt, to taste
Black pepper, to taste
Paprika, to taste

Steps:

  • Remove lid from a 6-quart crock pot and preheat on high while you prepare the chicken. Rinse and pat chicken dry with paper towels. Tie legs and wings with thread or string, if desired. Lightly coat chicken with olive oil or olive oil cooking spray. Season chicken with salt, garlic salt, black pepper and paprika, as desired. Place chicken, breast side up, on a small rack that will fit inside the crock pot or 3 to 4 balls of crumpled up aluminum foil to keep the chicken out of the juices. Cover and cook on High for 1 1/2 to 2 1/2 hours or until the thickest part of the chicken registers 180°F on a meat thermometer (time depends on size of chicken and crock pot cooking temperature). Don't check for the first 1 1/2 hours as too much heat will be lost. If you prefer a crispy, browned skin, remove from crockpot to a oven-safe pan and oven broil for a few minutes.

Rub Ingredients for the Chicken
4 tsp salt
2 tsp paprika
1 tsp cayenne pepper
1 tsp onion powder
1 tsp thyme

For the Crockpot
1 cup chopped onion, approx 1 medium to large onion
4 to 5 carrots, scrubbed, no need to peel, chopped in halves or thirds
4 celery stalks, cut in thirds
2 garlic cloves, peeled and smashed
1 whole lemon quartered
3 1/2 to 4 1/2 lbs roasting or fryer chicken

Steps:

  • Directions: Combine rub ingredients in a small bowl and set aside. Prep the vegetables and place inside the slow cooker (I use a 7 quart oval one like this one. Remove chicken from packaging and remove neck and pouch with organs. Discard or reserve for later use in another recipe. Rinse chicken with water and pat dry with paper towels. Rub garlic all over outside of the chicken. Put garlic inside the chicken. Put the rub all over the outside and inside the chicken. Add quartered lemon to the inside of the chicken. Place chicken on top of the vegetables. Cover slow cooker and cook chicken on low for 4-8 hours. (When I used a 4 lb chicken, it took about 6 hours. The time will depend on the size of the chicken and your slow cooker.) Cook until the internal temperature of the leg is at 160 degrees F or use a pop-up thermometer as the original recipe calls for. Remove chicken and place in a 9x13 glass or ceramic baking dish. Place baking dish in the oven under the broiler for about 4-5 minutes. Allow chicken to rest after removing it from the broiler for 5-10 minutes. Frequently asked questions: Do I need to add water to the crockpot? Nope no water needed. This recipe actually makes broth while it's cooking the chicken. You can strain it and use it for a later recipe if you want! How do I get the skin crispy? After it's done in the crockpot, see the instructions in the recipe to crisp up the skin in your oven broiler. Can I cook this recipe skinless? I have never tried it but I have seen other bloggers post a recipe where they did it. If you want to, definitely try it! I can't guarantee it will turn out the same as with the skin (moist and tender) since I haven't tried it myself.

A whole chicken is key in the slow cooker classic chicken soup.

1 tablespoon olive oil
1 medium yellow onion, diced
4 medium carrots
3 medium celery stalks
8 cups (2 quarts) water
1/2 teaspoon dried thyme
2 bay leaves
1 (4- to 5-pound) whole chicken, neck and giblets removed from the cavity
1 tablespoon kosher salt, plus more as needed
1/2 teaspoon freshly ground black pepper, plus more as needed
2 tablespoons coarsely chopped fresh Italian parsley leaves
2 cups cooked rice or noodles (optional)

Steps:

  • Heat the oil in a medium frying pan over medium heat until shimmering. Add the onion and cook, stirring occasionally, until softened and starting to brown, about 7 minutes. Meanwhile, peel and cut the carrots into large dice, then cut the celery into large dice. Transfer both to a 6-quart or larger slow cooker. Add the water, thyme, and bay leaves. When the onion is ready, transfer to the slow cooker and stir to combine.
  • Place the chicken on a work surface or cutting board and pat dry with paper towels. Season inside and out with the salt and pepper. Place the chicken on top of the vegetables in the slow cooker. Cover and cook until the chicken is cooked through and falling off the bones, about 6 hours on the HIGH setting or 8 hours on the LOW setting.
  • Transfer the chicken to a rimmed baking sheet (it's okay if it falls apart into large pieces). When cool enough to handle but still warm, use your hands to shred the meat into bite-sized pieces (discard the skin, cartilage, and bones).
