Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour 2 round 8 inch pans. Sift the flour and salt together and set aside.
  • Cream butter and sugar until light and fluffy. Add eggs and mix well. Dissolve baking soda in buttermilk. Alternately add flour and buttermilk, beginning and ending with the flour. Pour into two 8-inch pans.
  • Bake at 325 degrees F (165 degrees C) for about 30 minutes, or until toothpick inserted into cake comes out clean. Cool cake completely before icing.
  • To make the White Velvet Cream Cheese Icing: Beat shortening and cream cheese together. Gradually beat in confectioners sugar. Add milk until a frosting is formed. (Add more milk if necessary.)

On vacation in Gatlinburg, I purchased an old timey cookbook called "A Taste Of The Past" by Phyllis Connor. Each recipe has notes about the family history of the recipe and this one is from Elizabeth Sparks, author of N. C. And Old Salem Cookery. I am including the frosting recipe she recommended, but you can use your favorite if you are uneasy about using the egg whites. This recipe is from a 90 year old woman who got the recipe from her mother. Talk about surviving the test of time! How did she live to such a ripe old age eating uncooked eggs? ;)

  • In a large bowl, cream the sugar and butter together.
  • Mix in egg yolks, then eggs, one at a time, beating well after each.
  • Measure the buttermilk into a 2-cup measuring cup/bowl and stir in the baking soda and vanilla.
  • Blend buttermilk and the flour alternately into the mixture in the large bowl.
  • Pour batter into the greased cake pans.
  • Bake for 20-25 minutes.
  • Let cool before frosting.
  • OPTIONAL ICING: Beat the egg whites to a stiff froth.

Steps:

  • Cake:.
  • - Pre heat oven to 350 deg (lower to 325 for dark/non stick pans).
  • - Spray two 8 inch round pans with baking spray or grease with butter.
  • - Combine dry ingredients (cake mix, cocoa powder and pudding mix) in a medium bowl until well blended.
  • - In a seperate bowl combine wet ingredients (butter, buttermilk, beaten eggs, vanilla, food coloring) and mix unitl well blended.
  • - Now slowly add your wet ingredients to you dry ingredients, mixing and scraping the side of the bowl as you go. Continue until all are well blended and beat for additional 2 minutes.
  • Note: Batter will be thick, if you think it is too thick for your mixer to handle you can add more buttermilk to thin it down, but don't add too much.
  • - Pour batter evenly split between the two baking pans.
  • - Bake according to package directions or until toothpick comes out center clean. Approx 30 minute.
  • - Cool.
  • Optional Homemade Frosting - Make while the cake is cooking:.
  • - Cream butter and cream cheese together until they are light and fluffy.
  • - Gradually add the powdered sugar and continue beating until well blended.
  • - Add vanilla and heavy cream and beat until fluffy and spreadable.
  • Optional: For a thicker frosting you can add more powdered sugar until you get the consistency you are looking for.
  • - Split the frosting 2/3 into one bowl and 1/3 into another.
  • - Add blue food coloring into the 1/3 mixture until you get the color you like.
  • - Place both bowls of frosting into the refrigerator until you are ready to use.
  • Assembly:.
  • - Make sure cakes have cooled.
  • - Stir the frosting until it is spreadable again.
  • - Place first layer of cake on plate.
  • - Spread all of the blue frosting over this layer.

Steps:

1 1/4 cups cake flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon table salt
1 teaspoon instant espresso powder
2 1/4 cups sugar
3 eggs
2 1/4 cups vegetable oil
1 2/3 cups buttermilk
1 ounce liquid red food color
1 teaspoon vanilla extract
1 tablespoon distilled white vinegar
FROSTING:
2 cups whole milk
1 1/2 cups all-purpose flour
4 ounces quality white chocolate bar, chopped
2 cups granulated sugar
2 sticks unsalted butter, softened
FROSTING GARNISH:
Additional white chocolate bar, optional

Steps:

  • Preheat the oven to 375°F Line bottoms of two 8x8x2-inch square pans (or three 9x2-inch round cake pans) with parchment paper and coat with non-stick spray. Note: I use Baker's Joy spray and my cakes never stick! Cake: Sift together the flours unsweetened cocoa powder, baking soda, table salt and instant espresso powder; whisk to combine. Set aside. For less mess, in a large glass measuring cup with a pour spout, combine the buttermilk, food color and vanilla before mixing into the cake batter. Beat sugar and eggs in a large bowl with a mixer on high speed until white, thick and creamy for 5 to 7 minutes. With the mixer on low speed, slowly drizzle in the oil until it is full incorporated. Alternately add the flour mixture and the buttermilk mixture to the batter (starting and ending with flour mixture) until combined. Mix vinegar into batter and immediately divide evenly between prepared pans. Bake cakes until a toothpick comes out clean, about 35 to 40 minutes. Transfer cakes to a wire rack to cool, for about 10 minutes. Turn cakes out of pans and cool on racks. Once cooked, peel away parchment. Slice each cake in half horizontally to form 4 layers. Note: My cakes were baked square, so I trimmed off the edges to reveal the red cake color. Save the crumbs for later, to crumble and sprinkle on top as decoration. White chocolate frosting: Whisk milk and flour together in a saucepan over medium heat, stirring constantly with a rubber spatula, until thick and paste-like and no longer lumpy, about 15 minutes. Note: Don't panic if it becomes lumpy, as you can always push it thrown a fine sieve. However, keep stirring and scraping the pan at all times. Transfer mixture to a bowl, press plastic wrap over the surface to prevent a skin from forming and chill until cold. Melt chocolate in a double-boiler (I had thin chocolate, so I melted it in 30 second intervals in my microwave). Cool slightly. Cream sugar and butter in the bowl of a stand mixer on high (I use my Kitchen Aid Whisk Attachment)) for about 7 minutes, until it is light and fluffy. Add chilled milk mixture and melted chocolate and beat on high speed until light and fluffy, about 5 minutes more. Note: I added 1 teaspoon additional vanilla, as I felt it really needed it. I also think an additional 4 ounces of melted white chocolate would be more noticeable. Of course, I love white chocolate! Assembly: Helpful equipment/tools are a serrated knife, off-set spatula and toothpicks (to be guides in slicing each layer in half). Wilton sells an extra-large spatula that is perfect for safely transferring cake layers. I love mine. Piping bag and large round tip. With a serrated knife, level each layer if the center is a high dome (like one of mine was). Split each layer in half. Turn the first layer upside down onto your serving platter (I place narrow strips of wax paper along each edge to catch frosting drippings). Fill the piping bag and pipe the frosting onto the edge of each layer. Plop some frosting in the center, and evenly spread with an off-set spatula. (We aren't frosting the sides of the cake, because this is makes a beautiful presentation. Note: Before adding the final layer, add cut wooden dowels at each corner and in the center. I didn't do this. Repeat with each layer. If desired, sprinkle some fine red crumbs and/or shave some additional white chocolate with a vegetable peeler and sprinkled on top. Note: The frosting is very much liked whipped cream. Therefore, the cake could be in danger of sliding (if you haven't used wooden dowels). Freeze (or refrigerate the cake, immediately) for about 15 minutes, and that should stabilize it. Allow to come to room temperature for 15 to 30 minutes before slicing. Slice with either an electric serrated knife, or a regular serrated knife. This prevents the layers from becoming "squashed".

  • Special Equipment Three 8-inch by 1½- to 2-inch round cake pans Four wire cooling racks, with the fourth being used to flip cake layers right side up One 8-inch cardboard cake round, helpful but not necessary Cake Turntable, such as Ateco ®, helpful but not necessary Metal Angled or Offset Icing Spatula, such as Ateco® or Wilton®, helpful but not necessary Metal Icing Spatula, such as Ateco® or Wilton®, helpful but not necessary Wax paper, for lining cake plate for icing, helpful but not necessary Piping bag, coupler and/or decorating tips, not necessary if no piping is desired Preparation Arrange oven rack in lower third of oven and preheat oven to 350ºF. Grease three 8-inch round cake pans with shortening or oil. Line bottoms with parchment or wax paper circles. Grease paper linings and dust lined pans with flour, tapping out the excess. Set aside. Using an electric stand mixer fitted with paddle attachment, mix self-rising flour and sugar (or flour, baking powder, salt and baking soda if using White Lily® Bleached All-Purpose Flour as indicated in Notes section below recipe) on low speed (stir) until well combined and aerated, about 1 minute. Add butter, shortening and oil and mix on slow speed until thoroughly combined. Mixture will be very thick. In a 2-cup glass liquid measuring cup, whisk together buttermilk, egg whites and extracts using a fork until well blended. Slowly add half of the liquid mixture to the batter and mix on low speed. Increase mixer speed to medium and beat until thoroughly combined, scraping down the sides of bowl as necessary with rubber spatula, about 2 minutes. Add remaining liquid mixture and beat just until smooth and thoroughly combined, again scraping down the sides of bowl as necessary, about 1 minute. Using rubber spatula, scrape and pour batter into prepared pans dividing evenly (a little over 2 cups of batter per cake pan). Smooth tops evenly with rubber spatula and then rap each pan on counter surface 2 to 3 times to expel any air bubbles. This step will create a nice level cake. Bake in preheated oven until a toothpick inserted into center comes out clean, about 25 to 30 minutes. (I have found that 28 minutes is perfect.) Cool cakes in pans on wire racks for 10 minutes. Run thin metal spatula around edges of each cake to loosen, then invert onto wire rack and peel away parchment or wax paper. Turn right side up onto wire racks (using an additional rack to flip) and cool completely or wrap while still warm to retain moisture. Wrap each cake layer tightly in plastic food wrap and keep at room temperature until ready to fill and frost. To frost and fill cake, use a scant ¾ cup frosting between each layer and then proceed to frost the cake as desired with remaining buttercream. To make a Rose Cake with "Rose Swirls" Use a scant ¾ cup frosting between each layer and then proceed to frost the cake with a "crumb coat" or thin coat, but not too thin. The cake should have good coverage and you should not see the cake peeking through the frosting. Next, assemble your pastry bag with coupler and tip. (I like to use my Ateco No. 846 tip because it makes gorgeous swirled roses. However, you can also use an open tip like the Wilton 1M.) Fill pastry bag and twist closed. Make sure your hands are not too warm or your buttercream will get too soft. You are now ready to pipe roses! To pipe roses, start at the bottom and work around the cake to complete a full circle of roses. To pipe each rose, start in the center of where you want your rose to be. Then pipe in a circular fashion counter-clockwise going around the center point once or twice depending on the size of roses you desire. The roses don't need to be perfect! This is what is so great about piping swirled roses as they look lovely shabby and chic. It is best to end in the same place each time and I like to end at the top right side of each rose. Once you complete the first row around the cake, continue with the next row and then the top. To fill in any gaps, I like to pipe small stars or flourishes that contour the rose swirls. Rose Cakes are the best. So simple, but so stunning! Notes Tips: Please note that prep and cook times are for the preparation and baking of the cake. They do not include the time needed to prepare the buttercream (or the component recipe for the sauce in the buttercream recipe) or the time for frosting, filling and piping decorations. In general, prepare as many component recipes in advance for a stress-free day in the kitchen the day you assemble and frost the cake. I like to prepare each component in advance, with the exception of the buttercream, and then prepare the buttercream the day I assemble and frost the cake. By preparing component recipes in advance, it will assure you have enough time to chill the cake before slicing and serving. How to Measure Flour for this Recipe: When measuring flour by volume with measuring cups, sift the flour first onto a sheet of wax paper then spoon flour lightly into cup before leveling off with a thin metal icing spatula or straight edge of a knife. This way, you should obtain approximately 112 grams of flour per cup (the same weight as cake flour) for a total of 280 grams for 2½ cups. Substitution: White Lily® Bleached All-Purpose Flour may be substituted for White Lily® Self-Rising Flour in the same amount (2½ cups or 280 grams) in this recipe, but you will need to add and sift into the flour 2 teaspoons (9.6 grams) baking powder, 1 teaspoon (4.8 grams) kosher salt (or ¾ teaspoon regular table salt) and ¾ teaspoon (3.6 grams) baking soda. How to Bring Eggs to Room Temperature: Should you forget to bring your eggs to room temperature by setting them out for an hour before starting recipe, do not worry. To quickly bring eggs to room temperature, fill a medium bowl with warm tap water-not hot, but warm so the eggs do not cook. Carefully place the eggs into the bowl of water so they are fully submerged. Allow eggs to soak for 10 to 15 minutes. Remove eggs from water and towel dry. Eggs should now be at room temperature and ready to use in recipe. How To Properly Rap Cake Pans: Hold each pan a few inches above the counter (2 to 3 inches will do) then carefully drop pans flatly onto countertop 2 to 3 times. This step will expel any air bubbles and will ensure nice level baked cake layers. To Make a Rose Cake: You will need 1½ recipes of Strawberry-Raspberry Mascarpone Buttercream, about 8¼ cups. This will make just enough to frost, fill, and pipe roses as shown for a 3-layer, 8-inch round cake. Cake may be made 1 day in advance. Keep wrapped in plastic food wrap at room temperature overnight. After assembling and frosting the layered cake it is best to chill it until the buttercream is firm, about 30 minutes to 1 hour. Chilling, before slicing the cake, will yield neater cake slices for a better plated presentation. Store any leftover cake covered in the refrigerator. 1 cup chopped toasted pecans

Steps:

  • In a mixer combine all the dry ingredients, and mix for about 30 seconds. Add the butter and mix until the flour gets crumbly. Stir in 1/4 cup of the milk and bring the speed to medium high and beat for about 30 seconds. In a bowl, stir together the egg whites, milk and vanilla. Add to the dry ingredients in 3 additions, scraping down the sides and beating for about 20 seconds after each addition. Do not over mix, but make sure it is all incorporated. Pour into 2-7" cake tins, which you have parchment lined and greased. smooth the batter and bake in a preheated 350 oven for approximately 35 minutes. Bake until a tester comes out clean. Cool in pan for 10 minutes, then turn over onto cooling rack and allow to cool completely. Slice each round into two horizontally to make 4 layers total. Caramel Icing: Bring brown sugar, butter, milk, maple syrup and salt to a simmer. Simmer just until the sugar is no longer grainy, don't let it boil. Remove from heat and add vanilla, stirring constantly. Allow to cool just slightly...so that it isn't scorching hot, but nicely warm. Whisk in powdered sugar. You have to work fast, this will set up rather quickly. Pour icing on each layer as you stack it, you don't want it to completely pour over the sides, but it can drip over without issue. once all the layers are set, pour the remaining icing over the top using a ladle. use the bottom of the ladle to coax the icing over the sides to cover completely. sprinkle pecans on top

My aunt had traveled to Indiana to take my grandmother to visit her father right after WWII. They stopped at a very nice restaurant and they tried the cake which was so good that she asked the chef for the recipe and he was kind enough to share it with my aunt. The day my aunt gave me the recipe for this Red Velvet Cake she stressed to me that it was just as important to mix the ingredients as directed as it is to add the right ingredients. I have made this recipe many times and it has never failed for me.

Steps:

  • Cream together 1/2 cup Shortening and 1 1/2 cups Sugar. Add 2-eggs. 1-teaspoon vanilla, 1-teaspoon salt, and 1 teaspoon butter flavoring and mix thoroughly. Make a paste of cocoa and cake coloring. Add: To first mixture Add: alternately 2 1/2 cups shifted flour 1 cup buttermilk Mix in snall bowel: 1 teaspoon soda 1 Tablespoon vinegar Add to first mixture and blend well. Bake: 25 to 30 minutes at 350 degrees.
  • Cook in saucepan until thick: 3 Tablespoons flour, 1-Cup sweet milk ½-Teaspoon salt Stirring constantly Set aside and Let Cool Cream in small bowel: 1 Cup Crisco, 1 Cup Sugar. Add: first mixture to creamed mixture. Add: 2 Teaspoon Vanilla, ¼ Teaspoon Butter flavoring. Beat for 5 minutes or more, until fluffy. Spread on cooled cake.

4 3/4 ounces Large Egg Whites
1 cup Whole Milk
2 1/4 teaspoons Vanilla
3 cups All-­‐Purpose Flour
1 1/2 cups Granulated Sugar
1 tablespoon + 1 teaspoon Baking Powder
3/4 teaspoon Salt
12 tablespoons Unsalted Butter (room temperature)

Steps:

  • Whisk together egg whites, 1/4 cup milk and vanilla. In electric mixing bowl, sift together dry ingredients then mix on low speed with paddle attachment for 30 seconds to blend. Add remaining milk and butter. Mix on low speed until ingredients are moistened then increase to medium speed and beat for 1 1/2 minutes to aerate. Scrape down sides and add egg mixture in 3 batches beating for about 20 seconds between each addition and scraping between each addition. Pour batter into prepared cake pans until they are filled and about 1/2 to 3/4 cup of the way up and bake in 300-350 degrees for about 25-25 minutes or until a cake tester inserted into center of cake comes out clean. Cool cakes in pans on wire racks for about 10 minutes then release them and allow them to cool on wire racks completely. Wrap tightly with plastic wrap and store at room temperature for 2 days, 5 days refrigerated, or 2 months frozen.

18.25 oz Pillsbury or Betty Crocker White or Vanilla cake mix (this is approx. 1 box + 3/4 cup cake mix)
1 cup granulated sugar
1 cup + 2 tbsp cake flour (NOT all-purpose flour)
1/8 tsp salt
1 1/3 cups water
3 eggs
1/2 cup melted butter (lightly salted)
1 cup sour cream
1 tsp vanilla extract or almond extract (optional)

Steps:

  • In a large bowl, put water, extract (if using), eggs, melted butter and sour cream. Mix well with paddle attachment.
  • Add cake mix, sugar, cake flour, and salt.
  • Mix with paddle attachment at medium speed for approximately 2 minutes, or until most lumps are worked out. It is not necessary to work out all the lumps.
  • Pour into prepared pans and bake at 325 until a toothpick inserted into the center comes out clean, or with just a crumb or two clinging to it.
  • Cool for 7-10 minutes in pan, then turn out onto cooling rack. If you experience problems with sticking, you may wish to line your baking pans with parchment paper.

1 C + 2 TBLS cake flour
1/8 tsp salt
1 1/3 C water
3 eggs (room temperature)
1/2 C melted to butter
1 C sour cream
1 tsp (pure)vanilla or almond extract (optional)

Steps:

  • In a mixing bowl, put water, extract (if used), eggs, melted butter and sour cream. Mix well with paddle attachment. In a separate bowl sift or blend together cake mix, cake flour, salt and sugar. Add to wet ingredients. Mix at medium speed for approximately 2 minutes. Pour into prepared pans and bake at 325 degrees until a toothpick comes out clean, or with a crumb or two left on the pick. Bake cupcakes approximately 15 - 20 minutes. Start checking your cake at 15 minutes, depending on the size of the pans and your oven.
